Summertime is Salad Time As summer arrives, an increase in the supply and freshness of fruits and vegetables available locally makes it possible for us to enjoy light, sat- isfying meals of colorful salads. By adding strips of ham, salami, cheeses, seafood such as drained tuna or shrimp, a green tossed salad becomes a bowl full of complete nutrition. Many salads can be made earlier in the day, some, such as congealed salads and overnight lay- ered salads should be made the day before they are to be served. Surprisingly, the layered salad is even good the second time around. Layered vegetable salad one large head fresh cauliflower one head iceberg let- tuce one large pkg. frozen green peas one large, sweet onion, sliced into thin rings 16 oz. carton sour cream 1-1/2 cups mayon- naise 2 Tbls. sugar 1 cup grated parme- san cheese 1# bacon, fried crisp and drained Wash cauliflower and break into small florets. Wash lettuce, drain and tear into pieces. Layer lettuce, cauliflower, peas, uncooked; onion in a four-quart bowl, in that order. Combine sour cream and mayonnaise, mix well. Spread evenly over top, seal to edge of bowl. Be sure to cover all veg- etables completely. Sprinkle sugar over, then cheese, then the bacon. Cover bowl tightly and chill overnight. Toss gently to coat all vegeta- bles before serving. Serves 10-12. ------------------ Three bean salad should be allowed to set overnight in order for the flavors to blend. There was a time I was sure a green bean salad would- n't possibly be good, as everyone knows, green beans must be cooked with a little chunk of pork for a long time, at least a couple of hours, even the canned ones. I was introduced to three bean salad at a Hurricane Woman's Club pot luck dinner many years ago, and I have enjoyed it often ever since. THREE BEAN SALAD 16 oz. can Del Monte cut green beans 16 oz. can yellow wax cut beans 16 oz. can red kidney beans Lg. sweet onion, sliced thinly 1/2 cup cider vinegar 1/3 cup Wesson oil 1/2 cup sugar salt and pepper to taste Combine vinegar, sugar, oil and seasonings in saucepan.
