As I write this, theweather is still like mid-summer; hot, dry andbreezy. We're still spendingan hour or two every daywatering some of the veg-etable garden and flower-ing plants that are mostimportant to me. I gave upon annuals, and now Iwater only those perennialsand shrubs that would beexpensive to replace, orthose I don't want to losebecause they were giftsfrom friends and relatives.We have to remind our-

selves it is the middle ofSeptember and coolerweather will arrive soon.Houseplants that havesummered outside willneed to be prepared forwintering indoors andmaybe some brought in

right away, just so therewon't be a frantic and hastyjob at the last minute.I always start by giving

the plants a good showerbath to remove dust andpossible insects, sprayingboth top and bottom of theleaves. The garden hosecan be used for largeplants, but I prefer thesmall pump-type sprayersfor the smaller ones. Somewith a few large and sturdyleaves can be wiped with adamp cloth, others withsmall or delicate leaves canbe brushed with a softpaint brush.After the plants have

dried off from their bath,it's a good idea to spraywith insecticide beforebringing indoors. Most ofthe time, I use insecticidal

soap or a half-and-halfmixture of rubbing alcoholand water. But, if chemicalsprays are to be used, nowis the time while the plantsare still outside.There is one type of

plant that I leave out on theporch until we've had sev-eral cool nights, and that'sthe Christmas cactus. Theyneed short days and coolnights to set buds forblooming. Commercialgrowers know how to dothis on a schedule, regulat-ing light and temperatureto cause them to bloomexactly when wanted, butwe don't need to be thatpicky. Just leave them on ashaded porch or close tothe window in a cool roomwhere the light is seldomturned on in the evening,

until tiny buds are visibleon the ends of the stems.They can be safely movedto another room while thebuds are still small, butnever put them near aheater or in a hot, sunnywindow.I have several

"Christmas" cactus plantsalthough most will bloombefore then. They're not allalike, having differentgrowth habits, differentflower color and differentbloom times. All are leftout on the porch until nighttemperatures drop into the50s or even the high 40s.They're brought in as soonas I see buds, or if colderweather is predicted. Somewill bloom as early asHalloween, some later inthe Fall; and some may

bloom again in the Spring,if they're kept in a coolwindow.Some plants are easily

started from cuttings root-ed in water or potting soil;this way, you can havesmall plants to keep overinstead of bringing in largeplants of impatiens, bego-nias, fuchsias and gerani-ums. Just cut off a fewinches of the newer growthat the top of the stems andremove any leaves thatwould be under water orsoil. Some plants makeroots from the base of thecutting, others at a joint onthe stem, and some canroot all along the stem. Tobe on the safe side, I cutthe stems about an inchbelow the joint and put thestem in water, or soil, to

just cover the joint. Thatway, they can make rootswhichever place they pre-fer.If they're in water to

root, pot them in soil whenthe roots are only an inchor two long. It's much eas-ier then instead of waitinguntil they're long and tan-gled. Making new plantsfrom cuttings doesn't costanything, it's fun to seenew plants grow from justa small piece, and it's agood way to keep somefavorites from one year tothe next.Questions and com-

All winter, squashes haveextremely hard shells, whichpreserves them for the wholeof the fall and winter season,if gathered when fully ripeand at least an inch of thestem left on. They should bestored in a cool, dry place.One year, a friend gave mepart of her fall harvest ofbutternut squash in October;and I served the last one onthe next Easter Sunday. Atthat time, my niece remarkedshe loved butternut squashbut never cooked one, for shecould not cut or peel one.Well, neither can I. Mostrecipes for any winter squashbegin “Cut squash in half andbake, cut side down, for 30minutes". One very ambi-tious recipe states, “Peelsquash with vegetable peel-er". That would take a lot ofstrength and patience. I haveworked out an even betterway. I wash the squash, placewhole in a baking pan andbake at 350˚ 30-45 minutes,depending on the size of thesquash. Remove from oven

and allow to cool, then cut inhalf, remove seeds and anystringy fibers. Cut into serv-ing-size chunks, or puree infood processor; proceedaccording to recipe direc-tions. Since squash is ratherwatery, I think the prior bak-ing is much better than boil-ing.

