NOTE: The Grain Mill is designed togrind only low-moisture, non-oilygrains. Do not grind peanuts, coffeebeans, soybeans, or sunflower seedswith the Grain Mill; their high oil orhigh-moisture contents can damagethe grinding mechanism.

Grain Mill AttachmentThe following attachment is designedto mill low-moisture, non-oily grainssuch as wheat, corn, rye, oats, rice,buckwheat, barley, and millet.

Grain Mill Body — serves as a hopper;guides grains into grinding burr

Grind Worm — drives grinding action

Movable Burr — grinds wholegrains into flour

Adjustment Knob — adjusts thefineness of the grind

Cleaning Brush — use to cleanburrs and other mill parts after use.

Assembling Your Grain MillTO ASSEMBLE:

Insert the attachment power shaft (A)with the grind worm (B) and movableburr (C) into the grain mill body (D).

Mount the front plate (E) withadjustment knob (F) onto the front ofthe shaft. Turn and tighten screwsinto place.

Flour ground with the Grain Mill willhave a coarser texture thancommercially ground flour. The GrainMill grinds, and you receive, all partsof the berry; commercial grinders siftout some parts of the berry beforemarketing the flour.

It is not necessary to press grain intothe Grain Mill hopper with your handsor any utensil. The moving grindworm will feed the grain into thegrinding burrs.

One cup of grain yields between 11⁄4and 11⁄2 cups of flour.

One cup of oats yield 7⁄8 cup of flour.

If you grind more flour than yourrecipe requires, store it in therefrigerator or freezer to preventrancidity, since this product containsno preservatives.

Do not grind coffee beans in yourGrain Mill; their high oil content candamage the grinding mechanism.

Do not grind grains or nuts with ahigh moisture or oil content, such aspeanuts, sunflower seed, andsoybeans. These can also damage thegrinding mechanism.

Assembling Your Grain MillTO ATTACH:

Before attaching the grain mill, turnoff and unplug the stand mixer.1. Depending on which type of hub

you have, either flip up the hingedcover or loosen the attachmentknob (A) by turning itcounterclockwise and removeattachment hub cover.

2. Insert the attachment shaft housing(B) into the attachment hub (C),making certain that the power shaftfits into the square hub socket.Rotate the attachment back andforth if necessary. When theattachment is in proper position, thepin on the attachment housing willfit into the notch on the hub rim.

3. Tighten the attachment knob (A)until the unit is completely securedto the mixer.

Suggested GrainsAll these low-moisture, non-oily grainsmay be ground in your KitchenAid®

Grain Mill:

WHEAT — Many different types ofwheat are grown in the United States.Hard wheat, with a high percentageof protein, is generally considered bestfor bread flour; soft wheats arepreferred for cakes, cookies, and otherbaked goods. Mix hard and softwheats for all-purpose flour.

CORN — Grind fine for baking,coarse for corn meal mush.

RYE — Combine rye flour with wheatflour for best results with rye bread;rye does not contain enough glutenfor good rising.

OATS — Oats must be hulled beforegrinding for flour, or use rolled oats.Oat hulls prevent proper feeding ofgrain into grinding burrs. In mostrecipes you can substitute oat flourfor up to 1⁄3 of the all-purpose flour.

RICE — Both white and brown ricegrind well.

BUCKWHEAT — For best results,buckwheat should be hulled beforegrinding. Raw and toasted buckwheatboth grind well.

BARLEY — For best results, barleyshould be hulled before grinding.

MILLET — Before grinding, toastmillet in a heavy, dry skillet to bring outthis very small grain’s unique flavor. Stirconstantly to prevent burning.

Your local library or health food storecan provide more information on grains.

2. Fill the hopper with grain.3. Once the grain is added, start the

mixer at Speed 10.NOTE: If the grind is too fine, turnthe adjustment knobcounterclockwise, one notch at atime, until desired coarseness isobtained.4. Continue to replenish grain in the

hopper until the desired amount ofgrain is ground.

