• LPG models must be used with Liquid PropaneGas and the regulator assembly supplied. NaturalGas models must be used with Natural Gas only.Any attempt to convert the grill from one fuel typeto another is extremely hazardous and will void thewarranty.

Keep gas regulator hose away from hot grill sur-faces and dripping grease. Avoid unnecessary twist-ing of hose. Visually inspect hose prior to each usefor cuts, cracks, excessive wear or other damage.If the hose appears damaged do not use the gasgrill. Call 1-800-474-5587 for a certified replace-ment hose.

Pre-Assembly Instructions For Your Safety

WARNING

CAUTION! !Failure to comply with these instructions may resultin a hazardous situation which, if not avoided, mayresult in injury.

For safe operation ensure the Gas Valve Assem-bly Orifice is inside the Burner Tube before usingyour grill. (See figure). If the Orifice is not insidethe Burner Tube, lighting the Burner may causeexplosion and/or fire resulting in serious bodilyinjury and/or property damage.

METHOD 1: Bend a stiff wire or wire coat hangerinto a small hook as shown and run the hookthrough the Burner Tube and inside the Burnerseveral times to remove debris.

METHOD 2: Use a bottle brush with a flexiblehandle and run the brush through the BurnerTube and inside the Burner several times toremove any debris.

METHOD 3: Use an air hose to force air througheach Burner Tube. The forced air should passdebris or obstructions through the Burner and outthe Ports.

4. Refer to the figure below and perform one of these3 cleaning methods:

Carefully lift each Burner up and away from the GasValve Orifice.

Check and clean Burner/Venturi Tubes for insectsand insect nests. A clogged tube can lead to a firebeneath the grill.

Spiders and small insects can spin webs and nestin the grill Burner Tubes during transit and ware-housing which can lead to a gas flow obstructionresulting in a fire in and around the Burner Tubes.This type of "FLASHBACK FIRE" can cause seriousgrill damage and create an unsafe operating con-dition for the user.

To reduce the chance of FLASHBACK FIREyou must clean the Burner Tubes as followsbefore initial use. Also do this at least once amonth in summer and fall or whenever spiders areactive in your area, and if your grill has not beenused for an extended period of time.

Remove the screws from the rear of each Main Burnerusing a Phillips Head Screwdriver or wrench.

WARNING: Grease can get very hot. Always handle the GreaseTray with a flame retardant BBQ mitt. Before removing theTray, always be sure that the grill has properly cooled. Beaware that the Tray does contain grease and be extremelycareful when removing the Tray to prevent spillage. Failure tofollow these instructions could cause serious bodily injury orproperty damage.

Grill Installation CodesThe installation must conform with local codes or, in theabsence of local codes, with either the National Fuel GasCode, ANSI Z223.1/NFPA 54, Natural Gas and PropaneInstallation Code, CSA B149.1, or Propane Storage andHandling Code, B149.2.

PRE-ASSEMBLYRead and perform the following pre-assembly instruc-tions:

You will need assistance from another person to handlethe grill head and other large, heavy parts.

Open lid of shipping carton. Remove top sheet ofcardboard and packing materials. Lay cardboard sheeton floor and use as a work surface to protect floor andgrill parts from scratches.

You may slice the carton front corners with a utility knifeto lay open the carton front panel. This allows you toraise the Lid and remove the components packed inside,making it easier to lift.

Use the Hardware and Part Diagrams to ensure all itemsare included and free of damage.

Do not throw away the bags of hardware that are in-cluded with boxed parts. These are required for assem-bly.

Do not assemble or operate the grill if it appearsdamaged. If there are damaged or missing parts whenyou unpack the shipping box or you have questions dur-ing the assembly process call 1-800-474-5587 M-F 8:30AM-4:30PM PST for assistance.

Assembly Instructions for B4019LP&B4019NGCAUTION : While it is possible for one person to assemble this grill, obtain assistance from another personwhen handling some of the larger, heavier pieces.

Install the Transformer. Connect the Transformer to Power Source and Turn on the Lights.2 Install the Transformer Mounting Bracket to the underside of the Left Panel of the Bowl Frame using2 Phillips Head Screws 1/4"x1/4" and 2 Plain Washers 1/4" and tighten securely (see Fig. 1).Attach the Transformer to the Transformer Mounting Bracket by inserting the two stud bolts on the transformerbracket into the two key holes on the Mounting Bracket as shown. Press the Transformer downward untilit rests in place. (see Fig. 2 & Fig. 3).Insert Transformer-Plug into Transformer-Socket and tighten securely. (see Fig. 4).Depending on your island construction, you may need to make one hole on your Rear Island Panel. Makesure the cord doesn't touch the ground. Connect the Transformer power supply cord plug into a properlygrounded 120VAC outlet.Turn on the Grill Lights by pushing the Left Light Switch on the Control Panel.Turn on the Control Knob Seat LED Lights by pushing the Right LED Switch on the Control Panel.

stainless steel flexible connec-tor (Not provided) must compy with theStandard for connectors for Outdoor GasAppliances and Manufactured Homes,ANSI Z21.75•CSA 6.27, and suitable foroutside installation.The maximum length of the connectionshall be 6ft.(1.82m).