BAKED ORANGEBUTTERNUT SQUASH2 medium butternut

squash, prepared as aboveand cut into chunks1/4 cup orange juicegrated rind of one orange1/2 stick butter3/4 cup granulated sugar1 tsp. orange extract (I

use Penzey’s)Place squash chunks into

a buttered casserole dish.Mix orange rind and sugar ina small bowl. Pour orangejuice over squash, cover withsugar mixture. Sprinkleorange extract over and dotwith butter. Bake in a 350˚oven 30-45 minutes, untilheated through.

FLUFFY BUTTERNUTSQUASH CASSEROLE2 medium butternut

squash, prepared as above1/2 stick butter, melted1/4 cup packed brown

sugar1/2 cup golden raisins1/2 tsp. salt1/4 tsp ground nutmegPlace squash pulp in food

processor and puree untilsmooth. Place in mediumbowl, add butter, sugar, saltand nutmeg. Stir well toblend. Stir in raisins. Tastefor seasonings. Add a bitmore sugar or spices, if need-ed. Spoon into a butteredbaking dish. Make a toppingof two Tbsp. butter, twoTbsp. brown sugar, one tsp.light corn syrup and fourTbsp. chopped pecans. Placeall ingredients in smallsaucepan and cook overmedium heat, stirring con-stantly, until all sugar ismelted and pecans are begin-ning to brown. Pour thissyrup over the squash in

casserole. Place in a 350˚oven and bake until heatedthrough.

FRUIT STUFFEDACORN SQUASH3 medium acorn squashsalt to taste1/2 stick of butter8oz. can crushed pineap-

ple, drained1-1/4 cups peeled,

chopped tart cooking apple6 Tbsp. brown sugarCut squash in half,

remove seeds and stringyfibers. Place cut side down ina shallow baking pan, whichhas been sprayed with cook-ing spray. Bake at 350˚ 40minutes. Remove from oven,turn squash cut side up,sprinkle lightly with salt andset aside.Melt butter, add pineap-

ple, apple and sugar. Mixwell. Spoon evenly intosquash shells. Return to ovenand bake 30 minutes longer.This is especially good withroast pork or ham.

STUFFED BUTTERNUTSQUASH

3 small butternut squash2 cups fully-cooked ham,

cut into small cubes1 cup soft bread crumbs1/2 cup shredded,

unpeeled tart apple1/4 cup packed brown

sugar2 Tbsp. prepared mustardCut squash in half,

lengthwise, remove and dis-card seeds. Place squash,cut-side down, in 15x10x2-in. baking pan; add water to adepth of 1/2 in.Bake, uncovered, in 350˚

oven 30 minutes.Combine remaining

ingredients, turn squash cutside up and fill with hammixture. Cover stem endwith foil. Bake at 350˚ 30minutes, or until squash istender and filling is hot.Serves 6.

BUTTERNUTSQUASH BAKE

1 small butternut squash,peeled and cut into cubes

1/2 cup good mayonnaise1/2 cup finely chopped

onion1 lightly beaten egg1 tsp. sugarsalt and pepper to taste1/4 cup crushed salt

crackers2 Tbsp. grated parmesan

cheese1 Tbsp. melted butterPlace squash in saucepan,

cover with water, bring to aboil. Reduce heat, cover andsimmer 25 minutes, untilsquash is very tender. Drainwell, place in medium bowland mash. In another bowl,combine egg, mayonnaise,onion, sugar, salt and pepper.Add to squash and combinewell. Transfer to greasedone-quart baking dish.Combine crackers, cheeseand butter; sprinkle over top.Bake in 350˚ oven 40 min-utes, until heated throughoutand top is golden brown.Makes 6 servings.email: trudybgood@-
