When using the appliance, follow basic safety precautions, including thefollowing:

Read all instructions before installation and use of the oven to preventaccidents and machine damage.

This appliance complies with current safety requirements.Improper use of the appliance can lead to personal injury andmaterial damage.

Read all instructions before installing or using the oven for the firsttime. Only use the appliance for its intended purpose.

Keep these operating instructions in a safe place and pass themon to any future user.

Use

This appliance is intended for residential use only. Use only asdescribed in these operating instructions.

This appliance is not intended for outdoor use.

The oven is intended for domestic use only: cooking, baking,roasting, broiling, canning, defrosting and reheating of food.Only use this appliance for its intended purpose.

Risk of fire! Do not use the speed oven to store or dry items whichcould ignite easily.If such items were dried in the Speed Oven, the moisture in the itemwould evaporate causing it to dry out and even self-ignite.

Persons who lack physical, sensory or mental abilities, orexperience with the appliance should not use it without supervisionor instruction by a responsible person.

Children

Children should not be left alone or unattended in an area wherean oven is in use. Never allow children to operate, sit or stand on anypart of the oven. Caution: Do not store items of interest to childrenin cabinets above an oven. Children climbing on the oven to reachthese items could be injured.

Burn Hazard - Do not allow children to use the oven.

Danger of suffocation! Ensure that any plastic wrappings, bags,etc. are disposed of safely and kept out of the reach of children.

Danger of burns. The oven gets hot at the oven door glass, thevapor vent, the handle and the operating controls. Do not allowchildren to touch or play in, on or near the oven.

Technical safety

This appliance must be installed and connected in compliancewith the installation instructions.

Installation, repair and maintenance work should be performed bya Miele authorized service technician in accordance with nationaland local safety regulations and the provided installationinstructions. Contact Miele’s Technical Service Department forexamination, repair or adjustment. Repairs and other work byunauthorized persons could be dangerous and may void thewarranty.

Maintenance by the user: Never repair or replace any part of theappliance unless the instructions specifically recommend doing so.Service work may only be performed by a qualified technician.

Before installing the oven, check for externally visible damage. Donot operate a damaged appliance.

Reliable and safe operation of the oven can only be guaranteed ifit is connected to the power supply.

Operating a damaged appliance can result in microwave leakageand present a hazard to the user. Do not use the appliance if:

– the door is warped,

– the door hinges are loose,

– holes or cracks are visible in the housing, the door, the door sealor the oven interior walls.

To guarantee the electrical safety of this appliance, continuitymust exist between the appliance and an effective groundingsystem. This appliance must be grounded. Connect only to properlygrounded outlet. See "Electrical connection - GROUNDINGINSTRUCTIONS". It is imperative that this basic safety requirementbe met. If there is any doubt, have the electrical system of the housechecked by a qualified electrician.

Proper installation: Make sure that your appliance has beeninstalled correctly and that it has been grounded by a qualifiedtechnician.

Before installation, make sure that the voltage and frequencylisted on the data plate correspond with the household electricalsupply. This data must correspond to prevent injury and machinedamage. Consult a qualified electrician if in doubt.

Before installation or service, disconnect the power supply to thework area by

– removing the fuse,

– "tripping" the circuit breaker, or

– unplugging the unit. Pull the plug not the cord.

Extension cords do not guarantee the required safety of theappliance (e.g. danger of overheating). Do not use an extension cordto connect this appliance to electricity.

The oven is not to be operated until it has been properly installedwithin cabinetry.

Danger of electric shock!Under no circumstances open the outer casing of the appliance.

This appliance must not be used in a non-stationary location (e.g.on a ship).

Do not repair or replace any part of the appliance unlessspecifically recommended in the operating instructions. All otherservicing should be referred to a qualified technician.

Defective components should be replaced by Miele original partsonly. Only with these parts can the manufacturer guarantee thesafety of the appliance.

In order for the oven to function correctly, it requires an adequatesupply of cool air. Ensure that the air flow is not impaired (e.g.insulation in the cabinetry). Also be sure that the cool air supply isnot heated by other sources nearby.

If the oven is installed behind a cabinet door, do not close thedoor while the oven is in operation. Heat and moisture can build upbehind the closed door and cause damage to the oven, cabinetryand flooring. Do not close the door until the oven has completelycooled down.

Proper use

Danger of burns!The Speed Oven becomes hot when in use.Depending on the mode selected, you could burn yourself on theheating elements, oven interior, cooked food or oven accessories.Wear pot holders when placing food in or removing food, or whenmaking adjustments in the hot Speed Oven.

Caution: Heating elements may be hot even though they are notglowing. Interior surfaces of an oven become hot enough to causeburns. External parts of the oven such as the door glass, vents, andthe control panel can become hot. During and after use, do nottouch, or let clothing or other flammable materials come into contactwith heating elements or interior surfaces of the oven until they havehad sufficient time to cool.

Do not let food sit in the oven for more than one hour before orafter cooking. Doing so can result in food poisoning or sickness.

It is important that the heat is allowed to spread evenlythroughout the food being cooked.This can be achieved by stirring and/or turning the food, andobserving a sufficiently long standing time, which should be addedto the time needed for cooking, reheating or defrosting.

Use only dry, heat-resistant potholders. Moist or damp potholdersused on hot surfaces may result in steam burns. Do not letpotholders come in contact with oil or grease. Do not substitute dishtowels or other bulky items for potholders. Do not let potholderstouch hot heating elements.

Loose fitting or hanging garments present a fire hazard. Wearproper apparel while operating the appliance.

Do not heat unopened containers of food in the oven, pressuremay cause the containers to burst and result in injury.

To prevent burns, always place oven racks at their desired heightwhile the oven is cool. If the rack must be moved while the oven ishot, do not let pot holders touch hot heating elements.

Open the door carefully to allow hot air or steam to escape beforeplacing or removing food.

To prevent burns, allow the heating elements to cool beforecleaning by hand.

Do not leave the oven door open unnecessarily as someone maytrip over it or be injured by it.

Never leave the appliance unattended when cooking with oil orfat. They can ignite if overheated. Do not use the oven for frying.Do not use water on grease fires. Turn off the Speed Ovenimmediately and suffocate the flames by keeping the door closed.

Never store flammable liquids and materials in, above or under anoven, or near cooking surfaces.

To avoid fueling any flames, do not open the Speed Oven door ifsmoke occurs inside the appliance. Interrupt the process by turningthe appliance off and disconnecting it from the power. Do not openthe door until the smoke has dissipated.

Do not use the oven to heat the room. The high temperaturesradiated could cause objects near the oven to catch fire.

WARNINGNEVER use this appliance as a space heater to heat or warm theroom. Doing so may result in carbon monoxide poisoning andoverheating of the oven.

WARNINGNEVER use this appliance as storage space. Doing so may resultin carbon monoxide poisoning and overheating of the oven.

WARNINGNEVER cover any slots, holes or passages in the oven bottom orcover an entire rack with materials such as aluminum foil. Doing soblocks air flow through the oven and may cause carbon monoxidepoisoning. Aluminum foil linings may also trap heat, causing a firehazard.

Please be aware that durations for using microwave power areoften considerably shorter when cooking, reheating and defrostingthan when using modes without microwave power. Excessively longcooking times can lead to food drying out and burning or could evencause it to catch fire. Be sure you keep to recommended broiling times when using the"Broil" mode. Do not use the "Microwave" mode for dehydratingitems such as flowers, herbs, bread, or rolls. Never use "Broil"modes for pre-baked products such as bread or rolls or for dryingflowers or herbs. Use "Convection Bake" for these items andmonitor the process carefully.

Use caution when using alcohol in your recipes. Alcoholevaporates at high temperatures but may, in rare circumstances,combust on the hot heating elements.

Dishes with hollow knobs or handles are not suitable for use withmicrowave modes. Moisture which has gathered in the hollowrecesses can cause pressure to build up and the item can explode.

Fire hazard! Using Microwave or Microwave combinationmodes with plastic dishes which are not microwave safe can causethem to melt and damage the appliance.Do not use any containers or cutlery made from or containing metal,aluminum foil, lead, crystal glassware, temperature-sensitiveplastics, wooden utensils or cutlery, metal clips or plastic or papercovered wire ties. Do not use plastic containers with the foil lid onlypartially removed (see "Containers suitable for microwave use").

