ANNA’S KITCHEN

INGREDIENTS:

PEPPER COULIS

¼ cup (60 mL) olive oil

1 cup (250 mL) diced onion

2½ cups (625 mL) diced red bell pepper

¾ cup (175 mL) dry white wine

2 sprigs fresh thyme

2 sprigs fresh oregano

Salt and pepper

GOAT CHEESE GNOCCHI

4 oz (112 g) fresh goat cheese, at room temperature

4 oz (112 g) block cream cheese, at room temperature

½ tsp (1 mL) salt

PREPARATION:

For pepper coulis, heat a saucepan over medium heat and add oil. Add onion. Sauté until translucent, 5 minutes. Add peppers and sauté for 3 more minutes. Add wine, thyme and oregano. Simmer, covered, until peppers are tender, about 10 minutes. Remove from heat and puree until smooth. Strain. Season with salt and pepper and set aside.

A PLEASANT PAIR

Summer Caprese Salad

This riff on the classic Caprese salad and traditional Gazpacho soup combines some of the best produce this season has to offer — including tomatoes, cucumber and bell pepper — to make a refreshing starter or side dish. For the best results, use buffalo mozzarella.

INGREDIENTS:7 ripe red tomatoesSalt and pepper, to taste 4 ripe yellow tomatoes2 green onions1/4 cucumber, peeled and seeded1 bell pepper2 garlic cloves¼ cup (60 mL) olive oil Fresh basil leaves, thinly sliced1 lb (454) g fresh mozzarella cheese, such as buffalo mozzarella, drained 1 handful arugulaPinches of freshly cracked black pepper

PREPARATION:Finely chop 3 red tomatoes. Place in a medium bowl. Sprinkle with salt. Cut remaining tomatoes (red and yellow) into thick slices. Set chopped and sliced tomatoes aside separately.

Finely chop green onions, cucumber and bell pepper. Add to chopped tomatoes.

Mash garlic with a sprinkle of salt in a mortar and add to chopped tomato mixture. Stir in the olive oil. Season with salt and pepper. Sprinkle with basil.

Cut mozzarella into slices. Place a tomato slice on each plate, top with a slice of mozzarella and a generous spoonful of chopped tomato mixture. Repeat with 1 or 2 additional layers. Garnish with arugula and sprinkle with cracked pepper. Serve immediately.

The Benway Pinot Noir is produced from the northern block of the Little Creek vineyard, from 15 year-­old vines planted in high density, 4x3 spacing. The appearance is a very pale garnet red, matched by a delicate, reserved nose. Aromas range from rose petal to Turkish delight, light sweet baking spice (cinnamon, nutmeg), red peppercorn, blond caramel and even a touch of maple syrup, all sitting on a bright, tart red cherry, fresh strawberry

Expect a classic, modern, complex nose of wood spice, smoke, vanilla/butterscotch, butter and fresh cedar bough. It’s creamy, elegant and pinned on great acidity with a powerful, lemon

length. Rating: 92 Points (David Lawrason)

Sandbanks 2009 Baco Noir Reserve, Ontario ($19.95) VQA regulations prevent hybrids like Baco Noir being labelled as

County. Too bad, because it’s a good grape for making full-­bodied reds in PEC. This has a generous, maturing nose of raspberry-­currant fruit with some woodsy, smoky and leathery/meaty (pastrami) notes. It has a trace of sweetness, but the overall balance and drinkability is very good. Baco’s light tannin load makes this ideal for drinking now with grilled anything, as long as the barbecue sauce is bountiful. It reminds me of a southern Rhone Carignan-­based blend.