NOTE: To comply with the standarad, a built-in appliance for use with a remote self-contained LPgas supply system must use rigid pipe,semi-rigid pipe or a connector complying with the Standardfor Connectors for Gas Appliances, ANSI Z21.24/CSA 6.10, or the Standard for Connectors forOutdoor Gas Appliances and Manufactured Homes, ANSI Z21.75/CSA 6.27 to connect the applianceto the remote self-contained gas supply system. For safety consideration, we suggest to use astainless steel flexible connector as shown. But, if using semi-rigid tubing, do not use materialsmade of aluminum or aluminum alloy tubing. The connector should be installed at the locationvisible when opening the door.On the proper location, drill 2 holes on the island left side panel for installing the regulator bracket. Theninstall the regulator using 2 Pan Head Screws 3/16"x3/8" and tighten securely.On the proper location, drill 3 holes on the island left bottom panel for installing the tank tray set. Theninstall tank tray set using 3 Pan Head Screws 3/16"x3/8" and tighten securely.Connect the stainless steel flexible connector to the manifold and regulator, then use a clamp to holdthe stainless steel flexible connector as shown for securing.Place the LP gas tank into the tank tray set. Make sure the tank valve facing the right rear corner ofleft island. Tighten the wing bolt to secure the LP gas tank. ( See Fig.3)Connect the LP regulator onto the LP gas tank.CAUTION: There shall be a minimum clearance of 2 inches (50.8 mm) between the floor of the LP-gas cylinderenclosure and the ground. Proper ventilation must be added to the island.

Final Grill Assembly StepWhen you have finished assembling your grill,be sure that all screws are tightened for safeoperation of your grill.

Before each use of the grill, make sure theGrease Tray is fully seated under the Grill Bowl.

CAUTION: Before each use of your grill, inspectthe Grease Tray, Grease Tray Heat Shield and in-side of the Grill Bowl to be sure there is no exces-sive grease and debris buildup. Clean the GreaseTray, Grease Tray Heat Shield and inside of theGrill Bowl frequently to eliminate grease/debrisbuild-up and to prevent grease fires.

The LP Gas tank must be constructed and marked inaccordance with the Specifications for LP-Gas Cylindersof the U.S. Department of Transportation (D.O.T.) or theNational Standard of Canada, CAN/CSA-B339, Cylinders,Spheres and Tubes for Transportation of DangerousGoods, and Commission; as applicable.

The LP Gas tank must have a shutoff valve, terminatingin an LP Gas supply tank valve outlet, that is compatiblewith a Type 1 tank connection device. The LP Gas tankmust also have a safety relief device that has a directconnection with the vapor space of the tank.

The tank supply system must be arranged for vaporwithdrawal.

The LP Gas tank must have a collar to protect the tankvalve.

Never connect an unregulated LP gas tank to your gasgrill. The gas regulator assembly supplied with your gasgrill is adjusted to have an outlet pressure of 11" watercolumn (W.C.) for connection to an LP gas tank. Onlyuse the regulator and hose assembly supplied with yourgas grill. Replacement hose and regulator assemblymust be identical to those listed in the parts list of thisOperator's Manual as specified by Barbeques Galores..

Have your LP Gas dealer check the release valve afterevery filling to ensure it remains free of defects.

Always keep LP Gas tank in upright position.

Do not subject the LP Gas tank to excessive heat.

Never store an LP Gas tank indoors. If you store yourgas grill in the garage always disconnect the LP Gastank first and store it safely outside.

LP Gas tanks must be stored outdoors in a well-ventilated area and out of the reach of children.

Disconnected LP Gas tanks must not be stored in abuilding, garage or any other enclosed area.

The regulator and hose assembly can be seen byopening the cart or island doors. They must be inspectedbefore each use of the grill. If the hose is damaged inany way, it must be replaced prior to using the grill again.

Any attempt to convert the grill from one fuel type toanother is extremely hazardous and will void the war-ranty.

Never light your gas grill with the lid closed or beforechecking to ensure the burner tubes are fully seated overthe gas valve orifices.