For modes without microwave power: Plastic containers which arenot suitable for use in an oven can melt at high temperatures andcan even damage the oven or catch fire.Only use containers which are declared by the manufacturer asbeing suitable for use in an oven. Follow the manufacturer'sinstructions on use.

Do not leave the microwave oven unattended when reheating orcooking food in disposable containers made of plastic, paper orother inflammable materials.Before using single-use containers, make sure they are suitable foruse in microwave ovens (See "Containers suitable for microwave use- Plastics").

Do not reheat food in the oven in heat-retaining bags which areintended for use in normal ovens.These heat-retaining bags usually contain a thin layer of aluminumfoil which reflects microwaves.This reflected energy can, in turn,cause the outer paper covering to become hot and ignite.

The Speed Oven can be damaged when using Microwave orMicrowave Combination modes if it is empty or incorrectly loaded.For this reason please do not use modes with microwave power topre-heat cookware or to dry herbs.Instead use Convection Bake or Surround for theseprocedures.

When using residual heat to keep food in the oven warm, the highhumidity and amount of condensation in the Speed Oven can causecorrosion. The control panel, the countertop or the cabinetry canalso suffer damage.Always cover food when using Microwave . Once food is cookedthrough, use a lower power for continued cooking to reduce theamount of steam produced from the food. When using residual heatdo not turn the Speed Oven off. Instead set the temperature to thelowest setting and leave the oven on the selected mode. The fan willthen remain on automatically and dissipate the moisture.

It is recommended to cover all cooked food that is left in the ovento be kept warm. This will prevent moisture from condensing on theinterior of the oven.

A build-up of heat can cause damage to the enamel on the floorof the oven.When using Surround , Bake , Intensive  or ConvectionBake , do not line the floor of the oven with anything, e.g.,aluminum foil or protective liners. Do not place any pans or traysdirectly on the oven floor.

The door can support a maximum weight of 17.5 lbs (8 kg). Do notsit on or lean against an open door, and do not place heavy objectson it. Also make sure that nothing can get trapped between the doorand the oven cavity. The oven could get damaged.

When heating food and drinks, remember that the heat is createdin the food itself, and that the container will normally be cooler. Thedish is only warmed by the heat of the food. The temperature of thecontainer is not an indication of the temperature of the food or liquidin it.Check the food for the desired temperature after removing it. This isparticularly important when preparing food for babies. Shake orstir baby milk and food thoroughly after heating, and try it fortemperature to ensure that it will not scald the baby.

The Speed Oven is not suitable for cleaning or disinfecting items.Items can get extremely hot and there is a danger of burning whenthe item is removed from the appliance.

Do not cook or reheat food or liquids in sealed containers, jars orbottles. With baby bottles, the screw top and nipple must beremoved.Otherwise pressure will build up which can cause the bottle orcontainer to explode. Risk of injury.

When boiling and in particular when re-heating liquids, milk,sauces etc., using microwave power without a boiling rod, theboiling point of the liquid may be reached without the production oftypical bubbles. The liquid does not boil evenly throughout. This so-called 'boiling delay' can cause a sudden build up of bubbles whenthe container is removed from the oven or shaken. This can lead tothe liquid boiling over suddenly and explosively. Danger of scaldingand burning! The formation of bubbles can be so strong that thepressure forces the oven door open, with a danger of injury anddamage.Before cooking or reheating, thoroughly stir the liquid. Then wait atleast 20 seconds before removing the container from the oven.During cooking and reheating you can also place a glass rod orsimilar in the container and use as a boiling rod, if available.

Eggs can be cooked without their shells using microwave poweronly if the yolk membrane has been punctured several times first.The pressure could otherwise cause the egg yolk to explode.

Eggs in their shells will explode if cooked with microwave power,even after taking them out of the oven. They can only be cooked in their shells using microwave heat in aspecially designed egg-boiling device available from specialistshops. Hard-boiled eggs must not be reheated in the microwaveoven either as they too will explode.

Food with a thick skin or peel, such as tomatoes, sausage,potatoes and eggplant, should be pierced or cut in several places toallow steam to escape and prevent the food from bursting.

To check food temperature, first interrupt the cooking process.Only use a thermometer specifically approved for food use tomeasure the temperature of the food. Do not use a thermometerscontaining mercury or liquid as these are not suitable for use withvery high temperatures and break very easily

Do not use the oven to heat up heating pads filled with grains, gel,etc.These pads can ignite even after they have been removed from theSpeed Oven.

This oven must only be used for cooking food. Fumes, vapors orheat given off by glues, plastics or flammable liquids and materialscould be hazardous. Do not use it as a dryer, kiln, dehumidifier, etc.

Do not obstruct the flow of combustion and ventilation air.

Do not let metal objects (aluminum foil, pans) come in contactwith the heating element.

Make certain that the power cords of small appliances do notcome in contact with or get caught in the oven door.

Cleaning and care

Do not use a steam cleaner to clean this oven.Steam could penetrate electrical components and cause a shortcircuit.

Only clean parts listed in these Operating and InstallationInstructions.

Scratches on the door glass can cause the glass to break.Do not use abrasive cleaners, hard sponges, brushes or sharp metaltools to clean the door glass.

To avoid corrosion on the stainless steel surfaces of the SpeedOven, remove any splashes on the interior walls of the oven fromfood or liquids containing salt.

Do not use oven cleaners. Commercial oven cleaners or ovenliners of any kind should not be used in or around any part of theoven.

Accessories

Use only genuine original Miele parts. If parts or accessories fromother manufacturers are used, the warranty will become void.

Only use the Miele roast probe supplied with this oven. If it isfaulty, it must only be replaced with a Miele genuine roast probe.

The plastic on the roast probe can melt at very high temperatures.Do not use the roast probe when using the broil functions (exception:Convection Broil ). Do not store the roast probe in the oven if it isnot in use.

Sensor buttonsThe sensors react to touch. Each touch is confirmed with an audible tone. Thistone can be turned off (see "Settings – Keypad tone").

If the time of day display is turned off, the "Timer"button will not react until the oven is turned on.

Light For turning theoven interiorlighting on and off

If a list of options is showing in the display or if acooking process is running, touching "Light" willturn the oven interior lighting on or off.

If the time of day display is turned off, the "Light"sensor button will not react until the oven is turnedon.

The oven interior lighting turns off after 15 secondsduring cooking or remains constantly turned on,depending on the setting selected.

DisplayThe display is used for showing thetime of day or information aboutmodes, temperatures, power settings,cooking durations, MasterChefprograms and settings. Information or alist of options is shown on the displaydepending on the function selected.

After turning the oven on with the On/Off sensor button , the main menuwill appear:

If a cooking process is running,selecting Change will call up a list ofoptions which can be set or changedfor the cooking process in progress.

Symbols

The following symbols may appear in the display:

Symbol Description Timer Allocates an illuminated Sensor button to an option and

indicates that the option can be selected.

If more than four options are available a bar will appear on theright-hand side of the display. Use the allocated sensors to scrollthrough the list.

The end of a list is indicated by a dotted line. By scrolling downfurther, you will reach the beginning of the list again.

Some settings, e.g. display brightness and buzzer volume, areselected using a bar chart.

A check indicates the currently active setting. will not bedisplayed and the corresponding sensor will not be illuminated.

This symbol indicates that there is additional information andadvice about using the oven. Select OK to access theinformation.

The system lock or sensor lock is active (see "Settings - SystemLock "). The oven cannot be operated.

Glass Tray

The glass tray is suitable for use with alloperating modes.

Always use the glass tray whenusing Microwave (Solo) .

Do not place items weighing morethan 17.5 lbs (8 kg) on it.

Do not place the hot glass tray on acold surface, such as a tiled orgranite countertop. The glass traycould get damaged. Use a suitableheat-resistant mat or pot rest.

Wire rack with non-tip safety notches

The rack is only suitable for cooking inCombination modes and modes that donot use microwave. It is not suitable forcooking in the Microwave (Solo) mode.

Danger of burns! The rack gets hotduring the cooking process.Use pot holders when placing foodin and taking food out of a hot oven.

Use of the rack with the Microwave(Solo) mode can cause damageto the oven and rack due to possiblesparking. The rack should be usedon a shelf level. Do not place it onthe floor of the oven.

Do not place items weighing morethan 17.5 lbs (8 kg) on the rack.

The rack has non-tip safety notcheswhich prevent it being pulledcompletely out when it only needs to bepulled out partially.

When pushing the rack back in,always ensure that the safetynotches are at the back of the oven.

