Is there anybody in Forsyth County who doesn’t have spring fever? What a long, cold winter we’ve had. Let’s just put those snowy, icy images out of our minds and think green grass, colorful flowers and all things spring. Speaking of cheery thoughts, I can’t wait for you to meet our Moments Mom, Jen Tamborello. After only a brief visit, Jen is

one of those people who makes you wonder why you can’t get more done in a day. The only other person who might compete in the “busy” department is our Mom at Work, Ana Adams, a veterinarian and

mother of five. I love Ana’s story because she is the type of person who goes on to do what others may only dream about.There is much more in this issue of Moments. Have you ever wanted to make preserved lemons? Wondering what they are?

Faith directsmom of three

While many teenagers are more interested in what they’re go-ing to do on Friday night, Jen Tamborello dreamed of being an actress in big productions.

The theater “bug” bit the Cumming resident and mother of three daughters early in life.

“I first got interested in theater in middle school and then was in my first play in high school,” Tamborello recalled. “I absolutely loved acting and everything about the process of the production.”

Tamborello continued in theater throughout her high school years in New Jersey before attending Elon University in North Carolina. She is quick to credit her family’s support for helping her pursue her aspirations.

“My parents always encouraged me and really fostered my love of the arts,” she added.

While in college, Tamborello also dabbled in directing and set design.

“I am such a visual person, so it was great experience for me to see theater from the other side,” she said. “I am and was passion-ate about all aspects of theater.”

After graduating from college with a degree in theater in 1997, Tamborello chose to move to Atlanta instead of returning to New Jersey, where she would have been close to the vibrant arts scene in New York City.

“I really went where I felt God led me,” she said. “And it was clear at that time that that was where I was supposed to go.”

In her small Atlanta apartment with not much more than a bean bag chair and a tiny TV, Tamborello said it was easy to doubt her decision. “It was really hard at first. I felt like I didn’t have any friends who understood me or what I wanted to do.”

When an opportunity to visit Los Angeles arose, Tamborello decided to return to Atlanta after just a week. “I tried to listen to where God was steering me and, once again, it was clear I needed to go back.”

As it turned out, Tamborello was smart to listen to that inner voice.

She landed a role in an Atlanta show, where she was cast opposite her now husband, Mike.

After a brief introduction, the two actors began rehearsing their first scene together. It involved a passion-ate kiss.

“After 45 minutes of kissing him, I still didn’t even know his name,” she recalled with a laugh. “I didn’t realize at the time that it was a Christian play. And I didn’t know about the lifelong friends I was going to make.

“Before each performance, we would pray together as a cast before going on stage. That is when I knew these are my people.”

Tamborello soon met Reggie Joiner, owner of Rethink Group and one of the original leadership team members for North Point Commu-nity Church in Alpharetta.

“Reggie had seen a show I was in and asked me if I was interested in directing Kids Stuff, the children’s program at the start-up church, which is now one of the largest in the world,” she said. “I didn’t even realize at first that it was a full-time job.

“Reggie is a creative genius, so to be a part of that exciting time was amazing.”

Tamborello found an outlet for her creative energy, as she went on to act, direct and produce numerous productions for the church. Soon af-ter she contracted with North Point, Tamborello began dating her soon-to-be husband. The couple married in 2001.

They have much in common. Mike had also majored in theater and shared his wife’s creative side.

“He wrote a song for me telling me how much he loved me … when my mother saw the lyrics, she said, ‘How does he know you so well?”

The couple welcomed their first daughter, Toryn Gable to the world in 2002. After a few years of juggling work and motherhood, Tamborello decided she needed to make a change.

“I was pregnant with our second child and really just felt I was supposed to be home,” she said.

By that time, her old friend Joiner had started his own company which produced films and curriculum for churches and organizations all over the world. “I decided to become an independent producer, so I could create my own hours,” she said.

The Tamborellos celebrated the birth of daughter Jadyn Shire in 2005 and third daughter Harper Blake in 2007. She continued to freelance until about three years ago.

It was then that Jay Birds Studio was born and Tambo-rello found herself writing, producing, directing, acting and running her own business — all while homeschool-ing her three daughters.