Never allow children to operate your grill. Do not allowchildren or pets to play near your grill. Always supervisechildren and pets if they are in the vicinity of the unit.

LP Gas grill models are designed for use with a standard20 lb. Liquid Propane Gas (LP Gas) tank (sold sepa-rately). Never connect your gas grill to an LP Gas tankthat exceeds this capacity. A tank of approximately 12inches in diameter by 18-1/2 inches high is the maximumsize LP Gas tank to use. You must use an "OPD" gastank which has a listed Overfill Prevention Device. All leak tests must be repeated each time your LPGas tank is exchanged or refilled.

Secure a 20lb LP Gas Tank to Gas Grill

Note: You can only use a 20lb LP Gas Tank in thisGas Grill.NOTE: When using Propane, EXTREME CAUTIONshould be used to provide ample ventilation of vaporfrom the enclosure. LP Gas vapor is heavier than airand SERIOUS INJURY from a DANGEROUS EXPLO-SION could occur if LP Gas is allowed to accumulatein an enclosure and then ignited. Both the Barbecueenclosure and LP cylinder enclosure require ventingthat must be provided at the floor level of the enclo-sure to allow any leaking LP Gas vapor to escape(see Fig. 1).NOTE: When installing a barbecue equipped for liquidpropane in an island, the propane tank must be ina separate enclosure that is completely isolated fromthe barbecue. It must be cross-ventilated in accor-dance with the current standards. The propane tankMUST NEVER be installed directly under the barbe-cue.NOTE: The total of the upper ventilation openingsmust be a minimum of 20 sq. inches. Your natural gas grill is designed for use withnatural gas (NG) only. The gas pressure Regu-lator supplied with this appliance must be in-stalled and used on your grill. The unit andRegulator are set to operate with an outletpressure of 4" W.C.

Install a Shutoff Valve at the gas supply sourceoutdoors at a point after the gas pipe exits theoutside wall and before the quick-disconnect hose.Or install it at the point before the gas line pipingenters the ground. See Fig. 2.

Pipe sealing compound or pipe thread tape resis-tant to the action of natural gas must be used on allmale pipe thread connections.

Disconnect your gas grill from fuel source when thegas supply is being tested at high pressures. Thisgas grill and its individual shutoff valve must bedisconnected from the gas supply pipe systemduring any pressure testing of that system at pres-sure in excess of 1/2 psi (3.5kpa).

Turn off your gas grill when the gas supply is beingtested at low pressures. The grill must be isolatedfrom the gas supply pipe system by closing itsindividual manual shutoff valve during any pres-sure testing of the gas supply pipe system atpressures equal to or less than 1/2 psi (3.5kpa).

Natural Gas Safety Instructions

Connect the Swivel nut of the 12' Natural GasHose to the horizontal fitting of NG Regulatoras shown in Fig.1. Connect the other hose end(male plug) to the gas supply line from yourhome. Read and follow the "Natural Gas SafetyInstructions" below.

If the length of line required does not exceed 50feet, use a 5/8" O.D tube. Rotisserie Instructions

1. Remove all components from the carton.

Attach the Motor Bracket on the outside of the left grill bowl panel. Align the two holes of the Bracket withthe holes on the grill bowl. Tighten securely using two Screws 3/16"x1/2" UNC and Plain Washers provided.

Make sure Rollers are fixed in position. Slide the Holding Forks onto the Spit as shown. Place the food betweenthe forks and tighten the Thumbscrews to keep the Holding Forks in position.

Install the AC (alternating current) Rotisserie Motor onto the Motor Bracket as shown below. Be sure the Motorattaches to the Bracket with the electrical cord down. This installation insures that once the Spit is insertedinto the Motor it will also rest securely into the slot of your grill bowl.

Insert the assembled Rotisserie into the Motor as shown below. The Motor should be on the left side of yourgrill. Place the right side of the Rotisserie Spit onto the Rollers (installed in the Bowl Side Panel/Trim Plate,Right). The Rollers will stabilize the Rotisserie during the cooking process and allow it to turn smoothly. Plugthe Rotisserie into an outlet and turn on to test.

CAUTION: BEFORE rotisserie cooking you will need to remove the Cooking Grid(s), Cooking Rack/Secondary and possibly the Flame Tamer/Rack from your grill. Cleaning Exterior Stainless Steel Surfaces:Routine care and maintenance is required to preservethe appearance and corrosion resistance of stainlesssteel. The fact is stainless steel can corrode, rust anddiscolor under certain conditions. Rust is caused whenregular steel particles in the atmosphere become at-tached to the stainless steel surface. Steel particles canalso become attached to your grill if you use steel woolor stiff wire brushes to clean the grill instead of non-abrasive cloth, sponge or nylon cleaning tools. In coastalareas rust pits can develop on stainless surfaces thatcannot be fully removed. Bleach and other chlorine basedsolutions used for household and pool cleaning canalso cause corrosion to stainless steel. Weathering,extreme heat, smoke from cooking and machine oilsused in the manufacturing process of stainless steelcan cause stainless steel to turn tan in color. Althoughthere are many factors which can affect the surface ap-pearance of stainless steel, they do not affect the integ-rity of the steel or the performance of the grill.