To remove the rack, lift it upwardsslightly at the front when the safetynotches connect with the sides of theoven.

We recommend using the racktogether with the glass tray whencooking items on the rack whichmight drip.

Roast Probe

Using the roast probe enables you toaccurately monitor the temperatureduring the cooking process (see"Roasting - Roast probe").

Round Baking Form HBF 27-1

Microwave modes will damage theRound Baking Form.Do not use the round baking formwhen using Microwave (Solo) orCombi modes.

This circular form is suitable for cookingfresh or frozen pizzas, flat cakes, tartsand baked goods.

Place the round baking form on therack.

The surface has been treated withPerfectClean enamel.

Miele Oven Cleaner

Miele oven cleaner is suitable forremoving stubborn soiling. It is notnecessary to preheat the oven beforeuse.

Speed Oven controlsThe oven controls enable you to use thevarious cooking modes to bake, roast,broil and reheat.

It also allows you to access:

– the time of day display,

– a timer,

– a timer to automatically turn cookingprograms on and off,

– the MasterChef programs,

– the creation of a Favorite program,

– settings that can be customized.

Oven safety features

System lock

The system lock prevents the oven frombeing used unintentionally (see"Settings - System lock").

The system lock will remain activatedeven after a power failure.

Safety switch-off

A mode without Microwave can bestarted without specifying a cookingtime. To prevent continuous use andavoid the risk of fire, the Speed Ovenwill turn itself off automatically after atime between 1 hour and 12 hoursdepending on the function andtemperature chosen.

If a Combi Mode is followed in quicksuccession by another program usingmicrowave power, the magnetron(which produces the microwaves)cannot be turned on again until approx.10 seconds have elapsed. Thereforewait a short time before starting thesecond process.

Cooling fan

The cooling fan comes on automaticallywhen a cooking program is started. Thecooling fan mixes hot air from the ovencavity with cool room air before ventingit out into the kitchen through ventslocated between the appliance doorand the control panel.

The cooling fan will continue to run for awhile after a cooking process to preventmoisture building up in the oven, on thecontrol panel or on the surroundingcabinetry. It will turn itself offautomatically after a while.

PerfectClean treated surfacesThe revolutionary PerfectClean enamelis a smooth, non-stick surface thatcleans easily with a sponge.

Food and soiling from baking androasting can be easily removed fromthese surfaces.

Do not use ceramic knives as thesewill scratch the PerfectClean surface.

Follow the instructions in the "Cleaningand Care" section of this manual so theanti-stick and easy cleaning propertiesare retained.

The oven compartment and the rackhave a PerfectClean finish.

General settings

The oven must not be operateduntil it has been properly installedwithin cabinetry.

The oven will turn on automaticallywhen it is connected to the powersupply.

Welcome screen

A welcome greeting is displayed. Youwill then be asked to select some basicsettings which are needed before theappliance can be used.

Follow the instructions on the display.

Set the language

Scroll through the list until the desiredlanguage appears.

Touch the illuminated sensor nextto the language you want to select.

Confirm with OK.

Select the country

Scroll through the list until the desiredcountry appears.

Touch the illuminated sensor nextto the country you want to select.

Confirm with OK.

Setting the voltage (electricalversion)

The voltage set must match thatof the house as to not damage theoven.Confirm the voltage before setting. Ifin doubt contact a qualifiedtechnician.

Select the voltage.

Confirm with OK.

Set the date

Use or to set the year, monthand day.

Confirm with OK.

Set the time of day

Use the numerical keypad to set thetime of day in hours and minutes (e.g.1-2-1-5 for 12:15).

Confirm with OK.

Select the lit sensor button  nextto am or pm.

Confirm with OK.

The time of day can be displayed in24-hour format (see "Settings - Timeof Day - Clock Format").

Time of day display

You will then be asked when you wantthe time of day to show in the displaywhen the oven is turned off (see"Settings - Time of day - Display"):

– On

The time is always visible in thedisplay.

– Off

The display appears dark to saveenergy. Some modes are limited.

– Night Dimming

The time only shows in the displaybetween 5:00 am and 11:00 pm. Itturns off at night to save energy.

Select the desired option.

Confirm with OK.

Information regarding energyconsumption will appear in the display.

Confirm with OK.

Set up Successfully Completed isdisplayed.

Confirm with OK.

The oven is now ready to use.

If you accidently select the wronglanguage, follow the instructionsdescribed in "Settings - Language ".

Heating the ovenNew ovens may have a slight odorduring their first use. Heating up theoven for at least one hour with nothingin it will eliminate the odor.

Ensure that the kitchen is wellventilated while the appliance isbeing heated up for the first time.Close doors to other rooms toprevent the smell spreadingthroughout the house.

Remove any protective wrapping andsticky labels from the oven.

Take all accessories out of the ovenand clean them (see "Cleaning andcare").

Before heating the oven up, wipe theinterior with a damp cloth to removeany dust or bits of packaging thatmay have accumulated in the ovencavity during storage and unpacking.

Turn on the oven.

The main menu will appear.

Select Operating Modes.

Select Convection Bake

The default temperature is displayed350°F (160°C).

The oven heating, lighting and coolingfan will turn on.

Set the maximum temperature.

Confirm with OK.

Heat up the oven for at least one hour.

After at least an hour:

Turn the oven off.

After heating up for the first time

Danger of burns! Allow the ovento cool before cleaning.

Turn on the oven.

Select /"Light" to turn on the ovenlight.

Clean the oven interior with warmwater and liquid dish soap, appliedwith a soft sponge or microfibercloth.

Dry all surfaces with a soft cloth.

Turn the lighting and the oven off.

Leave the oven door open until theoven interior is completely dry.

Accessing the "Settings" menu Select Settings .

A list of settings will appear in thedisplay.

They can be checked and changed, ifneeded.

A check next to an option showswhich setting is active.

Settings cannot be altered while acooking program is in progress.

Changing and saving settings

Select Settings .

Scroll through the list until the desiredsetting appears.

Touch the sensor button next to thesetting. The desired setting mayappear in a submenu.

Change the setting.

Language The desired country and language canbe set.

After selecting and confirming yourchoice, the language selected willappear in the display.

Tip: If you accidently select a languageyou do not understand, select the symbol to return to the submenu.

Time of day

Display

Select how you would like the time ofday to appear in the display when theoven is turned off:

– On

The time is always visible in thedisplay.

– Off

The display is turned off to saveenergy. The oven has be to be turnedon before you can use it. This alsoapplies to the "Minute +," "Popcorn,""Timer," and "Light" functions.

– Night Dimming

To save energy, the time is onlyvisible on the display between 5:00am and 11:00 pm. The rest of thetime it is not visible.

Clock format

You can select the clock format for thetime of day:

– 24 h

The time of day is shown in a 24 hourclock format.

– 12 h

The time of day is shown in a 12 hourclock format.

Setting

Set the hours and the minutes.

If you have selected the 12-hour format,you also set am or pm.

If there is a power failure, the currenttime of day will reappear once thepower has been restored. The time isstored in memory for about 200 hours.

Lighting– On

The interior lighting is turned onduring the entire cooking period.

– On for 15 Seconds

The oven lighting turns off 15seconds after a program starts.Touching "Light" turns it on foranother 15 seconds.

Display brightnessThe display brightness is representedby a bar with seven segments.

Select Darker or Brighter to change the

brightness of the display.

Audible tone information

Melody

At the end of a process, a melody willsound several times in intervals.

The volume of the melody isrepresented by a bar with sevensegments.

Maximum volume is selected when allsegments are filled. If none of thesegments are filled, the volume isturned off.

Select Quieter or Louder, to adjust thevolume.

Select On or Off, to turn the melodyon or off.

Solo tone

At the end of a process, a continuoustone will sound for period of time.

The pitch of this tone is represented bya segment bar.

Select Lower or Higher, to change thepitch.

Select On or Off, to turn the tone on oroff.

Quick MW

Under this settings you can changethe presetting of the "Minute +"sensor button.

The maximum power level 7 and acooking duration of 1 minute is presetfor the immediate startup of themicrowave.

– Power Level

You can set the power level between1 and 7.

– Duration

The maximum cooking time that canbe set depends on the power levelselected:Power levels 1 through 3: maximumof 10 minutesPower levels 4 through 7: maximum 5minutes

Popcorn

Under this setting you can change thepresetting of the "Popcorn" sensorbutton.

For the immediate start of themicrowave to prepare popcorn, powerlevel 6 and a cooking time of 3 minutesare preset. This is suitable for thepreparation of most brands ofmicrowave popcorn.

