双色素饺（ Vegetable Dumplings in Two Colours) 的做法

1.南瓜洗净切薄片，上锅蒸熟透；菠菜洗净切掉根部，放入开水锅中烫熟后沥水捞起，用搅拌机充分搅拌南瓜成南瓜泥，再搅拌菠菜成菠菜泥；2.用薄布包住菠菜泥，挤出所有菠菜汁，处理南瓜的方式同样，要取各 50 克的汁，如果南瓜过滤不出那么多汁就加一点水搅拌均匀；3.大盆里放 120 克面粉，然后慢慢倒入蔬菜汁，先用勺子把面粉和水搅拌成干的絮状后再用手和面，一直揉到成一个光滑面团，中间适当加水或者加面粉调整干湿度；4.将两个面团分别搓成长条，切适当大小的剂子，用手先按成圆饼然后用擀面棍擀成圆形薄片，包上事先做好的馅儿即可。