To help maintain the finish of stainless steel follow thesecleaning procedures for the best results:After every use (after your grill has cooled down), wipestainless surfaces with a soft, soapy cloth or spongethen rinse with water. Be sure to remove all food particles,sauces or marinades from stainless steel because thesecan be highly acidic and damaging to stainless surfaces.Never use abrasive cleaners, scrubbers or stiff wirebrushes of any type on your grill.Use a heat resistant Stainless Steel Cleaner and rub orwipe in the direction of the stainless steel grain or polishlines. CLEANING AND MAINTENANCEProper care and maintenance will keep your grill in top operatingcondition and prolong its life. Follow these cleaning procedureson a timely basis and your grill will stay clean and operate withminimum effort.CAUTION: Be sure your grill is OFF and cool before cleaning.

Before initial use, and periodically thereafter, wash yourCooking Grids in a mild soap and warm water solution.You can use a wash cloth or vegetable brush to clean yourCooking Grids.

You should periodically wash the Flame Tamers in asoap and warm water solution. Use a vegetable brush toremove stubborn burnt-on cooking residue. Dry the FlameTamers thoroughly before you reinstall them into thecooking bowl.

To reduce the chance of fire, the Grease Tray should bevisually inspected before each grill use. Remove anygrease and wash Grease Tray with a mild soap and warmwater solution.

Grease can build up on the inside of the Grill lid over time.This grease can drip onto your deck or patio when the lidis opened. Visually inspect the inside of the Grill Lidbefore each grill use. Remove any grease and wash witha mild soap and warm water solution.

Burning-off excess food after every cookout will keep itready for instant use. However, at least every 3 monthsyou must give the entire grill a thorough cleaning tominimize your risk of grease fire and keep the grill in topshape. Follow these steps:Turn all Control Knobs to the full OFF position.Turn the LP gas tank valve to the full OFF position.Disconnect the regulator from the gas tank. Inspect thehose with regulator assembly for cracking, cuts or anyother damage, and replace as neccessary. Refer to theParts List in this Use and Care Guide.Remove and clean the Flame Tamers, Cooking Grids,Cooking Rack and Grill Burners.Cover each Gas Valve Orifice with aluminum foil.Brush the inside and bottom of the grill with a fiber pad ornylon brush and wash with a mild soap and warm watersolution. Rinse thoroughly and let dry.Remove aluminum foil from Orifices and check eachOrifice for obstruction.Check each Spark Electrode, adjusting as needed. To reduce the chance of FLASHBACK FIRE you must cleanthe Burner Tubes as follows at least once a month insummer and fall or whenever spiders are active in yourarea, and if your grill has not been used for an extendedperiod of time.

Regardless of which Burner cleaning procedure youuse, we recommend that you also complete the follow-ing cleaning regimens to help prolong Burner life.

For safe operation, make sure the Orifices areinside the Burner Tubes before using your grill.See figure. If the Orifice is not inside the BurnerTube, lighting the Burner may cause explosion and/or fire resulting in serious bodliy injury and/orproperty damage.

After each use of the main grill or infrared cooking zoneit is necessary to burn off food particles and drippingswhich can clog Burner ports and reduce Burner perfor-mance. OPEN the grill Lid, ignite the burner(s) andoperate grill on Hi setting for 3 to 5 minutes. You can closethe Lid if only main Burners are lit, but NEVER close theLid over a lit Infrared Burner.

Use a nylon brush, blower or vacuum to remove accu-mulated ash from the outer surface of each Burner.Clogged tube style Burner ports can be cleaned with astiff wire, such as an open paper clip. DO NOT use a stiffbrush or sharp tool of any type on the fragile infraredBurner.

Inspect each Burner for damage (cracks or holes) and ifsuch damage is found, order and install a new Burner.After installation, check to ensure that the Gas ValveOrifices are correctly placed inside the ends of the BurnerTubes. Also check the position of your Spark Electrode.

Greasing the cooking surface will help keep foods fromsticking during the cookout and reduces the amount ofcleanup required. Use a brush to apply a thin layer ofcooking oil or vegetable shortening onto each CookingGrid before each cookout. We do not suggest spray typeoils unless they are specified for high-temperaturecooking. Be sure to coat the entire cooking surface.