You can change the cooking time, butnot the microwave power level.

– Duration

The maximum cooking time that canbe set is 4 minutes.

Keeping Warm– On

The "Keeping Warm" function isactivated in the Microwave mode if at least power level 4 and aminimum cooking time of 10 minutesis selected.If food is not removed from the ovenat the end of a program, the"Keeping Warm" function willautomatically start after approx. 5minutes. Keeping Warm will appear onthe display and the food will be keptwarm for approx. 15 minutes usingpower level 2. The keeping warmphase is canceled if the door isopened during this time.

– Off

The "Keeping Warm" function isdeactivated.

Cooling fanThe cooling fan will continue to run forsome time after the oven has beenturned off to prevent humidity frombuilding up in the oven, on the controlpanel or in the surrounding cabinetry.

– Temp. Controlled

The cooling fan will turn off when theoven compartment temperaturedrops below 160°F (70°C).

– Time Controlled

The cooling fan will turn off afterapprox. 25 minutes.

Condensation can cause thecabinetry and the countertop to bedamaged. This could lead tocorrosion of the appliance.When keeping food warm in theoven, increases to the Time Controlledsetting can lead to condensation ofthe control panel, moisture on thecountertop and on the cabinetry.Do not adjust the Time Controlledsetting and try not to leave food inthe warm oven.

Default temperaturesIf you often cook with temperatures thatdiffer from the default, it makes senseto change the default temperatures.

After selecting this option, a list of ovenmodes will appear in the display.

Select the desired mode.

The default temperature is displayedalong with the available temperaturerange.

Change the default temperature.

Confirm with OK.

Recommended settingsIf you often cook with microwave powerlevels that differ from the default, itmakes sense to change the defaulttemperatures.

The default power levels can bechanged for "Microwave" and"Microwave Combi" modes.

After you select this menu item, a list ofmode will appear together with theirrespective default power levels.

– Microwave :Power level 1 through 7 (can be setvia a bar with 7 segments)

– Combined modes:Power levels 1 through 3 (can be setusing a number wheel)

Safety

System lock

The system lock prevents the ovenbeing turned on inadvertently.

Select On to activate the system lock.

The timer can still be used when thesystem lock is active.

– On

The system lock is now active. If youwant to use the oven press and holdthe sensor next to OK for at least 6seconds.

– Off

The system lock is not active. Theoven can be used as normal.

Sensor lock

The sensor lock prevents a cookingprocess from being switched off orchanged while it is running. Onceactivated, the sensors are locked a fewseconds after a program has started.

– On

The sensor lock is activated. Touchthe sensor next to OK for at least6 seconds to use the functions again.The sensor lock is then deactivatedfor a short period.

– Off

The sensor lock is not active. Allsensors react to touch as normal.

Calibrate temperatureUsing temperature calibration thetemperature can be modified, in allmodes and MasterChef programs, sothat it is slightly higher or lower thanshown.

The temperature calibration isrepresented by a bar with sevensegments.

If all of the segments are filled the oventemperature is much higher thanindicated in the display. If no segment isfilled the oven temperature is muchlower than indicated.

Select + or -, to adjust thetemperature calibration.

Confirm with OK.

VoltageSetting the voltage (electrical version)

Select the desired voltage andcorresponding frequency.

Showroom programThis function enables the oven to bedemonstrated in showrooms withoutheating up. It should not be set fordomestic use.

Demo Mode

If you have demo mode activatedDemo mode active. The appliance will notheat up will appear when you turn onthe oven.

– On

Press and hold OK for at least 4seconds to activate demo mode.

– Off

Press and hold OK for at least 4seconds to deactivate demo mode.The oven can then be used asnormal.

Factory default settings– Settings

Any settings that have been alteredwill be reset to the factory defaultsetting.

– Favorites

All favorites will be deleted.

– Recommended Settings

Power levels which have beenchanged will be reset to the factorydefault settings.

– Default Temperature

Any default temperatures that havebeen changed will reset to the factorydefault settings.

The timer can be used to time anyactivity in the kitchen, e.g. boiling eggs.

The timer can also be used at the sametime as a cooking program if a start andfinish time have been set, e.g. areminder to stir the dish or addseasoning.

A maximum timer duration of 9 hours,59 minutes and 59 seconds can be set.

Setting the timer

When the setting Time - Show - Off isset the oven must be turned on to setthe timer. The timer can then be seencounting down in the display when theoven is turned off.

Example: Boiling eggs and setting thetimer for 6 minutes and 20 seconds.

Select "Timer".

"0 : 00 : 00" (h : min : sec) will appear.

Use the numerical keypad to enter adifferent duration (6-2-0).

Confirm with OK.

The timer duration is now saved.

The duration counts down in the displaywhen the oven is turned off.

If a cooking program is running at thesame time, the timer duration willappear at the bottom of the display.

Due to country-specific preferences for preparation of food, default temperaturesand temperature ranges in °F and °C do not correspond. The temperature valueshave been defined as given in the chart.

How it worksThe Speed Oven contains a high-frequency tube called a magnetron. Itconverts electrical energy intomicrowaves. The microwaves are thendistributed evenly throughout the metalsides of the oven interior to reach thefood from all sides.

In order for microwaves to reach thefood, they must be able to penetrate thecooking container being used.Microwaves can penetrate porcelain,glass, cardboard and plastics, but notmetal. Do not, therefore, use dishesmade of metal, or which contain metal,for example in the form of gold or silvertrim. The metal reflects the microwavesand this could cause sparking. Themicrowaves cannot be absorbed.

Microwaves pass through a suitablecontainer and find their way directly intothe food. All food contains moisturemolecules which, when subjected tomicrowave energy, start to oscillate 2.5billion times a second. The frictioncaused by this vibration creates heat,which first starts developing around theoutside of the food and then slowlypenetrates towards the center. Themoisture, fat and sugar content of foodwill affect the speed at which it iscooked.

Advantages

– Food can generally be cooked withlittle liquid or oil.

– Defrosting, heating and cooking isfaster than using a conventionaloven.

– Nutrients, such as vitamins andminerals, are generally retained.

– The color, texture and taste of foodare not impaired.

Microwaves stop being producedwhen the program is interrupted or thedoor is open. While in operation theclosed, sealed door preventsmicrowaves from escaping theappliance.

They pass through glass, porcelain,plastic and cardboard.

They are absorbed by food.

Non-microwave safe dishes cansuffer damage or cause damage tothe oven when using the theMicrowave (Solo) andCombination modes with Microwave.Risk of Fire!

The material and shape of containersused affect cooking results and times.Circular and oval containers work best.The food will heat more evenly than in asquare container.

Containers suitable formicrowave use

Glassware

Heat-resistant glass or ceramic glassare ideal for use with microwave power.

Exception: Do not use crystal glassas it contains lead which can crackor shatter in a microwave.

Porcelain

Porcelain is a suitable material.

Exception: Do not use porcelain withgold, silver or cobalt blue edging oritems with hollow knobs or handles,as insufficient ventilation may causea build-up of pressure.

Earthenware

Decorated earthenware is only suitableif the decoration is beneath an all-overglaze.

Plastics

Plastic containers and plasticdisposable containers may only beused with Microwave (Solo) if theyhave been declared as suitable formicrowave use by the manufacturer. Toprotect the environment, it is best toavoid using single-use containers.

Do not leave the Speed Ovenunattended when reheating orcooking food in disposablecontainers made of plastic, paper orother flammable materials.

Plastic cookware must be heat-resistant up to at least 230°F (110°C).Otherwise the cookware will deformand possibly come in contact withthe food.Only use plastic dishes in theMicrowave and combinationmodes.

– Plastic microwave containers

Readily available from retail stores.

– Styrofoam containers

Disposable containers, such as traysmade from styrofoam, can only be usedfor very short, timed warming andreheating of food.

– Plastic cooking bags

Plastic cooking bags can be used forcooking and reheating food.They should be pierced beforehand sothat steam can escape. This prevents abuild-up of steam and reduces the rishof the bag bursting.

There are also cooking bags that do notneed to be pierced. Following theinstructions listed on the packaging.

– Roasting bags

Follow the manufacturer's instructions.

Fire hazard!Do not use metal clips, plastic clipscontaining metal parts, or paper tiescontaining wire. There is a dangerthat they will ignite when heated.