“I never imagined that I would home school, but that is just how it worked out.”

Two days a week the girls attend Dove Hill Hybrid School, which provides Tamborello with a curriculum. “I don’t think I could do it without them, they are amazing.”

When asked about how she possibly finds balance between her busy work schedule and family time, Tamborello said she definitely learned how to say “no.”

“I try to always think what is best for our family and to just do and be the best wife and mom that I can be.”

Quick to credit her faith for seeing her through, Tamborello tries to listen to what God is telling her.

“Our faith plays such a big role in our lives and everything we do,” she said. “I try to be obedient and trust that where I am weak, God will fill in for me.”

Tamborello also stressed that she could not do everything she does with-out the support from her husband.

“Besides my dad and my brother, Mike is the best man I know. We are a great tag team and even though we are incredibly busy, we are intentional about making time for each other.”

After what has felt like one of the longest and coldest win-ters I can remember, I’m thrilled to be talking about spring — even if it happens to involve cleaning. Springtime in Georgia is beautiful. And what better way

to welcome it in than with a clean and well-organized home? I well remember the days

when I would make a major announcement to the family about an impending spring cleaning extravaganza. Nobody shared my enthusi-asm and I usually just heard groans and complaints. If that sounds like the kind

of reception you may get, or if you just need a little per-sonal motivation, read on. Before beginning this

project or approaching your family, take a few minutes to come up with a plan. My husband calls this my plan of attack. Get a pad of paper and

make a list of what needs to be done. Use a different page for each room. Try not to be unrealistic here. For example, this is all about

cleaning, not redecorating. Even if you want to paint a room or buy a new sofa, this is not the list for those wishes. On your spring cleaning list, stick to cleaning and orga-

nizing tasks. Once you have the list — and it likely will be rather lengthy — think about who is best suited for each task. Not everybody is gifted with the ability to do certain jobs

well. My husband can “thoroughly clean” a bathroom in

less than 15 minutes.While I may welcome such a “thorough” job when I’m

busy, a bathroom spring cleaning job will take longer than that. While he may not be the best choice to spring clean the

bathrooms, my husband is quite good at cleaning and orga-nizing the garage, storage room and his workshop. I have a friend who tells me her husband is much better at

vacuuming than she is. If so, assign him that task. Children , unless they’re babies, don’t get off the hook for

spring cleaning day either. If your children are very young, give them a list or a brief

set of instructions (sorting toys, etc.), and then perhaps arrange a play date for them at the home of a friend. The fewer distractions, the more you can accomplish. Now that you have your lists and assignments, it’s time to

call a family meeting. Decide when the big day (or days) will be and let everybody know what is expected. It is also helpful to have a reward for work well done.

What type is up to you and best decided beforehand. Perhaps dinner and a movie. Or, take-out food and a movie in. If you have teen-agers, you know that money is the supreme motivator.Before the big day, make

sure you have all the neces-sary cleaning and organizing supplies. If possible, provide a bucket with the supplies for each bathroom.Also, plan ahead for snacks

and meals. Consider buying sub sandwiches or some-thing else ready made, so you don’t have to stop to prepare lunch.On cleaning day, get up

early and eat a healthy breakfast. Try some fiber-

loaded cereal with fresh fruit. Wear comfortable clothes and keep a positive attitude. If

feeling dread, just think about how good you’re going to feel once your house is sparkling.Definitely crank up the music on cleaning day. Encourage

everybody to drink plenty of water to stay hydrated. Perhaps most importantly, keep an upbeat attitude. Chil-

dren take their cues from you, so remember to keep a smile throughout the day. Happy dusting!

It seems this spring is the season of anything goes.“Really, there’s just about anything for spring,” said

Leslie Andert, woman’s apparel manager at Belk in Lakeland Plaza.

“Short, mini dresses are popular, but so are long maxi dresses. Pretty much any color is out there too.”

Debbie Allen, owner of Savvy Exchange, on Market Place Boulevard, also in Cumming, agreed.

“I’m seeing all sorts of things for spring,” she said. “There’s a rainbow of colors. There’s wood and metals mixed with lace and other tradition materials.”

