The American Wagyu Association is a progressive, mem-ber-driven, world-class Wagyu association whose member-ship is vibrant and growing. The AWA prides itself on genetic integrity where both Fullblood and Purebred Wagyu are verified through DNA parent verification before entering the herd book as a registered Wagyu.

This past year as an association and as producers, we’ve faced many business and marketing challenges. I’m con-fident in the future those will be distant memories and we won’t remember the challenges as much as we do the oppor-tunities.

We are blessed with a membership that believes in this breed and are ready to put their hearts and souls into helping drive membership growth. This has paid off with the largest mem-bership in the history of the American Wagyu Association!

The United State is the world’s largest producer and consum-er of beef, roughly 21% of the beef consumed in the world. The opportunities to expand the Wagyu beef market is in front of us! Couple this with the expansion of on-line mar-kets and an increased demand for Farm-to-Fork programs as producers we’ve perhaps never had a better opportunity than we have today!

AMERICAN WAGYU ASSOCIATION

The American Wagyu Association is the registry for Wagyu cat-tle in the United States. The Association has a vibrant and grow-ing membership base which continues to promote and develop a sustainable industry for Wagyu genetics and beef in the US.

Wagyu were originally draft animals used in agriculture, se-lected for their physical endurance. This selection favored an-imals with more intra-muscular fat cells (“marbling”) which provided a readily available energy source. Wagyu is a natural-ly horned breed and the cattle are either black or red in color.

There is some evidence of genetic separation into the Wagyu genetic strain as much as 35,000 years ago. Modern Wagyu cattle are the result of crossing the native cattle in Japan with imported breeds. Crossing began in 1868 after the Meiji resto-ration in that year. The government wanted to introduce West-ern food habits and culture. Brown Swiss, Devon, Shorthorn, Simmental, Ayrshire, and Korean cattle were imported during this period. The infusions of these British, European and Asian breeds were closed to outside genetic infusions in 1910.

Wagyu cattle were first imported to the United States in 1975 when two black and two red bulls were imported by Morris Whitney. In 1989 the Japanese began to reduce their tar-iffs on imported beef and that encouraged US producers to produce a high quality product for Japan. In the 1990s there were several importations of quality Wagyu. Most were black, but a few were Red Wagyu. These cattle have the greatest in-fluence on the U.S. herd and those in many other countries.

The unique taste and tenderness of highly-marbled Wagyu beef makes for an unrivaled eating experience. That is why Wagyu beef is finding its way into the repertoires of gourmet cooks and fine restaurants across the US and around the globe.

Not only is it a gastronomic delight, but it’s healthy as well. Health experts have discovered the mono-unsaturated to satu-rated fat ratio is higher in Wagyu than in other beef and the sat-urated fat contained in Wagyu is different. Forty percent is in a version called stearic acid which is regarded as having a mini-mal impact in raising cholesterol levels. The profile of marbled Wagyu beef is more beneficial and healthier to human health.

Wagyu is also higher in a type of fatty acid called conjugated linoleic acid (CLA). Wagyu beef contain the highest amount of CLA per gram of any foodstuff – about 30% more than oth-er beef breeds – due to higher linoleic acid levels. Foods that are naturally high in CLA have fewer negative health effects.

The opportunities Wagyu beef can offer are endless. For those producers targeting the high-end restaurant trade with high-ly marbled beef, Wagyu offers solutions. Additionally, cow/calf producers have learned to further value Wagyu genetics for their exceptional calving ease ability and premium car-cass quality in a single cross which no other beef breed offers.