– Melamine

Plastic tableware made from melamineis not suitable for use in this oven.Melamine absorbs microwave energyand becomes very hot. Beforepurchasing plasticware be sure that is ismicrowave-safe.

Unsuitable containers formicrowave use

Dishes with hollow knobs orhandles are not suitable for use withmicrowave modes. Moisture whichhas gathered in the hollow recessescan cause pressure to build up andthe item can explode.

Metal

Metal reflects microwaves andobstructs the cooking process.

Do not use metal containers, aluminum,foil, metal cutlery and china withmetallic decoration such as gold rims orcobalt blue with Microwavecombination modes.

Do not use containers where the foillid has not been completely removedas small pieces of foil can causesparking.

Exceptions:

The rack supplied is only suitable forcooking in Combination modes andmodes that do not use microwave. Itis not suitable for cooking in theMicrowave (Solo) mode.The rack should be used on a shelflevel. Do not place it on the floor ofthe oven.

– Metal bakeware can be used withMicrowave combination modes.

– Ready-meals in aluminum foil trayscan be defrosted and reheated usingmicrowave power as long as the lid isremoved.

When using foil trays there is a risk ofarcing or sparks occurring in theoven. For this reason, place the foiltray on the glass tray and not on therack.

The foil tray must be at least3/4" (2 cm) away from the ovenwalls. It must not touch them.

However, as food is only heated fromthe top, it is better to remove the foodfrom the aluminum foil container andtransfer it to a dish suitable for use in amicrowave oven. The heat distributionwill be more even.

– Aluminum foil pieces

For even defrosting and to avoidovercooking unevenly shaped cuts ofmeat, poultry or fish, small pieces ofaluminum foil may be used to mask thinpieces for the last few minutes of theprogram.

Make sure that the aluminum foil isat least 3/4" (2 cm) from the ovenwalls at all times. It must not touchthe walls.

– Metal meat skewers or clamps

These should only be used if they arevery small in comparison to the size ofthe cut of meat.

Glazes and colors

Some glazes and colors contain metaland are therefore unsuitable formicrowave modes.

Wood

Wooden dishes are not suitable.Moisture contained in the woodevaporates when exposed tomicrowave energy, causing the wood todry and crack.

Testing dishes for theirsuitabilityIf in doubt as to whether glass,earthenware or porcelain plates ordishes are suitable for use withmicrowave energy, a simple test can beperformed:

Insert the glass tray on shelf level 1and place the empty item you wish totest on the glass tray. Fill a suitableglass with water and also place thison the glass tray.

Close the door.

Select Microwave .

Set the highest microwave powerlevel (7) and a cooking duration of30 seconds.

Confirm with OK and start theprogram.

If a cracking noise is heardaccompanied by sparks during thetest, turn the appliance offimmediately. Any cookware whichcauses this reaction is unsuitable foruse with microwave power. If indoubt, contact the cookwaremanufacturer.

This test cannot be used to checkwhether items with hollow knobs orhandles are suitable for use withmicrowave power.

Placing the dish in the SpeedOven

Insert the glass tray on shelf level 1.

The dish containing the food shouldalways be placed in the middle of theglass tray.

Placing the food directly on the floorof the oven would give unsatisfactoryand uneven results as the microwaveswould not be able to reach the foodfrom below.

LidThe lid offers the following advantages:

– Prevents too much steam escaping,especially when cooking foods whichneed longer to cook, such aspotatoes.

– Speeds up the cooking process.

– Prevents food from drying out.

– Helps keep the oven interior clean.

When using Microwave (Solo) ,always cover the food with a lid orcover made of microwave safe glassor plastic.

These covers are available at retailstores.

Alternatively, use plastic wraprecommended for use in a microwaveoven (pierce as instructed by themanufacturer). Heat can cause normalplastic wrap to distort and fuse withthe food.

The cover can only withstandtemperatures up to 230°F (110°C).Higher temperatures (e.g. those usedfor Broil and Convection Bake) cancause the plastic to distort and fusewith the food. The cover should onlybe used with Microwave (Solo) .

The cover should not form a sealwith the container. If the cover isused with a container which only hasa narrow diameter, there might notbe enough room for condensation toescape through the holes in the top.The cover could get too hot andcould start to melt.

Do not use the cover if:

– cooking breaded food,

– cooking food which requires a crispfinish,

– cooking food with a Combi mode.

Otherwise pressure can build up,causing the container to explode,posing a severe risk of injury.Do not cook or reheat food or liquidsin sealed containers, jars or bottles.Otherwise pressure will build upwhich can cause the bottle orcontainer to explode. Risk of injury.

– Remove any accessories from theoven that you do not require forcooking.

– If possible, do not open the doorduring a program. If the door isopened during a program that is notusing microwave power, the heat inthe oven automatically turns off. Thefan continues to run. As soon as thedoor is closed again, the program willcontinue.

– If a temperature range is given, it isbest to select the lower temperatureand check the food after the shortestcooking time given.

– Convection Broil can be used fora wide variety of foods. Lowertemperatures can be used than withother Broil modes which use themaximum temperature setting.

– The default setting for the Time ofDay display Time - Show - Off willconsume the least amount of energy.

– With the factory default settingLighting - On for 15 Seconds the oveninterior lighting turns off automaticallyafter 15 seconds. It can be turned onagain at any time by touching "Light".

– When cooking with automatic shut-off or the roast probe, the ovenheating will turn off automaticallyshortly before the end of cooking.The reqidual heat is sufficient to finishthe cooking process. Energy SavePhase will appear in the display. Thecooling fan or hot air fan (dependingon mode used) will remain on.

– The oven turns off automatically if abutton is not pressed to save power.The amount of time before the oventurns off depends on the selectedsettings, e.g. mode, temperature,cooking duration, etc.

Quick Guide Turn the oven on.

The main menu will appear.

Place the food in the oven.

Select Operating Modes.

The default temperature will beautomatically accepted within a fewseconds. If necessary, select Changeto go back to the temperature setting(see "Additional functions - Changingthe temperature").

You will see the temperature rising inthe display. A buzzer will sound whenthe oven temperature is reached if thisoption is selected (see "Settings -Audible tone information").

After the cooking process:

Remove the food from the oven.

Turn the oven off.

Cooling fanAfter the cooking process the coolingfan will continue to run for a while aftera program is complete to preventmoisture from building up in the oven,on the control panel or surroundingcabinetry.

When the temperature in the oven hasfallen sufficiently the cooling fan willturn off automatically.

The default setting can be changed ifdesired (see "Settings - Cooling Fan").

As soon as a cooking mode is selected,a default temperature will appear in thedisplay together with its possible range(see the "Guide to the modes").

If the default temperature is suitablefor your recipe, confirm it with OK.

You can also permanently reset therecommended temperature to suityour personal cooking habits (See"Settings - Default temperatures").

Rapid PreHeat

"Rapid PreHeat" can be used to speedup the preheating phase.

The "Rapid PreHeat" function switcheson automatically if you set atemperature of more than 212°F/100°Cfor "Convection Bake" , "AutoRoast" , and "Surround" .

Do not use "Rapid PreHeat" topreheat the oven when baking pizzasor delicates mixtures (e.g., smallbaked goods, sponge). These willbrown too quickly.

You can turn off "Rapid PreHeat" for arelevant cooking process via thePreHeating option.

Preheating

– Rapid (Factory default)

The Browning / Broiling andconvection heating elements turn ontogether with the fan to enable theoven to reach the requiredtemperature as quickly as possible.

– Normal

Only the heating elements associatedwith the cooking mode are turned on.

To turn off the "Rapid PreHeat"function:

Select Change.

Select PreHeating.

Select Normal.

Confirm with OK.

Confirm with OK, if you would like tosee the actual temperature increasingon the display.

Instead of Rapid PreHeat, Preheating willappear on the display.

Preheating the oven

The oven only needs to be preheated ina few cases.

Most dishes can be placed in a coldoven. They will then use the heatproduced during the heating phase.

The oven should be preheated in thefollowing instances:

Convection Bake

– dark bread doughs,

– beef sirloins and tenderloins.

– cakes and pastries with a shortbaking time (up to 30 minutes),

Surround

– delicate mixtures (e.g. sponge),

– dark bread doughs,

– beef sirloins and tenderloins.

Select the required oven mode andtemperature.

Wait for the preheating phase tocomplete.

A buzzer will sound when the settemperature is reached, if the buzzer isset (see "Settings").

Place the food in the oven.