Prepare Cooking Grids for Grilling

The suggested heat settings and cooking times shownin the following pages are approximate. Unlike the con-trolled environment inside your kitchen, variables includ-ing outside temperatures, direction and conditions ofwind, as well as grill location will affect your grill's heatdistribution. Because these conditions vary, and no twobackyards are alike, we offer these tips as generalguidelines for your reference. We recommend you moni-tor your grill closely and rotate foods as needed to preventovercooking and ensure the most delicious results everytime.

To preheat your grill, light all main burners on HI, lowerthe Lid and follow the recommended times below. Topreheat the infrared burner the Lid must be open.For high temperature cooking, preheat grill 10 to 15

minutes.For low temperature cooking, preheat grill 3 minutes.To slow cook, preheating is not necessary.

Cooking TemperaturesHigh setting: The HI Control knob setting should be usedto pre-heat your grill and for burning food residue off.Besides, please refer to the Direct Cooking Method of thismanual.

An Important Note About Cooking Temperatures

Medium to Low Settings: Most recipes specify mediumto low settings, including all smoking and cooking leancuts such as fish.

The indirect cooking method can also be used with thesupplied Cooking Grids. To cook indirectly, the foodshould be placed on the left or right side of your grill withthe main Burner lit on the opposite side. Orplace your food on the Secondary Cooking Rack andlight the outer main Burners. Either way, indirect cook-ing must be done with the Lid down.

Indirect Cooking using Main BurnersBefore cooking on your gas grill for the first time, youshould "burn off" the grill to eliminate any odor or foreignmatter. Ignite the main burners, lower the Lid, and oper-ate grill on HI setting for 10 to 15 minutes. The Lid mustbe open if the infrared burner is lit.CAUTION: Operating your grill on the HI setting for longerthan 15 minutes may damage certain parts of your grill. Donot leave your grill unattended when in use.

The infrared cooking area is for quick searing. Onceseared, reduce heat and continue cooking or move foodto the primary cooking area to finish cooking.

The middle and back primary cooking areas offer highheat for grilling.

The front primary cooking area offers less heat and isideal for preparing delicate foods and for keeping cookedfoods warm.

Direct Cooking using Main Burners or Infrared Burner

The direct cooking method can be used with the suppliedCooking Grids and food placed directly over the lit grillBurners. Direct Cooking requires the Grill Lid to beopen. This method is ideal for searing and grilling whenyou want an open-flame barbecued taste.

The fats and juices dripping from grilled food can causeflare-ups which impart a favorably, distinctive taste andcolor to food. They should be accepted up to a point. Tominimize flare-ups:

Guide to Grilling using the Main Burners and Direct Cooking MethodGrilling Steak and Ribs

Turn the grill Burners on HI, close the Lid and preheat yourgrill 10 to 15 minutes. Open Lid and place the meat on theCooking Grid directly above the lit Burners. Cook the meat onboth sides until seared. Reduce the heat to MEDIUM andcook meat until done. Grilling times will vary according tomeat thickness.

Grilling Hamburgers and Sausages

Turn the grill Burners on HI, close Lid and preheat your grill10 to 15 minutes. Open Lid and place the meat on theCooking Grid directly above the lit Burners. Cook the meat onboth sides until seared. Reduce the heat to MEDIUM andcook the meat until done. Grilling times will vary according tomeat thickness.

Grilling Poultry

Turn the grill Burners on HI, close Lid and preheat your grill10 to 15 minutes. Then raise the Lid, reduce heat to MEDIUMand cook poultry directly over lit Burners until done. Poultryskin is fatty so you should expect some flare-ups when usingthis direct method.

To minimize flare-ups, try grilling poultry using the indirectmethod. Place the poultry on one side of the grill with theopposing Burners on MEDIUM heat, and lower the grill Lid.Grilling times will vary based on the size of your poultry.

Grilling Pork

Turn Burners on HI and preheat your grill 10 to 15 minuteswith the Lid closed. Raise Lid, place pork on Cooking Gridand cook until seared. Reduce heat to MEDIUM and cook untildone. Grilling times will vary according to meat thickness.

Whole Fish and Whole Fillets

Preheat your grill on HI for 10-15 minutes with the Lid down.Raise lid and turn Burners to MEDIUM heat. Place fish (skindown) on grill and cook over direct heat until done. Usecooking time as a guide or until fish is opaque but still moist.

Smaller Fish Fillets and Cubes

Follow the directions from above, using approximate cookingtimes shown at right. Place a small piece of aluminum foil onthe Cooking Grids if the fish pieces are small enough to dropbetween the Cooking Grids.