While things are pretty open this spring, there are a few trends this season.

Andert said pattern black-and-white outfits paired with “pops of bright color” are something retailers will be seeing a lot of this season.

Those pops will come from accents in fabric patterns, as well as from accessories such as belts, handbags, shoes and necklaces.

“There is a lot of pink, tortoise, yellow … all of those really bright colors are still popular,” she said.

Chunky heels and wedge sandals with uppers in bright colors will be popular, she said, as will big, bold neck-laces.

“That layered look of combining necklaces of different lengths will continue to be popular, too,” added Allen.

Along with those long maxi dresses will also be plenty of full, wide-leg pants in soft, feminine fabrics.

“Palazzo pants will be big this season,” Andert said. “Those will be paired with a layered look on top. It’s almost a Bohemian feel.”

Ana Adams, specialized veterinarian and owner of Hamby Road Animal Hospital, has seen many changes in Forsyth County since she opened her business 16 years ago. But that’s just a small part of this mother of five’s life

journey, which included formative years spent in both the Southeast and South America.A native of Birmingham, Ala., Adams’ parents decided

to move their family back to their native Argentina when she was 16 to be closer to their extended family. “To my parents, it was like going home,” remembered

Adams. “I thought it was great. Moving to Buenos Aires was like moving to New York City.” After high school, Adams graduated from veterinar-

ian school, where she majored in large animal care. “In Argentina, there are many farms with cows and horses, so that seemed like the perfect thing for me to specialize in,” she said. When it came time to get a master’s specializing in large

animals, Adams returned to the United States to attend Auburn University. She had every intention of moving back to Argentina once she had finished her degree.“I just remember being in school and thinking about

how much more opportunity there was for me here in America, so I made the decision to stay,” she said.Adams not only stayed, she decided to change her spe-

cialty from large animals to smaller ones and add some specialization. In 1994, Adams became board certified in theriogenol-

ogy, or animal reproduction. After earning her advanced degree, Adams began doing some relief work at various veterinarian clinics. The more she traveled, the more she found herself

dreaming of one day owning her own practice. After re-ceiving some guidance from the Small Business Admin-istration, Adams’ dreams became reality. As it turned out, that year — 1997 — was a big one

for Adams. She married her husband, Jeff, who at the time was in the construction business. Next, she opened Hamby Road Animal Hospital.

“I wanted to be on Highway 9, but couldn’t afford it,” she recalled. “I didn’t have any funds for advertising either.” To add to the craziness, Adams and her husband

bought their first house in Forsyth County. “Luckily I am good at multi-tasking,” she said. That multi-tasking was about to be truly tested when

the couple soon welcomed their first child. As they renovated the little house which became home

to the veterinarian practice, they turned the garage into a nursery. Adams then found an ad in The Forsyth County News for a woman looking for a nanny posi-tion. Yvonne Graham came to be an invaluable resource for

the Adams, who went on to have four chil-dren in less seven years and adopt another daughter a few years later. “We all called Yvonne ‘Nanny’ and she was

always wonderful, her energy and everything about her was priceless.” Graham was the Adams’ nanny for 11 years

and they remain close to this day. Ana also found time to help husband Jeff

start his own business. “Jeff always dreamed of owning a farm,”

she said. “And when he discovered hydro-ponic lettuce, he knew he had found what he wanted to do.” Two years ago, after leaving his construc-

tion job and with some help from his father, he built a 14,000-square-foot greenhouse in which 3,000 heads of lettuce are harvested each week. Circle A Lettuce produces Bibb, romaine and spring

mix lettuces, as well as kale and basil. The lettuce is available at the farm on Dishroom Road, online and in various local stores. Adams said she is thrilled that both she and her hus-

band are able to earn a living doing what they love. “Jeff is probably the nicest guy you will ever meet,” she

said. “He is so solid and also very funny. You have to have a sense of humor when you have five kids.” Adams said Forsyth County remains a wonderful place

realize that nothing is ever perfect,” said Adams. “I love my practice, the pets and their owners. But at the end of the day, our family is what is the most important thing to us.”

lergy sufferers need to spend the season indoors.Joel Hoffman, a physician with North Atlanta Ear, Nose

and Throat Associates, said there are many options for those with seasonal allergies. “The main treatment is often a combination of a nasal

steroid spray ... along with an antihistamine,” Hoffman said. “The antihistamines can either be taken orally, like the over-the-counter Allegra, that doesn’t cause any sedation and is very effective.“A lot of doctors are now using topical sprays like As-

tepro and Patanase.”