NOTE: Do not grind more than 10cups of flour at one time; damage tomixer may result. After grinding 10cups of flour, allow the mixer to cool atleast 45 minutes before using it again.

TO USE:

Note the grind symbols at the top ofthe dial. The Fine Grind Symbol (A)indicates the finest grind setting. TheCoarse Grind Symbol (B) indicates thesetting for the grind that is mostcoarse. Each notch on the dialrepresents a grind setting.

1. Select the finest grind setting byturning the adjustment knob (C)clockwise to the Fine GrindSymbol (A).

Using Your Grain Mill

Care and CleaningTO CLEAN:

Clean burrs and other mill parts withthe provided brush. The Mill does notnecessarily need to be cleaned afterevery use, but should be brushedwhen changing types of grains. Ifneeded, a toothpick may be used toclean the burr grooves.

IMPORTANT: Do not wash GrainMill or any of its parts in anautomatic dishwasher.

If the Grain Mill must be washed,wash it by hand with mild detergentand warm water. Dry thoroughly witha towel. Allow to air dry. Do notreassemble until next use. If burrs arenot completely dry, grain may clogthe mill.

If the unit is to be stored for a longperiod of time, lightly coat the burrswith mineral oil. Before next use,hand wash as directed above toremove the mineral oil.

Jalapeño Corn Muffins1 cup corn or 11⁄2

cups cornmeal3⁄4 cup wheat berries or

1 cup whole wheatflour

1 tablespoon bakingpowder

1⁄2 teaspoon salt1 cup low-fat milk1⁄4 cup oil3 tablespoons honey1 egg2 tablespoons canned

diced jalapeñopeppers

Assemble the Grain Mill and attach to the mixer. Setthe mill on the finest setting. Turn the mixer toSpeed 10 and grind corn into the mixer bowl placedunder the mill. Repeat with wheat berries.

Add baking powder and salt to the mixer bowl; mixwell. Add all remaining ingredients. Attach the bowland flat beater to the mixer. Turn the mixer to StirSpeed and mix about 15 seconds. Stop and scrapethe bowl. Turn the mixer to Stir Speed and mixabout 15 seconds.

Spoon the batter into greased muffin pans. (Do notuse cupcake liners.) Bake at 400° F for 15 to 18minutes, or until toothpick inserted into centercomes out clean. Remove from pans immediately.Serve warm.

Yield: 12 servings (1 muffin per serving).

Per serving: About 121 cal, 3 g pro, 16 g carb,6 g fat, 19 mg chol, 191 mg sod.

Honey Whole-Wheat Pancakes1 cup wheat berries or

11⁄2 cups wholewheat flour

1 teaspoon bakingsoda

1⁄4 teaspoon salt1⁄4 teaspoon nutmeg

11⁄2 cups buttermilk1⁄2 cup fat-free egg

substitute or 2 eggs3 tablespoons honey

Assemble the Grain Mill and attach to the mixer. Setthe mill on the finest setting. Turn the mixer toSpeed 10 and grind the wheat berries into the mixerbowl placed under the mill.

Add baking soda, salt, and nutmeg to the mixerbowl; mix well. Add all remaining ingredients.Attach the bowl and flat beater to the mixer. Turnthe mixer to Speed 2 and mix about 15 seconds.Stop and scrape the bowl. Turn the mixer to Speed2 and mix about 15 seconds, or until smooth.

Spray griddle or heavy skillet with no-stick cookingspray. Heat the griddle to medium-high heat. Pourabout 1⁄3 cup batter for each pancake onto thegriddle. Cook 1 to 2 minutes, or until bubbles formon the surface and the edges become dry. Turn andcook about 1 to 2 minutes longer, or until goldenbrown on the underside.

Yield: 6 servings (2 pancakes per serving).

Per serving: About 170 cal, 9 g pro, 34 g carb,1 g fat, 2 mg chol, 402 mg sod.
