Summer Recipes

Celebrate the summer with these bright and healthy recipes!

Summer Vegetable Salsa Source: Summer Food, Summer Moves

(USDA Food and Nutrition Service)

Ingredients:

1 medium zucchini

1 medium white onion

3 Roma tomatoes

1 jalapeño pepper (optional)

4 cloves garlic

1/2 cup fresh cilantro or parsley (chopped)

1/2 teaspoon salt

1/4 cup lime juice

Instructions:

1. Rinse all vegetables and herbs under cool

running water before cutting or eating.

2. Dice zucchini, onion, and tomatoes into small

pieces and put into medium bowl.

3. Because the jalapeno can burn the skin, an

adult should remove the seeds and mince it. Mince the garlic. Add the seeded and minced jalapeno and garlic to the tomato mixture. **Wear gloves when handling the jalapeño.

4. Add cilantro, salt, and lime juice to the tomato mixture. Stir well.

5. Chill in the refrigerator for at least 30 minutes before serving. Per serving (1/2 cup): 25 calories, 0 g fat, 6 g carb, 1 g fiber, 1 g protein, 198 mg sodium

Chef’s Notes: Grill the vegetables before

dicing and adding them to the salsa.

Instead of zucchini, you could

use 1 cup of yellow squash or cucumber.

Add watermelon, peaches, or

pineapple for a fruity summer salsa.

Serve with cut-up vegetables

or whole wheat pita chips, or on top of grilled chicken or fish!

Summertime Ideas for Staying Active!

Adapted from Go4Life® from the National Institute on Aging at NIH

A change in seasons is an excellent time to be creative about your

exercise routine and try something new!

Swim laps or take a water aerobics class.

These are both refreshing once the

weather gets steamy.

Walking in the mall is a cool way to beat

the heat.

Now that kids and grandkids are out of

school for the summer, ask them to teach

you their favorite sport or physical activity.

Celebrate National Bowling Week the first

week in August. Get friends and family

together and challenge each other to a

friendly tournament.
