Mad River BreweryMad River Brewery uses traditional brewing methods to produce their award winning ales. They reduce their input into the waste stream by sending all the spent grains and hops from the brewing process to local farmers, as well as recycling cardboard, paper, and other recyclable material from around the plant. Their 6-pack cartons are made with 100% recycled paperboard! Most 6-packs are on sale this month, so try a variety of them!

Classic Corned Beef and CabbageCourtesy of Onion River Co-op

Rinse brisket to remove the surface brine. Place in a large pot and add water to cover. Add bay leaf and freshly ground black pepper. Simmer, covered, until a fork can easily slide into the center, about 3 hours. In the last 30 minutes of cooking, add potatoes and carrots. Allow to cook 10 minutes, then add cabbage. Cook another 15-20 minutes, until cabbage is tender. To serve, slice meat and place on serving platter. Remove vegetables with a slotted spoon and add to serving platter.

Ingredients• corned beef brisket (2 lbs)• bay leaf• black pepper (to taste)• red potatoes (quartered)

• carrots (sliced into 1/4” rounds)• 1 head green cabbage, cored and

wedged (from Willow Creek Farm)
