Serves: 4Ingredients:

• 250g farro• 125g asparagus spears• 50g sugar snap peas• 100g goats cheese• 30g red onions

For the dressing:• 50g frozen diced avocado• 25g rocket leaves• 100ml rapeseed oil• Salt and pepper• Lemon juice to taste• Water if too thick

METHOD:1. Cook farro in 2 to 1 water ratio – simmer for around 25 mins until soft/bit texture and liquid has been absorbed.

2. Trim and cook asparagus, slice the base stems as scallions and keep the heads whole.

3. Shave the red onions on Japanese slicer and place in cold water until ready to build dish.

4. Slice sugar snap peas thinly.

5. Heat oil on stove, add avocado to quickly heat then remove from stove allowing to cool. Add to bender with rocket, lemon juice and seasoning. Blitz until smooth and add water if too thick. Adjust seasoning to taste.

BUILD THE DISH:1. Mix farro with some of the dressing, sugar snap peas, and asparagus scallions.

2. Dress the plate or bowl with the remainder of the dressing.

3. Place the salad on top.

4. Top with sliced goats cheese, shaved onions and asparagus spears.

5. Season and serve.

METHOD:1. Soak the fruits in tea the night before or at least or 2-3 hours before preparation; this time is required for the fruit to plump up and for the tea flavour to infuse.

2. Boil fregola in salted water for approx. 15 mins until cooked.

3. Roughly chop coriander and wash the rocket.

4. Combine all ingredients for dressing and check seasoning.

BUILD THE DISH:1. Drain the fruit and combine with the fregola, toasted pumpkin seeds, coriander, rocket, ¾ of dressing – check seasoning and divide into four bowls

2. Then drizzle with remainder of dressing when serving.

Serves: 2Ingredients:

• 400g Oriental tofu, drained and cut in 1cm cubes• 50g chicory leaves, separated and sliced lengthways• ½ bunch radishes, sliced• ½ cucumber, deseeded and cubed• Handful of spinach• 100g fresh pineapple, cut into chunks• Sunflower oil for frying• ½ red chilli, sliced finely

For the dressing:• 3 tbsp rapeseed oil• 1 tbsp maple syrup• 1 tsp sriracha sauce• 10ml lime juice• 20g Smooth Wowbutter

METHOD:1. Fry the tofu over a medium heat for about fifteen minutes until golden brown.

2. Remove and drain on kitchen paper to remove excess oil.

3. Toss together the salad vegetables in a large bowl.

4. Mix together the dressing ingredients well in a separate bowl.

5. To serve, dress the salad into individual serving bowls, toss the tofu cubes through the dressing then immediately onto the salad.

6. Finally drizzle over remaining dressing and garnish with the sliced chillies.

ORIENTAL TOFU SALAD

Serves: 16 portionsIngredients:

• 3 x 250g packs of tempeh, cut into long thick slices (to resemble ribs)

For the spice rub:• 1 tbsp paprika• ½ tbsp chilli powder• 1 tsp ground cumin• ½ tsp sugar• ½ tsp mustard powder• ½ tsp cayenne• ½ tsp dried thyme• 1 tsp sea salt

For the BBQ glaze:• 100ml water• 300ml hickory barbecue sauce• 2 tbsp maple syrup• 1 tbsp balsamic vinegar• 2 garlic cloves, crushed

METHOD:

1. Mix the ingredients for the rub together in a bowl.

2. Add the tempeh slices and rub gently with the spice mix, leave to sit a couple hours.

3. Mix the ingredients for the barbecue glaze together in a shallow baking dish; reserve some to finish the ribs before serving.

4. Place the spiced tempeh on top of the glaze, turning to ensure they are thoroughly coated.

5. Cover and leave at room temperature, to allow the flavours to infuse for a further hour.

6. Heat the oven to 200ºC.

7. Place the dish of marinated tempeh in the oven and braise with a lid on for 15-20 minutes, turning and basting occasionally as they cook.

8. Remove lid for last few minutes – the finished baked ribs should be brown and crisp.

9. Finally, drizzle the reserved glaze over the baked ribs and serve immediately with your choice of side.

Serves: 4Ingredients:

• 250g seitan, sliced into thin strips• 8 hirata buns• 1-2 tbsp Korean Gochujang paste• 3 tbsp soy sauce• 1 tbsp sesame oil• 3 tbsp brown sugar• 2 tbsp water• 1 tbsp rice vinegar• 1 tsp minced garlic• ½ tsp onion powder• Additional sesame or hot chilli oil for frying• 40g red onion• 120g sugar snap peas• 1 tsp Santa Maria Pickling spice

METHOD:1. In a mixing bowl, combine the pepper paste, soy sauce, 1 tbsp sesame oil, brown sugar, water, vinegar, garlic and onion. Add the seitan and stir until coated. If you have time, let this marinate in the fridge for 30 minutes (although it’s not necessary).

2. Shred sugar snap peas and red onions, add water to pickling spice sufficient enough to coat veg and pickle for 20 minute or until at preferred texture.

3. Heat about a tablespoon of oil in a pan. When hot add the seitan strips, cooking 3-4 minutes on each side. Whilst doing this prepare your buns by putting them on to steam.

4. You want the seitan to get crispy and for the sauce to begin caramelizing, but don’t let them burn. I like to spoon a bit of the remaining sauce into the pan as well – makes it extra sticky and flavourful!

5. Assemble your buns to serve.

METHOD:1. Soak the noodles for 20 mins in cold water, then place into boiling water. Simmer for 6 mins and then refresh under cold running water.

2. Spiralise courgette, beetroot and carrot and cut spring onions into scallions.

3. Combine all ingredients for dressing and check seasoning – you can add more of the paste if you like it spicy.

BUILD THE DISH:1. Heat oil in wok, add the Kimchi and stir fry, add drained noodles, stir fry and then add some of the dressing – allow infusing.

2. Remove from heat and stir through the spiralised vegetables; season to taste.

3. Place into a bowl, top with spring onions and pour over remainder of the dressing.

4. Season and serve!

METHOD:

1. For the broth place the vegetable stock, soy sauce, garlic, sugar, ginger, star anise, cinnamon and cardamom seeds in a large pot; bring to the boil, reduce heat and simmer for 30 minutes to fully infuse flavours.

2. Remove from the heat, allow to go cold, refrigerate overnight.

3. Next day place the noodles in a bowl, cover with boiling water, leave to stand for 20 minutes, or until the noodles are softened. Drain well.

4. Remove broth from fridge, strain it into clean pan and bring to the boil.

5. Add the bean sprouts, cabbage, mushrooms, coriander and mint (if using).

6. Add the spring onions, chilli, reduce heat and simmer for 2-3 minutes.

7. Divide the noodles between 4 serving bowls, pour the vegetables and broth over, scatter with cashews and serve with the lime wedges on the side.