Vegetables and Fruit

Prepare your fruit or vegetables and brush with butter orbasting sauce if desired. To cook indirectly, the food shouldbe placed on the left or right side of your grill with the Burnerlit on the opposite side and the grill lid down. Or center yourfood on the Secondary Cooking Rack and light the outer grillBurners. Either way, indirect cooking must be done with theLid down.

In some instances, you may want to grill vegetables and fruitdirectly over the heat, using the supplied Cooking Grids.Foods that work best with direct heat are relatively soft andrequire a short cooking time: mushrooms, zucchini, toma-toes and skewered fruit such as apricots, peaches, pineapple,strawberries and kiwis. Remember the Grill Lid must remainup when cooking directly.

Guide to Searing using the Infrared Cooking Zone

Searing Steak and Ribs

Turn the Infrared Burner on HI and preheat for 10 to 15minutes with the Lid open. Then place the meat on theCooking Grid and sear each side for approximately 2 minutes.Reduce the Infrared Burner to LOW or move meat to theprimary grilling area and finish cooking. Grilling times willvary according to meat thickness.

Turn the Infrared Burner on HI and preheat for 10 to 15minutes with the Lid open. Then place the meat on theCooking Grid and sear each side for approximately 2 minutes.Reduce the Infrared Burner to LOW or move food to theprimary grilling area and finish cooking. Grilling times willvary according to meat thickness.

Important notes about using the Infrared Burner

Whether you are a seasoned chef or a newcomer to gasgrilling, infrared cooking is quite different than grilling over atraditional burner. Although the primary grill burners will alsosear meat, the Infrared Burner produces a more intense andconcentrated heat that sears the meat more quickly. Thisquick searing produces a crisp and flavorful outer crust andlocks in the meat's natural flavor and juices.

Follow the cooking guidelines provided. Then take sometime to experiment with your Infrared cooking zone. Also, readthe Cooking Instructions on page A-1 so you understand theimportance of pre-heating, cooking temperatures and safetywarnings.

Once lit, leave the Infrared Burner on High and sear bothsides of meat using the guidelines below.

Once seared, adjust the Infrared Burner to Low andcontinue cooking until desired doneness. You can alsomove the seared meat to the primary grilling area to finishcooking. This method allows you to sear and preparelarger amounts of meat.

NEVER attempt to douse a flare-up with water which candamage the Burner. To control flare-ups:

The Lid must always be open when the Infrared Burneris lit.

Infrared cooking times will be much shorter than tradi-tional grilling so do not leave the grill unattended.

Trim excess fat from meats and poultry.

Preheat the Burner properly.

Clean the Burner regularly to remove food and greasebuild-up. See Burner Tube cleaning instructions inthis manual.

Reposition your food often and consider moving theseared meat to the primary grilling area to finishcooking.

An Important Note About Heat Settings

The suggested heat settings shown are approximate. Thereare many factors such as outside temperature, wind condi-tions and grill location that affect your grill performance. Weoffer these cooking times as general guidelines, but suggestyou watch the temperature gauge and adjust the heat accord-ingly.

Preparing to Roast

Roasting uses the indirect cooking method. Therefore, thefood should be placed on the left or right side of your grill withthe Burner lit on the opposite side. You can also use thesupplied Cooking Grid with an aluminum drip pan underneathallowing you to collect juices for making gravies. Remember,indirect cooking requires the Lid of your grill to be down.

Preheating your grill is not required for slow cooking methodssuch as roasting. If you do choose to preheat your grill beforeroasting, turn the Burners on HI and close Lid for approximately2-3 minutes.

Guide to Roasting and Baking Using the Main BurnersFood preparation

Trim meat of excess fat. Truss meat and poultry with cookingstring to retain shape if desired. Bacon strips can be used tocover the outside surface of lean meat and poultry to helpprevent it from drying out. Another method for keeping foodmoist during roasting is to put water in a cooking pan, thencover with foil. The foil should be removed for the first or thelast part of the cooking time to ensure proper browning.

Tips for roasting

Except when roasting with water in a roasting pan, the juicesthat collect in the pan can be used as the base for a tastysauce or gravy. Place a cooking pan directly over the heat, addextra butter if needed, then add several spoonfuls of flour tothicken sauce. Finally, add sufficient chicken or beef stock toobtain the desired consistency.

Once the meat is cooked, remove it from your grill and coverwith a piece of foil. Allow it to stand for 10-15 minutes whichallows the juices to settle. This will make carving easier andensure a tender, juicy roast.

BAKING TECHNIQUES

From casseroles and cornbread to delicious desserts likefondue fruit skewers or crumble cake, baking on the grill is aseasy as baking in the kitchen.

