Chocolate malt cake
MAKES 10 SLICES
For the cake
460g (1lb) butter, softened
230g (8oz) caster sugar
230g (8oz) soft light brown sugar
7 large free-range eggs, beaten
360g (12oz) self-raising flour, sifted
1½ tsp baking powder
100g (3½oz) cocoa powder, sifted
5 tbsp Horlicks Traditional powder
200ml (7fl oz) milk
For the frosting
150g (5½oz) dark chocolate, broken
into pieces
125g (4½oz) butter, softened
400g (14oz) icing sugar, sifted
3 tbsp Horlicks Traditional powder
(not Horlicks Light)
2 tbsp milk
To decorate

1 Preheat the oven to 180˚C/Gas Mark 4.
Grease three 20cm (8in) cake tins and line
the base of each with baking paper. Cream
the butter and sugars together in a large
bowl until light and fluffy. Add the eggs,
flour, baking powder, cocoa and Horlicks,
then beat for 1 minute. Gradually add the
milk while still beating. Mix until the batter
is smooth.
2 Divide the mixture equally between
the cake tins and level the tops. Place in
the oven and bake for 30-35 minutes
until the cakes are firm and spring back
when lightly pressed. Cool in the tin for
5 minutes, then turn out onto a wire rack
to cool completely.
3 For the frosting, melt the chocolate in
a heatproof bowl over a pan of gently
simmering water. Remove from the
heat and allow the chocolate to cool for
2 minutes. In another bowl, beat the
butter until smooth and soft, then beat
in the melted chocolate. Add half the
icing sugar and beat well. Add the
remainder of the icing sugar and the

4 Place one layer of cake on a serving
plate and cover the top with frosting. Place
another layer of cake on top of the frosting,
then cover that cake with frosting. Add the
final cake and cover the top with frosting,
then decorate with Maltesers.

guide to executing the best afternoon tea event. Afternoon tea is a great opportunity for you to reveal your creativity and ability to your friends and family. If you want to give guests the time of their lives with an amazing teatime experience, there are a few things you need to plan for.
Food preparation and productionMake sure you've planned ahead. You'll need to buy the right ingredients and it really helps to have them measured out before you start baking. It's also important to check you have the right equipment for the recipes you plan to bake. Always preheat your oven in good time and make some space in your fridge and freezer beforehand, for any recipes that call for chilling.
Organisation and time managementIt is important to plan out your timings in advance, including the time you expect your guests toarrive, be greeted and allocated to their seats. Try to plan the timings for tea, coffee and the full food service, including a slight buffer should the
guests run over time. If additional activities are to take place aside from the service itself, you must account for the time in which guests are to be allocated back to their seats and the preparation for any take-home items or gifts. Overall, an agenda for the timing of the activities prior to, during and after the event should be established.
PresentationEnsure there are enough tables, chairs, dishes, napkins, china and cutlery for the guests. It's always better to present your guests with a good variety of food rather than too
little. Pay attention to the textures, flavours and uniformity of the dishes as these will make a difference to the overall presentation.

Two-star bakers from Bedfordshire proved they could rise to the challenge of making a difference to the lives of sick and injured veterans by holding a cake sale that raised an impressive amount of money.
Sisters Amelia, 15, and Olivia, 14, took part in this year’s Bake for Heroes by making over 300 cupcakes and selling them during
a dance show at their school.The girls even persuaded their
local Morrisons and Waitrose stores to chip in with money off and free ingredients.
The dance show, held by Doreen’s School of Dancing, took place at their school, Vandyke Upper School. With soft drinks also on sale to wash down the cakes and proceeds from a raffle,
the total raised was £610!This is the fourth Bake for
Heroes bake sale these amazing young women have completed –making £1967.70 in total.