Hoffman said he will sometimes prescribe an eye drop if other medications aren’t enough to help the eye symp-toms. The nasal spray steroids are effective only if used daily, he said, noting antihistamines can be used on an as-needed basis.

For those dealing with the typical spring allergy symp-toms — watery or itchy eyes, sneezing, nasal drainage or congestion — over-the-counter medications could be enough, Hoffman said. But if symptoms persist or worsen, it’s time to call a doctor. “Allergies can lead to a sinus infection, so people with

primarily revolve around dust. Come spring, however, pollen is the main culprit, according to Hoffman.“Some people just know when that

pollen hits and they are just misera-ble,” he said. “It’s really the grasses and tress are the main pollens that we’ll see now ... blossoming and greening up and allergies start getting worse as people are doing more outside.”

Most folks agree that fresh fruit is an excellent choice when looking for something healthy to snack on.

If fruit to you means an apple or some grapes, you may be in somewhat of a fruit rut.

Well, it’s time to bust out of that rut and experiment with some of the lesser known fruits.

Here are a few to consider: • Apricots: Not that they are all that unusual, but many

of us forget about eating these little powerhouses fresh. We think only of the dried variety, which usually contain lots of sugar. Apricots have potassium, vitamin C, and are rich in fiber and Beta-carotene.

• Asian pears: There are many varieties, but we usu-ally see only those that are light brown to almost en-tirely brown. They are crisp like a crisp apple, but have a pear-like flavor. They are also round and not at all pear shaped.

• Blackberries: These are super-high in fiber because they have so many edible seeds. If the seeds bother you, blend them up in a smoothie. You won’t even notice.

• Kiwifruit: Also known as Chinese gooseberries, kiwifruit is an excellent source of vitamin C that also contains magnesium. The fruit’s beauty and uniqueness alone may tempt a finicky child to try it.

Did you know that kiwifruit contains enzymes that act as a meat tenderizer? Rub a steak with the kiwifruit flesh. After an hour or so, grill or broil to perfection.

• Papaya: A good source of fiber, papaya also has folate and packs plenty of vitamin C. They are great on their own, but also good in salads and when wrapped in pro-sciutto or tossed into a salsa.

• Star fruit: Children love to see the star shape once the fruit is cut. The flavor is mild and the texture is juicy.

Also known as carambolas, they are high in vitamin C, and have potas-sium, niacin and phosphorus.

• Dragon fruit: You may have to seek this unusual fruit out at a specialty store or an Asian grocery. Rich in fiber and vitamin C, dragon fruit is best eaten when chilled. Just sprinkle with a little lemon or lime juice, scoop out and enjoy.

• Persimmon: Resembling large orange tomatoes, persimmons are one of those fruits people either love or loathe. Either way, try one.

You can cook with persimmons, but the easiest (and I think best) way to eat them is to slice off the top and

scoop out the flesh. Try eating it with Greek yogurt sweetened

You may have run across the ingredient “preserved lem-ons” in a recipe and wondered what they were. Or perhaps you were in a gourmet food store and saw a

jar of beautiful preserved lemons. Once recovering from sticker shock, you likely wondered how you would ever use them in cooking. Well, I’m here to solve the mystery, show you just how

easy they are to make and share some terrific ways to use them. First, what are they? Preserved lemons are just that — fresh lemons that have

been preserved in salt and lemon juice. After curing for three weeks in the refrigerator (al-

though many recipes say refrigeration is unnecessary, I think it is), your lemons will be ready.The lemons will keep for a long time in the refrigerator,

some say forever, but I think six months. Once you try these, you will no doubt find other ways

to use them. You could also make smaller batches and give them as gifts. You can leave the lemons whole, which makes for a

beautiful presentation, or quarter them, as I usually do. Either way, they’re delicious. Oh, and yes, you do eat the

peeling.