Using the "Crisp" function (moisturereduction)

It is a good idea to use this functionwhen cooking items which are moist onthe inside but which should be crispyon the outside, e.g., french fries,croquettes or breaded meats.

It is also suitable for fruit cakes, such asapple cake.

You have placed the food in the oven,selected an operating mode and set thetemperature.

You can activate the Crisp functionfunction with any oven mode. It mustbe activated separately for a cookingprocess. For best results, activate it atthe beginning of the cooking process.

Select Change.

Scroll through the list until Crispfunction appears.

Select Crisp function.

Select On.

Confirm with OK.

Moisture reduction is now activated.

Setting additional durations

You have placed the food in the oven,selected a mode and set thetemperature.

By entering Duration, Ready at or Start atyou can automatically turn the cookingprogram on or off.

– Duration

Enter the cooking duration desired.Once the duration set has elapsed,the heating will turn off automatically.The maximum duration which can beset is 12 hours.

A cooking duration cannot beentered if you are using the roastprobe. When using the roast probe,the cooking duration is determinedby when the set core temperature isreached.

– Ready at

You can specify when you would likethe cooking program to complete.The oven will turn off automatically atthe time set.

A Ready at time cannot be entered ifyou are using the roast probe. Whenusing the roast probe the end time isdetermined by when the set coretemperature is reached.

– Start at

Set the time you would like cookingto start at. The oven will turn onautomatically at the time set.

Start at can only be used togetherwith Duration or Ready at, exceptwhen using the roast probe.

Turning off automatically

It is now 11:45. The food takes 30minutes to cook and should be ready at12:15.

Select Duration and set 0:30 h or selectReady at and set the time for 12:15.

The oven will switch off automaticallyafter this duration has elapsed or thetime set has been reached.

Select Change.

Select Duration.

Use the numerical keypad to set theduration (3-0).

Confirm with OK.

Turning on and off automatically

It It is recommended to use theautomatic On/Off feature whenroasting. Do not delay the start of theprogram for too long when baking.Cake mixtures and doughs will dryout, and the leavening agents will losetheir effectiveness.

To turn a cooking program on and offautomatically, you have a choice of howto enter the time parameters:

– Duration and Ready at

– Duration and Start at

– Ready at and Start at

It is now 11:45. The food takes 5minutes to cook and should be ready at12:30.

Select Change.

Select Duration and set a duration of0:30 h.

Select Ready at and set the time to12:30 h.

The Start at time will be automaticallycalculated. Start at 12:00 will appear inthe display.

The oven will turn on automaticallywhen this time is reached.

When you next select the program, itwill start automatically.

Eating food which has been cookedcorrectly is important for goodhealth.Only bake cakes, pizza, french fries,etc. until they are golden brown. Donot overcook them.

Oven modesDepending on how you would like thefood prepared, you can use ConvectionBake , Surround , Intensive ,or Combi Bake (see "Guide to themodes").

Combi Bake is particularly suitablefor baking dough with a longer bakingtime, such as yeast-based dough,enriched dough, and kneaded dough,because the cooking time is shortened.

During this mode, power level 2 mustnot be exceed throughout the entirebaking time.

BakewareThe bakeware used depends on theoven mode chosen and how the food isprepared.

– Convection Bake , Intensive :Bakeware made of any heat-resistantmaterial is suitable. Light-colored,thin, non-reflective metal baking panscan be used, but results may not beas good as with dark non-reflectivebakeware.

– Surround :Dark metal, enamel or aluminumbaking tins with a matte finish, aswell as heat-resistant glass, ceramicand coated dishes can be used.Avoid bright, shiny metal tins as theyresult in uneven or poor browning,and in some cases cakes might notcook properly.

– Combi Bake Only use oven-safe dishware suitablefor microwave use (see "Containerssuitable for microwave use"), such asoven-safe glass or ceramic dishes asthese allow microwaves throughthem.Metal containers reflect microwavesso food will only cook from above.Cooking durations would therefore belonger and metal tins could alsocause sparking. Place the dish on theglass tray such that it cannot touchthe oven walls. If the dish being usedcauses sparking, do not use it forcombination cooking modes again.

Shelf levels The shelf level that you place the foodon for baking depends on the ovenmode and the number of trays beingused.

– Convection Bake Cakes in pans: Level 1 from thebottomFlat baked goods (e.g. cookies,cakes): Level 2 from the bottomBaking on 2 levels at the same time:Levels 1+3 from the bottom or levels2+3 from the bottom

Tips– Setting the cooking duration. When

baking, the oven should not be set tostart after an extended period of time.Otherwise the cake mixture or doughwill dry out, and the raising agentswill lose their effectiveness.

– Place cakes in rectangular bakewareon the rack with the longer sideacross the width of the oven foroptimum heat distribution and evenresults.

Set the microwave to the followingpower levels for the entire roasting time:

– For meat and fish: max. Level 3

– For poultry: max. Level 2

This combination program is notsuitable for cooking roast beef ortenderloins. The center would be toowell cooked before the exterior isbrowned.

Cooking accessoriesPlease take into account the material ofyour bakeware in your choice of ovenmode:

– Convection Bake / Convection Roast / Auto Roast :Roasting pans, ovenproof ceramicdishes, and clay roasting pans.

Make sure that the pot and lid haveheat-resistant handles.

– Combi Bake / Combi Auto Roast :Dishes must be suitable for use in amicrowave oven and must not havemetal lids (see "Containers suitablefor microwave use").

Roasting in a closed pan

Season the meat and place it in theroasting dish. Dot with butter ormargarine or brush with oil ifnecessary. For large lean cuts of meat(4–6 lbs.) and fatty poultry, add about1/2 cup of water to the dish.

When using a roasting bag, follow themanufacturer's instructions.

Roasting on the rack

Add a little fat or oil to very lean meat orwrap with bacon.

Do not add too much liquid duringcooking as this will hinder thebrowning process.

Roasting duration The roasting time can be determined bymultiplying the thickness of the roast (incm (approx. 3/8 in.)) by the time percentimeter thickness [min/cm] (listedbelow), depending on the type of meat:

– Beef / Game: 15–18 min/cm

– Pork / Veal / Lamb: 12–15 min/cm

– Sirloin / Fillet: 8–10 min/cm

Roasting times are approx. 20 minuteslonger per kilo (approx. 2 lbs.) for frozenmeat. Frozen meat weighing less thanapprox. 1.5 kg (approx. 3 lbs.) does notneed to be defrosted before roasting.

Check if the meat is cooked after theshortest duration quoted.

Shelf levels – Convection Bake / Convection Roast

/ Auto Roast :Rack with meat on it on shelf level 1

– Combi Bake / Combi Auto Roast :Rack or glass tray with meat on it onshelf level 1

Tips– Resting time: At the end of the

program, take the roast out of theoven, cover with aluminum foil and letstand for about 10 minutes. Thishelps retain the juices when the meatis sliced.

– The larger the cut of meat to beroasted, the lower the temperatureshould be. The roasting process willtake a little longer, but the meat willbe cooked evenly and the outside willbecome crisp.

– Use a roast probe for accuratecooking temperatures and bestresults.

The roast probe enables the roastingprocess to be monitored simply andreliably.

How the roast probe works

The metal tip of the roast probe isinserted into the food. There is atemperature sensor in the metal tipwhich measures the core temperatureof the food during cooking. The rise inthe core temperature reflects the extentto which the food is cooked. You canprogram the core temperature to belower or higher, depending on how youwould like the meat cooked, rare,medium or well-done.

A core temperature of up to 210°F(99°C) can be set. Please refer to theroasting chart and "Slow cooking" forthe core temperatures applicable fordifferent types of meat.

The cooking time will be similar whencooking with or without the roast probe.

When to use the roast probe

Some MasterChef programs andSpecial modes will prompt you to usethe roast probe.

Important notes regarding the roastprobe

Please note:

– You can place the meat in a pot, onthe rack or in the glass tray,depending on the mode selected.

– The metal tip of the roast probe mustbe fully inserted into the center of thefood.

– When cooking poultry, insert themetal tip into the thickest part of thebreast. You can find the thickest partof the breast by pressing the areawith your thumb and index finger.

– Do not let the metal tip touch anybones or insert it into a fatty area ofthe meat. If fat or bone come intocontact with the probe, this can leadto the oven being turned off too early.

– If the meat is very heavily marbledwith fat, select the highest coretemperature given in the roastingchart.