Preparing to Bake

To bake in your new grill you'll need a baking dish or cast-ironcooking pan, and a pair of flame retardant BBQ Mitts. If thecooking pan is cast-iron be sure to season the pan before use.

Preheat your grill 3-5 minutes, then lower heat to achieve thebaking temperature desired. Baking uses the indirect cook-ing method. Therefore, your cooking pan should be placed onthe left or right side of your grill with the burner lit on the oppositeside.

Tips for Baking

Prepare your favorite recipe as you would in the kitchen.Foods cooked in the grill for long periods of time shouldalways be covered in aluminum foil to retain moisture. Youwill need to stir the food several times as it bakes, and addadditional liquid if required.

Watch the temperature, and adjust to cook according to yourrecipe directions.

Vegetables are generally easy to cook on the grill. TheSecondary Cooking Rack makes it convenient because youcan still use the main cooking area while the vegetables aresuspended above the grids.

Pre-cook hard vegetables by briefly boiling or microwavingthem before cooking on the grill. Wrap vegetables in a doublethickness of foil to protect them while cooking on the grill.Then, remove the foil if desired, 10-15 minutes before theend of cooking, brush vegetables with butter or oil and finishcooking.

Guide to Using the Secondary Cooking Rack

The Secondary Cooking Rack can be used for purposesother than just the obvious. Consider using the rack forwarming French bread, garlic bread, croissants or evenbagels.

A small whole fish wrapped in foil also cooks well on theSecondary Cooking Rack. Parcels of seafood such asscallops, prawns and sliced fish fillets prepared in a sauceand portioned into small foil wraps cook well this way, too.

Slow Cooking with a Rotisserie

Rotisserie cooking produces foods that are moist, flavor-ful and attractive. The rotisserie system is most com-monly used for cooking meat or poultry and is designedto cook food slowly.

The cooking times on a rotisserie will be approximately thesame as for oven cooking.

Balancing the Food

In rotisserie cooking, balancing the food is of utmostimportance. The rotisserie must turn evenly or the stop-ping and starting action will cause the food to cookunevenly and possibly burn the heavier side.

The easiest foods to balance are those of uniform shapeand texture. To test if the food is balanced correctly whensecured, place the ends of the rotisserie spit loosely in thepalms of your hands. If there is no tendency to roll, give thespit a quarter turn. If it is still stable, give it a final quarterturn. It should rest without turning in each of these posi-tions. It can then be attached to your grill.

Food Preparation

When preparing poultry, truss the birds tightly so that wingsand drumsticks are close to the body of the bird. The cavity ofthe bird may be stuffed prior to this. Pull the neck skin downand, using a small skewer, fix it to the back of the bird. Pushthe rotisserie spit through lengthwise, catching the bird in thefork of the wishbone. Center the bird and tighten with theholding forks. Test the balance as described before.

A rolled piece of meat requires the rotisserie skewer to beinserted through the center of the length of meat, then se-cured and balanced.

For meats that contain bones, it is best to secure the rotis-serie skewer diagonally through the meaty sections. If pro-truding bones or wings brown too quickly, cover with piecesof foil.

Preparing to Smoke

Smoking gives food a distinctive, delicious flavor. You will finda variety of wood chips available for use in smoking grilledfoods. Pre-soaking of wood chips may be required so readand follow the manufacturer's instructions for preparingsmoking chips prior to use.Note: It is our experience that many smoking chip productsdo not actually produce a smoke but instead infuses thefood with flavor. Please read product labels carefully and ifin doubt, ask your retailer for details.

Using A Smoker Box

There are many optional smoker boxes available forpurchase. Follow these guidelines and always refer to thelabel of your smoking chips for specific directions.

Raise your Grill Lid and light the grill. Lower the Grill Lidallowing your grill to reach the desired cooking tempera-ture for the food you are grilling. Fill your smoker box withyour prepared smoking chips. Dried herbs and spices mayalso be added to produce different flavors. Wear a flameretardant BBQ Mitt and place your smoker box on a Cook-ing Grid or Flame Tamer directly above a lit grill Burner. Theheated smoking chips will flavor your foods.

Tips for Smoking

You can reduce the strength of the smoke flavor by onlysmoking for half or three quarters of the cooking time. Theheat required for smoking is normally LOW to MEDIUM.

Foods naturally high in oils lend themselves well to smok-ing, while drier foods benefit from a marinade.

Question:Sometimes I hear a humming sound coming from myregulator. What causes this? And - My grill has a lowflame and sometimes will not light. Why?

