The rooms of the Giovì Relais, divided into Superior and Deluxe, will allow you to feel the suggestion of a bygone age, the charm of days punctuated by the rhythm of the small daily gestures. Simple but refined spaces where the white recalls the atmosphere of the Mediterranean Sea and is the setting for antique furniture, combined with modern design solutions.To recover in a workmanlike manner the beautiful building dating back to the 17th century which today houses Giovì Relais, we referred to the an-cient building techniques. To enhan-ce the environment and give a new identity to the spaces, we preferred the typical materials of our territory. The walls and vaults, made with na-tural plaster and tuff, are decorated with wall lights made of local stone, carefully shaped by local artisans. In one of the rooms the tuff is also used as ideal material for an original bed. The floors are covered with the typi-cal local stone. The protagonist of the bathroom, however, is the cocciope-sto. Used for coating and basins, this material, known since ancient Rome, is presented in different shades of red clay and is usually coupled with ce-ramics, glass and steel. Finally, the wood, carefully restored to give a new light to valuable antiques, such as ca-binets, beds, wardrobes, cupboards, writing desks and bureaus.

Ambienti semplici, ma ricercati, in cui il bianco richiama le atmosfere del Mediterraneo e fa da sfondo ad arredi d’epoca, abbinati a soluzioni moderne ed essenziali.Per recuperare, a regola d’arte, la splendida struttura risalente al 1800 che ospita, oggi, Giovì Relais, ci siamo rifatti alle tecniche di costruzione di un tempo. Per valorizzare gli ambien-ti e per conferire una nuova identità a queste dimore, abbiamo preferito i materiali tipici del nostroterritorio. Le pareti e le volte, realiz-zate con gli intonaci naturali e con il tufo, sono arricchite da applique in pietra locale, sapientemente model-lata dagli artigiani del luogo. In una delle camere il tufo diventa anche il materiale ideale per un originale gia-ciglio. I pavimenti sono rivestiti con la tipica pietra locale. Protagonista del bagno, invece, è il cocciopesto. Utiliz-zato per rivestimenti e lavabi, questo materiale, conosciuto sin dall’antica Roma, si presenta nelle diverse sfu-mature del rosso terracotta e ben si abbina a ceramica, vetro ed acciaio. Infine il legno, sapientementerestaurato, per ridare nuova luce a preziosi pezzi d’epoca, come armadi, letti, madie, scrivanie e scrittoi.

Polignano a Mare è uno scrigno di te-sori che si svelano anche a tavola. La cultura gastronomica, tipica di questo territorio, ha trovato nel 2011 un’ulte-riore conferma da parte di Slow Food che ha conferito il prestigioso presidio alla carota di Polignano, chiamata in dialetto “bastinaca”. Un ortaggio par-ticolare che si discosta dal classico colore arancio per spaziare in un’in-finità di sfumature dal giallo tenue ed intenso, fino ad arrivare al viola scuro. Questo perché i contadini del luogo utilizzano solo sementi custodite per generazioni e piantano le carote senza badare ai colori, proponendo in que-sto modo, al mercato un ortaggio che si differenzia dal prodotto di massa. È non solo per l’aspetto esteriore. È il sapore, infatti, a caratterizzare que-ste carote che crescono su un terreno sabbioso, dall’elevato grado di salini-tà e sono irrigate utilizzando l’acqua salmastra, che conferisce loro un sa-pore particolare, leggermente sapido. Le “bastinache” di Polignano a Mare, inoltre, si caratterizzano per le ottime proprietà antiossidanti, grazie all’ele-vato contenuto di fenoli e di carote-noidi. La nascita del presidio Slow Food ha il compito di valorizzare que-sto ortaggio e con esso il lavoro dei contadini di Polignano a Mare e la centenaria tradizione agricola locale che, altrimenti, andrebbe perduta.

Polignano a Mare is a treasure chest and its jewels can be appreciated also at the table. The gastronomic culture, typical of this area, has found further confirmation in 2011 by Slow Food, which has awarded the prestigious presidium to the carrot of Polignano, called “bastinaca” in dialect. A parti-cular vegetable that is not the classic orange colour but varies in an infinite number of shades from pale and in-tense yellow to dark purple. This is be-cause the local farmers only use seed kept for generations and plant carrots without regard to colour, thus offering to the market a vegetable which is dif-ferent from the mass product. And it’s not just a question of aspect. It is the taste, in fact, that characterizes the-se carrots that grow on a sandy soil, with a high degree of salinity and are irrigated using brackish water, which gives them a special flavour, slightly salty. The “bastinache” of Polignano a Mare are also characterized by ex-cellent antioxidant properties due to its high content of phenols and caro-tenoids. The creation of the Slow Food Presidium aims to emphasize this ve-getable andthe work of the peasants of Polignano a Mare and the centuries-old tradi-tion of local farming, which otherwise would be lost.