– When using roasting bags oraluminum foil, insert the probethrough the bag or foil into the centerof the meat. You can also place themeat, with the roast probe inserted,inside the foil. Follow the roastingbag / aluminum foil manufacturer'sinstructions.

Using the roast probe

Insert the metal tip of the roast probefully into the food.

Place the food in the oven.

Insert the plug of the roast probe intothe socket until you feel it engage.

Close the door.

Select an oven mode or MasterChefprogram.

Set the temperature or power level ifnecessary.

Set the core temperature ifnecessary.

The core temperatures cannot bechanged for the MasterChefprograms.

You can also delay the start of thecooking program to a later time. To dothis, select Start at. In the MasterChefprograms select Start Later.

You can estimate approximately whenthe food will be ready as the duration ofthe cooking program is about the sameas if you were cooking food withoutusing the roast probe.

Duration and Ready at cannot be setbecause the total time depends on howlong it takes for the core temperature tobe reached.

Time left display

If you have set a cooking temperatureabove 275°F (140°C), the estimatedduration of the cooking processremaining (time left) will appear on thedisplay.

The time left is calculated from thecooking temperature selected, the setcore temperature, and the pattern of theincreasing core temperature.

The time left first shown is an estimate.As the cooking process continues, thetime is revised continuously, and amore accurate figure is shown.

The time left will be deleted if thecooking or core temperature is changedor if a different mode is selected. If thedoor is opened for a longer time, thetime left will be recalculated.

Alternating between the time left andcore temperature displays

As soon as the time left is shown, youcan alternate between the time left andcore temperature displays

Select Change.

Select Status.

Using residual heat

Shortly before the end of the cookingprogram the oven heating will turn off.The residual heat in the oven issufficient to complete the cookingprocess.

Using the residual heat in the ovensaves energy.

Energy Save Phase will appear in thedisplay to show that the oven is inenergy save mode. The measured coretemperature is no longer visible.

The cooling fan and hot air fan (if turnedon) will continue to run.

When the selected core temperaturehas been reched,

– Program Finished appears in thedisplay,

– a buzzer will sound if turned on (see"Settings - Audible toneinformation").

Tip: If the food is not sufficientlycooked, insert the roast probe intoanother place and repeat the program.

This cooking method is ideal forcooking beef, pork, veal or lamb when atender result is desired.

First, using a cooktop sear the meat onall sides to seal in the juices.

Then place the meat in a preheatedoven. It will be cooked at a lowtemperature for an extended timeallowing the meat to become verytender.

The meat will rest and the juices start tocirculate evenly throughout.This gives the meat a very tender andjuicy result.

Tips

– Use fresh, lean meat that has beentrimmed. Remove the bones beforecooking.

– When searing, use a suitable cookingoil or fat that can withstand hightemperatures (e.g. clarified butter,vegetable oil).

– Do not cover the meat duringcooking.

Cooking will take approx. 2-4 hours,depending on the size and weight ofthe meat, as well as the desireddegree of doneness and browning.

Use the glass tray with the wire ovenrack placed on top of it.

Select Special Modes.

Select Slow Roasting.

Set the required temperature.

Set the core temperature.

Follow the instructions on the display.Let the wire oven rack with glass traypreheat in the oven.

While the oven is preheating, sear themeat on all sides on the cooktop.

Burn hazard!When the oven is hot use pot holdersto insert, remove or turn the food, orwhen adjusting the oven shelves,etc.

Once Use the roast probe appears inthe display, place the seared meat onthe rack and insert the roast probe,so that the metal tip is fully in thecenter of the meat.

Adjusting the Slow Roastingtemperature

Use the glass tray with the rackplaced on top of it. Do not use the "Rapid PreHeat"function to pre-heat the oven.

Place the glass tray with a rack onshelf level 1.

Select "Surround" and atemperature of 265°F (130°C).

Change the preheating function byselecting Change - PreHeating -Normal.

PreHeat the oven together with theglass tray and the rack for approx. 15minutes.

While the oven is preheating, sear themeat on all sides on the cooktop.

Burn hazard!Use pot holders when inserting,removing or turning hot food, orwhen adjusting shelves, etc., in a hotoven.

Place the seared meat on the wireoven rack.

Select Change.

Select Temperature and set 210°F(100°C).

Continue cooking until the end of thecooking time.

Maxi Broil

This mode delivers excellent browningand broiling results when cooking largeramounts of food. Use to broil chops,ribs and large quantities of meat and forbrowning large dishes.

The entire Browning/Broiling elementwill become red hot to produce thenecessary heat.

Convection Broil

For broiling thicker items, e.g. poultry orLondon broil.

The Browning/Broiling element and thefan switch on in alternating phases.

Micro Broil / Combi Broil

The broiling duration is shorter.

The maximum settable microwavepower level is 3.

Cooking accessories Broiling on the wire oven rack.

Brush the rack with oil, and place thefood on it. It is best to broil food of asimilar thickness at the same time sothat the broiling duration for eachitem does not vary too greatly.

Broil level (Maxi Broil /Micro Broil )– Level 3: Thin cuts are cooked quickly

when placed close to the Browning /Broiling element

– Level 2: For lighter browning, e.g.casseroles.

– Level 1: Thicker cuts should bebroiled further from the Browning /Broiling element.

Temperature (ConvectionBroil , Combi Broil )As a general rule, select the defaulttemperature. If higher temperatures areused, the meat will brown on theoutside but will not be properly cookedthrough.Thin cuts can generally bebroiled at 425°F (220°C), thicker cuts at355-400°F (180-200°C).

Testing doneness

Preparing food for broilingRinse the meat under cold water andpat dry. Do not season the meat withsalt before broiling, this will draw outthe juices.

Brush the meat with oil, if necessary.Do not use other types of fat as theycan easily burn and cause smoke.

Clean fish as usual. To enhance theflavor, salt or lemon can be added.

Broil PreHeat the Browning/Broiling

element for approx. 5 minutes withthe door closed.

Do not set a microwave power levelduring preheating.

Place the food on the wire rack.

Select a mode, microwave powerlevel, and broil setting for the "MaxiBroil" and "Micro Broil" modes.

After defrosting, reheating andcookingCompensating times are resting periodsin which the temperature is uniformlydistributed in the food.

Allow the food to stand at roomtemperature for a few minutes toenable the heat to spread evenlythroughout the food.

Burn hazard!After reheating food, especially foodfor babies and small children, stir thefood or shake the container andcheck that the temperature does notpose any danger. Double check afterit has been left to stand.

Danger of burns!Be careful when removing dishesfrom the appliance. Although heat isnot normally produced in thecontainer itself by the microwaves(apart from stoneware), heat transferfrom the food to the container maybe considerable, making thecontainer itself hot.Use pot holders when removingdishes.

Always ensure that food is sufficientlycooked or reheated.

If you are unsure whether asufficiently high temperature hasbeen reached or whether the food issufficiently cooked, continuereheating a little longer.

Always follow proper food safetyguidelines.

Tips on reheating

Danger of burns! Food for infantsand children must not be too hot.Heat baby food for only approx.30-60 seconds at power level 4. Youcan also use the roast probe fortemperature-controlled heating.

Otherwise pressure can build up,causing the container to explode,posing a severe risk of injury.Do not cook or reheat food or liquidsin sealed containers, jars or bottles.Otherwise pressure will build upwhich can cause the bottle orcontainer to explode. Risk of injury.

Eggs may burst.Never reheat hard boiled eggs usingMicrowave , even without theshell. The eggs can explode.

When boiling and in particular whenreheating liquids using microwavepower, the boiling point of the liquidmay be reached without theproduction of typical bubbles. Theliquid does not boil evenlythroughout.This so-called "boiling delay" cancause a sudden build up of bubbleswhen the container is removed fromthe oven or shaken. This can lead tothe liquid boiling over suddenly andexplosively. The formation of bubblescan be so strong that the pressureforces the oven door open.To avoid this, always wait a minimumof 20 seconds before removing thecontainer from the oven and place asuitable glass rod or utensil into thecup or glass when heating liquids.

Cooking tips

Food with a thick skin or peel, suchas tomatoes, sausage, potatoes andegg plant can burst when heated.Pierce or score the skin of thesefoods several times to allow steam toescape.

Eggs heated in their shell can burst,even after removed from the oven.Eggs can only be cooked in theirshells using Microwave (Solo) ina specially designed egg-boilingdevice available from specialitystores.

When heating shelled eggs, the yolkmay still burst after cooking.Prick the yolk several times beforecooking to avoid this.

