I started in 1988 with Taj Hotels straight after my hotel school diploma and found my first assignment as a room boy. After some time I realized that I need a greater challenge, a job to tickle my creativity. The dynamics of the production departments had always impressed me, so I decided to give it a try. I completed cross training in many kitchens and found bakery and pastry to be the most interesting. The individuality, innovation and creativity required for the job mesmerized me. The more exposure I had in the various sections of the bakery like the chocolate section, ice-cream, cake and gateaux; the more my passion towards this department increased. That’s where I found my calling.

Tell us about the turning point in your career where you developed a passion for patisserie?

It was always my dream to work with Jumeirah Hotels and so I applied to be part of the pre- opening team of Jumeirah Emirates Towers. Unfortunately, due to unexpected circumstances I wasn’t able to join the team at the time. Finally, in 2003 I had the chance to be a part of the pre- opening team as Pastry Sous Chef at Mina A’ Salam. Within eleven months I was promoted to Pastry Chef and assisted with the opening of the entire resort of Madinat Jumeirah under the guidance of my Executive Pastry Chef at that time. The experience and knowledge I developed during my time at Madinat Jumeirah was enormous, due to the complexity of the operation there. Throughout this time, I was given many opportunities to develop myself and up until 2011, I had gone through several international training courses and competitions in countries such as Germany, the UK, Switzerland, Italy, France, Malaysia, Singapore, China and more! In 2011 I was ready for the next step in my career, and so I joined Jumeirah at Etihad Towers during the pre- opening as the Executive Pastry Chef. I have realized that I finally achieved my goal; to lead a pastry and bakery team. With a lot of strong will and dedication, 23 years after I had started my career, I was extremely proud of achieving my life aim within a company like Jumeirah. I moved from one iconic property to the first Jumeirah property in the capital and one of the landmarks of Abu Dhabi- I think it is something to be really proud of. I felt the responsibility to establish the high standards and perfection of Jumeirah within the pastry team of Jumeirah at Etihad Towers. I have to say “thank you” for the teamwork of all the colleagues from the pre-opening team and the team today, which has brought us to where we are right now: TripAdvisor # 1 and the top business hotel in Abu Dhabi.

I had the pleasure and honour of working for events involving the ruler’s family of Dubai and Abu Dhabi, and had the best personal recognition experience for my creations. One of the most particularly heart touching experiences I had was when I got a request for a birthday cake for a young child. The family expressed their gratitude on the day of the birthday celebration itself, but the main surprise came on the next day. Very early in the morning, before school, the child came together with his father and brought me a small thank you card, handmade and written by the child.

Which guest compliment really touched your heart?

It is very important to assess the abilities and skills of each and every person and allow every team member to showcase his best, while still working on areas of improvement. In many cases it is about trust in your staff and to give enough opportunities to people where they can prove themselves and establish a healthy self-confidence at work.

How do you drive perfection within your team?

Flexibility, dedication and customer focus. Be hungry to achieve your goals and be prepared to work hard and always look to broaden your horizons.

What is your advice for aspiring chefs?

Nope - my wife would never let me mess in her kitchen!

Do you cook or bake at home?One guest asked me once to prepare a cake representing a famous Hollywood actress in live size! We were given only 3 days to complete the task and we worked throughout the time without break or even sleep, together with 5 other colleagues! It was very successful in the end and looked exactly like the real thing!

What is the weirdest request you have received from a guest?

Every day is exciting and bears a new adventure, I feel motivated to express my creativity and live my passion at work on a daily basis. I think that’s the best outcome for anyone.
