    History

    Part of the Principality of Moldavia, I wasannexed by the Russian Empire in 1812.

    At the dissolution of the Russian Empire in 1918,

    it united with other Romanian lands in Romanian.

    Moldova declared its independence from the

    soviet Union on August 27, 1991.

    After being occupied by the Soviet Union in 1940,

    and changing hands in 1941 and 1944 during WorldWar II, it was known as the Moldavian SSR until

    1991.

    Although Moldova has been independent from the

    USSR since 1991, Russian forces have remained on

    Moldova territory east of the Dniester Riverdespite signing international obligations to

    withdraw.

    Sarmale ( Stuffed Cabbage or Vine Leaves)

    3 cups long grain rice, rinsed.

    2 pounds pork loin roast, finely diced.1 pound carrots, chopped

    1 pinch salt to taste

    3 tablespoons tomato paste

    teaspoons dried dill weed

    INGREDIENTS cup sunflower seed oil

    6 ounces parsley roots , chooped

    1 medium head cabbage

    DIRECTIONS

    Place rice in a medium bowl, and pour boiling water over it. Let soak for 15

    minutes, then drain.

    Heat 2 tablespoons of oil in a large skillet over medium-high heat. Add the

    carrots , parsley roots, onions and tomato paste. Cook and stir until the vegetables

    are tender. Transfer the vegetables to the bowl with the rice.

    Heat 2 more tablespoons of oil in the same shillet over medium-high heat.

    Add the pork, and cook for about 2 minutes, just until browned on the outside.

    Carefully remove the leaves from the head of cabbage, and place them in a large

    pot with about 2 inches of water. Bring to a boil, and cook for 5 to 10 minutes,

    until tender and flexible.

    Remove the cabbage leaves from the pot, but leave enough in the bottom to

    cover. On each of the remaining leaves, place about 2 tablespoons of the pork

    and rice mixture in the center, and wrap the leaf around to cover. Place the

    stuffed cabbage leaves into the pot. When the pot is full, place a few boiled cabbage leaves over the top. Pour

    boiling water into the pot to cover the cabbage rolls, and place over medium-low

    heat. Cover, and simmer for about 30 minutes, until the rice is tender.

    More than 72% of the territory is comprised of

    black soil called cernoziom, which represents the

    highest percentage compared to other countries.

    This is mostly due to the forests, which in thepast covered more than 40% of the territory. At

    present they cover only 9,4% of the territory and

    are concentrated mostly in the hilly center. TheMoldovan forests mostly comprise of old oak

    trees. Usually this tree is associated with the

    country emblem. Moldova got its independencein the 1991 and since then the Republic has made

    efforts to eliminate the command economy and

    move to new market line structures.

    Despite recent economic difficulties, Moldova has made

    substancial progress in economic reforms. The

    government has been able to liberalize most prices and

    has phased out subsidies on most consumer goods.The privatization process started in March 1993. Since

    then most of the housing units and thousand enterprices

    have been privatized even though the program itself had

    many drawbacks. Moldova's economic nucleus isagribusiness (agriculture and food industry),

    representing 50-55% of gross domestic product. In this

    branch are engaged 2/3 ofindustrial labour force and

    agribusiness products represent the main part of export

    Before the breakup of the soviet Union, Moldova

    rated sixth in food production among the 15

    former republics.This industrial area attracted

    many countries and was one of the reasons toconquer Moldova during its history. Other

    important branches are: tobacco products

    manufacturing, light industry, machine buildingindustry and construction materials industry.

    Agriculture on the territory of Moldova was

    practiced 5000 years B.C. The ideal naturalenvironment with fertile soil and favourable

    climate made premises to develop this industry

    till today.

    Moldova's mild climate is ideal for growing

    wheat, corn, barley, tobacco, sugar beets as well

    as different kinds of fruits and vegetables.

    Moldova is one of the few European regions withtraditional tobacco cultivation. This industry

    provides raw materials to most cigarettes -

    making plants of CIS and Eastern Europe. Fruitsrepresent the raw material for the concentrated

    juice and canned products that are widely

    exported. Numerous wineyards in the southernregions of the country produce high-class wines,

    which are popular worldwide.

    Viticulture is one of the main agricultural

    branches and the most efficient one. It is mostly

    developed in the hilly center and sunny south and

    its products represent main export articles.Moldova cultivates all types of European grapes.

    The winemaking industry has 100 enterprises and

    almost each household in villages is making itsown home wine. Moldova is a multi-national

    republic. Besides Moldovans, who make up

    nearly 65% of the population, there are Russians,Ukrainians, Bulgarians and other nationalities.

    make their motherland prosperous.

    total of 520 books were published in Moldova, ofwhich 402 were in Romanian, 108 in Russian, eight

    People Moldova has a population of about 4

    440 000. Although it is the most

    densely populated (132 person per sq

    km) of the former Soviet Republics ithas very few large cities, the most

    valuable of which is Chisinau, the

    capital of the Republic. In Moldova live

    people of different ethnic groups.Ethnic Moldavians constitute about

    64,5% of local population. Their

    number is greater in the center and

    north of the Republic than in south.Other large ethnic groups are

    Ukrainians (13,8%) and Russians

    Moldovan people are friendly, open, hospitable, and

    speak multiple languages, including Romanian and

    Russian*. They love to chat, receive guests, and

    prepare delicious food. Because mass tourism has notyet reached the country, Moldovans still keep their

    Framework

    The Constitution of the Republic

    of Moldova guarantees the

    inviolability of investments by all

    physical and legal entities,including foreigners. Current

    legislation is based on the

    principle of nondiscriminationbetween foreign and local

    investors. Since 1992, the

    Industry

    The main natural resource of

    the Republic of Moldova is the

    earth. The total area is 3384.6

    thousand hectares, of which1950.9 thousand hectares, or

    57,7% are in the area for

    agricultural purposes.CentralZone specializes in the

    production of grapes. South

    Zone specializes in theproduction of grapes,

    particularly red grapes, corn and

    sunflower.

    Productive land and favorable climatic conditions give

    the country the high potential for development of

    highly diversified agricultural production as the main

    supplier of raw materials for processing and foodindustries, as well as biomass for the production of

    energy from renewable sources. As the negative

    trends should be noted that each year 0.5% decliningsoil fertility, degradation of forests, continues to

    pollution of ground drinking water sources (69% of

    them are not compliant).

    HealthcareThe Moldova health care system

    has improved immensely over the

    years but still there is less

    availability of modern equipmentsin the hospitals of Moldova. During

    1991, the Moldova government had

    spent twelve percent of the totalbudget in improving the health care

    system in Moldova. The American

    International Health Alliance aidedby the USAID has introduced new

    programs in controlling the spread

    of tuberculosis in Moldova.

    This organization has also taken up various projects to

    prevent the spread of HIV aids and Hepatitis B and C.

    The people of Moldova mainly suffer from

    cardiovascular diseases, cancer and respiratorydiseases. Presently, the number of Moldova hospitals

    hundred. The buildings are not well maintained andthus have resulted in the non-function of various life-

    saving equipments.