DehydrateThis program is designed for traditionaldrying of food to preserve it.

The temperature can be set between175-250°F (80-100°C).

It is important that fruit and vegetablesare ripe and not bruised before they aredehydrated.

Prepare the food for dehydrating.

– Peel and core apples, and cut intoslices 1/4" (0.5 cm) thick.

– Core plums if necessary.

– Peel, core and cut pears into wedges.

– Peel and slice bananas.

– Clean mushrooms, then either halveor slice them.

– Remove parsley and dill from thestem.

Distribute the food to be dried evenlyover the glass tray or the rack.

Select Special Modes.

Sabbath ProgramThis mode is designed for religiousobservance.

Select the "Sabbath" mode and thenselect the oven mode and temperature.

The program will only start once thedoor is opened and closed:

– The cooking process will start afterabout 5 minutes using "Surround".

– The oven will heat up to thetemperature you have set and willmaintain this temperature for amaximum of 72 hours.

– The interior lighting does not comeon, even when the door is opened.

If Settings - Lighting - On has beenselected, the lighting will remainturned on throughout the program.

– Sabbath Program will appear on thedisplay throughout the entireprogram.

– The time of day is turned off.

Once the "Sabbath" program hasstarted it cannot be changed or savedas a Favorites.

Using the "Sabbath" mode

The program can only be canceled byturning the oven off.

If stains and food residues areallowed to remain on surfaces for alonger period of time, it may nolonger be possible to remove them.Continued use without cleaning willmake the oven much harder to clean.

Remove any soiling immediately.

Only the glass tray is dishwasherproof.

Tips– Soiling caused by spilt juices and

cake mixtures is best removed whilethe oven is still warm. Use cautionand make sure the oven is not too hot- Danger of burns.

– The Browning/Broiling element canbe lowered for easier cleaning.

– To neutralize odors in the oven, put acontainer of water with some lemonjuice in the oven and heat for a fewminutes.

Normal soiling

Moisture inside the oven can causedamage.Wipe out the oven with a damp clothso no excess moisture enters theinterior of the appliance through theopenings.

Remove normal soiling immediatelyusing a clean sponge with warmwater and liquid dish soap appliedwith a clean, damp microfiber cloth.

After cleaning, ensure that anydetergent residue is removed withclean water.This is particularly important whencleaning surfaces treated withPerfectClean enamel as detergentresidue can impair the non-stickproperties.

After cleaning, dry the surfaces with asoft cloth.

Roast Probe

Do not put the roast probe into wateror clean it in the dishwasher, this willdamage it.Clean the roast probe with a damptowel.

Stubborn soiling

Fruit juices and roasting juices maycause permanent discoloration to thesurfaces of the oven. This will notaffect the performance of the oven.Do not use force to remove stains.Clean only as described in thismanual.

Moisten stubborn soiling with asolution of warm water and liquiddish soap, leave for a few minutes totake effect.

If necessary, the rough side of a dishsponge can be used to remove thesoiling.

After cleaning, rinse thoroughly withclean water, and dry with a soft cloth.

Stubborn soiling on PerfectCleansurfaces can be cleaned using MieleOven Cleaner. It must only be appliedto cold surfaces in accordance withthe instructions on the packaging.

Non-Miele oven spray must only beused in a cold oven and for no longerthan 10 minutes.

If necessary, the rough side of a dishsponge can be used to remove thesoiling.

After cleaning, remove all ovencleaning agent residues thoroughlywith clean water, and dry with a softcloth.

Lowering the Browning /Broiling elementIf the oven interior is very dirty, theBrowning / Broiling element can belowered. It is recommended to cleanthe oven interior with a damp spongeregularly.

Unscrew the nut and lower theBrowning / Broiling element.

With the help of the following guide minor faults in the performance of themachine, some of which may result from incorrect operation, can be remediedwithout contacting the Service Department. Time and money will be savedbecause a service call will not be needed.

This guide may help you to find the reason for the fault, and how to correct it.

This display is dark. The time of day display is deactivated. When theappliance is turned off, the time of day display isturned off. As soon as the oven is turned on, the time of day

will appear. If you want it to be displayedcontinuously, the setting to turn the time of daydisplay back on must be changed (see "Settings –Time of day - Display").

There is no power to the appliance. Check if the circuit breaker has tripped.

A program will not start. If running a program with Microwave, the door isopen. Check if the door is closed properly.

If running a program with Microwave, a microwavepower level or cooking time have not been set. Be sure to set the power level and cooking time.

If running a Combi mode, all necessary setting havenot been set. Be sure to set the microwave power level,

temperature and cooking time.

There has been a power failure which has caused thecurrent cooking process to stop. Turn the oven off and then back on again. Restart the cooking process.

12:00 appears in thedisplay.

The power supply was interrupted for longer than 200hours. Reset the date and time.

Maximum Operating HoursReached appears in thedisplay.

The oven was operated for an unusually long periodof time. The Safety cut-out feature has beenactivated. Confirm with OK. Clear the message Program

Finished by selecting "Back".

The oven is now ready to use.

Fault XX appears inthe display.

A fault has occurred that you cannot resolve. Contact Miele.

The core temperaturecannot be set.

The roast probe is not recognized by the oven. Check whether the roast probe is correctly

plugged into the socket.

If the oven still does not recognize the roast probe, itmust be faulty. A replacement roast probe can beordered from Miele.

If the door is openedwhile using"Microwave" , theoven stops making anoise.

This is not a fault. If the door is opened while"Microwave" is being used, the door contactswitch will turn off the microwave and switch thecooling fan to a lower speed.

The oven has turneditself off.

The oven turns off automatically if a button is notpressed after a certain amount of time or after acooking program has ended to save power. Turn the oven back on.

Baked goods are notcooked properly afterfollowing the timesgiven in the chart.

A different temperature than that given in the recipewas used. Select the temperature required for the recipe.

The ingredient quantities are different from thosegiven in the recipe. Double check the recipe. The addition of more

liquid or more eggs will make a wetter mixturewhich will take longer to cook.

The browning isuneven.

The wrong temperature or shelf level was selected. There will always be a slight unevenness. If the

unevenness is great, check whether the correcttemperature and shelf level were selected.

The cookware used was not right for the programchosen. Bright, shiny pans are not very suitable.These reflect heat, which means that the heat doesnot penetrate to the food effectively, resulting inuneven or poor browning. Dark, matte pans are best for baking.

Check that the program was restarted afterinterrupting a cooking process using microwavepower. Restart the program to ensure the food is heated

or cooked properly.When cooking for heating with microwave, the timeset was too short. Check that the correct time is selected for the

microwave power level. The lower the microwavepower level the longer the cooking time.

The food has cooleddown too quickly afterbeing reheated orcooked in microwavemode.

Due to the microwave properties, the heat isgenerated first at the edges of the food and is thentransferred to the center of the food. If the food isheated with a high microwave power level the foodmay be hot on the outside but not heated through tothe center. When cooking foods with different sizes, such as

with menu cooking, a lower microwave power levelfor a longer period of time is most suitable.

The oven lighting turnsoff after a short time.

The oven is factory set to turn off automatically after15 seconds. This setting can be changed (see"Settings - Lighting").

The light cover consists of two seperate parts, aglass cover and mounting. If it falls it can bedamaged.When removing the cover hold it firmly so that itdoes not fall. Place a towel on the oven floor andopen door to avoid damage.

Disconnect the appliance from the power supply. Remove the screw to the lamp cover using a T20

Torx screwdriver, and take off the cover. Do not touch the halogen bulb with bare fingers.

Observe the manufacturers instructions.Remove the halogen bulb.

Replace it with a new halogen bulb (Sylvania66740, 120 V, 40 W, G9, FS1). It must be thermallystable up to 575°F (300°C).

Replace the glass piece in the mounting, and refitthe lamp cover. Make sure that the lug on themounting is correctly located in the notch in theroof of the oven, then screw the mounting backinto place.

Reconnect the oven to the electrical supply.

The oven must not be operateduntil it has been properly installedwithin cabinetry.

Mounting the door handle (dependingon model)

Mount the handle onto the retainingbolts.

Use the supplied Allen wrench totighten all four bolts.

If there are side handles, pleaseremove them.

Connect the power cord to theelectrical supply.

Push the oven into the cabinetry upto the oven trim and align it.

Open the door and use the screwssupplied to secure the oven to theside walls of the cabinetry throughthe holes in the oven trim.
