1. Shrimp 'n' grits: On second thought neVer mind the shrimp,just grab a bowl of stone ground grits made with enoughbutter and cream to make stone ground leather tasty. Best wefound: Woodlands Resort & Inn in Summerville, just outside thecity. Second best, Dixie Supply.

2. She crab soup: Almost anywhere they don't thin it or gunkit up with potatoes or celery. To be safe, order a shot of goo~Sherry or Madeira, another Charleston specialty, from the barand skim some over the top.

3. Dixie Supply's tomato pie: With layers of fresh tomatoslices, translucent onions, good Cheddar cheese and a binder ofhomemade mayonnaise in a light-as-feathers pie crust, it willmake a vegetarian out of you.

4. Homemade charcuterie: It's a!! t: ,e rage among the city'syoung chefs. P-.t McCrady's, Chef Sean Brock, 30, pasture raiseshis own pigs for chops and charcuterie. Craig Diehl, 31, chef atCypress, makes his charc lterie to fully utilize whole carcassesof hogs and beef.

5. Benne wafers: Parchment paper thin, these sweet bits ofpastry and sesame seeds are addictive. Best we tasted werefrom A Matter of Taste bakery.

6. Charleston chews: Oates and brown suaar and butter andeverything else good: oh my, they're fine and filling.

7. Carolina Golden Rice: The rice that made Charleston thecountry's richest town in the 1700s is all but impossible tofind until the 2009 crop comes in, thanks to a pestilence thatdestr'oyed the 2008 crop. Worth waiting for and reserving apound or so if your budget can bear it.

g 8. Firefly Sweet Tea Infused Vodka: With or withe It a splashi of lemonade, it's cool, refreshing and slips up on you like the

darkness of a low-country night.

9. rogmore Stew: That's what they call Charleston'sversion of a low-country boil. Both are the same but G' lIahdescendants will tell you the sausage, shrimp, corn and potatomelange came with their enslaved families from Africa, notFrogmore Plantation or the town of the same name.

10. Half 'n' haif tea: They cali sweet tea the liquor of theSouth, but it's teeth-jalTingly sweet for most of us. When thebrew is made right by adding sugar syrup as the beverageseeps, haif sweet and half unsvyeetened tea is just right.