Preserved lemons3 to 4 lemons, scrubbed 3 to 4 tablespoons sea salt or kosher saltFreshly squeezed lemon juice to cover lemons

1 tablespoon black peppercorns

Cut lemons into quarters. Sprinkle lemon quarters liberally with salt. Place salted lemon quarters into one or more clean glass jars. Sprinkle with more salt and then add enough freshly squeezed lemon juice to cover. Add black peppercorns. Cover and refrigerate at least three weeks. You can reuse the liquid a few more times to make an-other batch or two.

Preserved lemon chicken with olives1 ½ pounds chicken drumsticks and bone-in chicken thighs, skin removedSalt and pepper1 ½ tablespoons butter2 tablespoons olive oil1 onion, chopped2 tablespoons fresh ginger, grated½ teaspoon turmeric½ teaspoon cinnamon3 garlic cloves, finely minced ¼ cup fresh Italian parsley, minced¼ cup fresh cilantro, minced1/3 cup dry white wine1/3 cup chicken stock½ cup preserved lemons, coarsely chopped½ cup pitted briny green olives or kalamata olives,

Season chicken with salt and pepper. Melt butter and olive oil over medium-high heat in a

Dutch oven.Brown chicken five minutes and then turn over and

brown another few minutes. Transfer chicken to a plate. Add onion, ginger, turmeric

and cinnamon to the pot and cook until onion is soft, three or four minutes. Add garlic, parsley and cilantro and cook another min-

ute. Turn heat to high and then carefully add the white wine

and chicken stock. Bring to a boil and add the chicken pieces and any

juices that have accumulated on the plate. Lower heat to simmer, cover and cook until chicken is

cooked through and tender, about 50 minutes. Transfer chicken to a clean plate, us-

ing a slotted spoon. Simmer the sauce until it has reduced

a bit. Add preserved lemon and olives to the sauce. Add chicken back to pot, making sure

each piece is covered with sauce.Sprinkle with more cilantro and pars-

ley before serving. Serve on top of couscous or rice.

Preserved lemon salad dressing1 tablespoon finely minced preserved lemon (more to taste)1 teaspoon finely minced shallot2 tablespoons finely minced parsley2 tablespoons finely minced chives1 teaspoon thyme¼ cup olive oil¼ cup freshly squeezed lemon juicePinch of black pepper

Combine all ingredients and whisk well to combine.

Other uses Here are some other uses for preserved lemons:• Combine chopped preserved lemons, chopped parsley, olive oil and lemon juice and top broiled firm white fish with the mixture• Add some chopped preserved lem-

ons to cooked couscous or orzo, with a little olive oil. • Use in any marinade for chicken or fish.• Finely chop preserved lemons and add to biscuit dough along with dried herbs. • Make marinated olives by combining finely chopped preserved lemons, olive oil, parsley, minced garlic, crushed red pepper flakes and lemon juice. Pour over whole green olive and kalamata olives and marinate.

I recently stumbled upon the 7 Deadly Zins Wine and am super glad I did.

I mistakenly thought that all zin-fandels were sweet, and had shunned them since once tasting a cloyingly sweet white zinfandel.

The name was what intrigued me with 7 Deadly Zins, and the descrip-tion was definitely not one of a sweet wine.

The flavor is bold, full bodied and rich. It goes perfect with meat, though I also loved it when paired with eggplant parmesan.

It’s not too heavy and also would make for terrific sipping on a chilly early spring night in front of the fire pit.

As it turns out, zinfandel has an interesting history and so does the winery that produced this bottle.

I was interested to learn that zinfandel is genetically equivalent to Italy’s popular Primitivo, a variety of red grape grown in Puglia, which is the “heel” of Italy.

Zinfandel first came to the United States in the mid-19th century, with most experts saying the origin of the name “zinfandel” is unclear. Though the wine was long considered “Amer-ica’s vine and wine,” it was discovered in the late 1960s that the grape was genetically equal to the Italian Primi-tivo.

This particular wine is the result of two brothers, Michael and David Phillips and their winery in Lodi, Calif.