Answer:The humming sound is gas flowing through the regulator.A low volume of sound is normal and will not interferewith the operation of your grill. Loud or excessive regulatorhumming and/or low flow and intermittent lighting maybe caused by the regulator's excess gas flow device.Opening the tank valve all the way or too quickly is whattriggers the regulator's safety device to restrict gas flow,preventing excess gas flow to your grill. Lighting the mainBurner farthest from the fuel source every time will helpeliminate air pockets in the manifold. Note: Thisprocedure should be done every time a new LP Gastank is connected to your grill.

Question:Can I convert my grill from one fuel type to another inother words from LPG to NG or vice versa?

Answer:

Never lean over the grill cooking area whilelighting your gas grill. Keep your face and bodya safe distance (at least 18 inches) from the frontof grill when lighting your grill by match.

Answer:Strong winds and low temperatures can affect theheating and performance of your gas grill so factorin these elements when positioning your grilloutdoors for cooking.

In windy conditions, always position the front ofgrill to face oncoming wind to reduce smoke andheat blowing in your face and prevent potential haz-ards to yourself and grill.

Use your grill at least 3 feet away from any wall orsurface.

Use your grill at least 3 feet away from combustibleobjects that can melt or catch fire (such as vinyl,wood siding, fences and overhangs) or sources ofignition (including pilot lights on water heaters andlive electrical appliances).

Never use your gas grill in a garage, porch, shed,breezeway or any other enclosed area.

Never use your gas grill on a balcony, deck, orpatio above the ground floor of your home.

Never obstruct the flow of ventilation air aroundyour gas grill housing.

No, your gas grill is manufactured to exact specificationsand is certified for LPG (Liquid Propane Gas) or NG(Natural Gas) use only. For your safety, conversion kitsare not available, nor will we sell or otherwise provideparts or information to be used to convert your grill. Anyattempt to convert your grill is dangerous and will voidyour warranty.

If your ignition fails to work or your battery needs replac-ing, you can manually light your grill by paper match.Insert a paper match into the silver Lighting Stick andfollow the Manual Grill Lighting Instructions. Next, lightthe match and place the Lighting Stick through a Cook-ing Grid or Lighting Tube (if the unit is equipped withone). Turn the correlated Control Knob to the HI settingto release gas. The Burner should light immediately.

Question:If my ignitor or battery is not working how can I lightmy grill manually?And - Why would I need the silverlighting stick that hangs from the side of my grill?

Question:My grill will not light properly. Why?

Answer: Always light the Main Burner farthest from the fuel source

Question:The Regulator and Hose supplied with my gas grilldoes not fit the older LP Gas tank I’ve used for years.Why not?

Answer:The U.S. Government regulates gas appliances andLP Gas tanks. When regulations are changed the LPGas tank fittings are altered to insure compliance. Ifyour LP Gas tank does not fit the Regulator and Hosesupplied with your new grill, the tank is outdated andmust be replaced. Note: Effective April 1, 2002 all LPGas tanks sold must include an “OPD” Overfil lPrevention Device. The OPD tanks are identified by theirtriangular-shaped valve wheel. This internal deviceprevents the LP Gas tank from being overfilled. Tankswithout an OPD valve can not be refilled.

Question:What causes grill parts to rust and what effect doesit have on my grill?

Answer:Rusting is a natural oxidation process and will not affectthe short term performance of your grill.

To slow the rusting process on Cooking Grids, werecommend greasing the grids before and after eachcookout. Use a brush to apply a thin layer of cooking oilor vegetable shortening onto each grid. We do notsuggest spray type oils unless they are specified forhigh-temperature cooking. If your Cooking Grids arePorcelain coated, be sure to coat the entire cookingsurface including edges and any areas with chippedporcelain.

Routine care and maintenance is required to preserve theappearance and corrosion resistance of stainless steel.The fact is stainless steel can corrode, rust and discolorunder certain conditions. Rust is caused when regularsteel particles in the atmosphere become attached to thestainless steel surface. Steel particles can also becomeattached to your grill if you use steel wool or stiff wirebrushes to clean the grill instead of non-abrasive cloth,sponge or nylon cleaning tools. In coastal areas rust pitscan develop on stainless surfaces that cannot be fully re-moved. Bleach and other chlorine based solutions usedfor household and pool cleaning can also cause corro-sion to stainless steel.

Weathering, extreme heat, smoke from cooking and ma-chine oils used in the manufacturing process of stainlesssteel can cause stainless steel to turn tan in color. Al-though there are many factors which can affect the surfaceappearance of stainless steel, they do not affect the integ-rity of the steel or the performance of the grill. To help main-tain the finish of stainless steel follow these cleaning pro-cedures for the best results:
