DATE VARIETIES Desert Valley Date uses several varieties of dates for its extensive line of premium products. Medjool Medjool date paling were originally imported from Morocco. This variety has a thin, tender skin with a firm, meaty flesh that has a unique rich flavor. Medjool dates are the largest, sweetest and juiciest of the varieties, and are used exclusively for our retail consumer products. Deglet Noor Deglet Noor date palms were first brought to the United States from Algeria in the early 1900's- Representing 90% of California's date crop, this variety has a light brown, medium thick skin along, slender shape. Deglet Moor dates are semi-dry; high in fiber with a firm texture and a delicate less sweet flavor than Mediool dates, making them an excellent variety for ingredient/formulation applications as well as retail consumer products. Zahidi Deglet Nap Zaltidi dates were first introduced into the U.S. in 1902. They have a distinct oval shape with thick golden skins and a firm texture with a semi-dry, less sweet profile. Their high fiber and Invert sugar composition makes Zahidi dates an excellent variety for Ingredient/formulation applications, as well as for retail consumer produces. Zaish Aseel Aseel dates are semi-dry with a dark brown skin and oval shape. This variety has high Invert sugar and Is mainly used for ingredient/formulation applications. Asa DATES AND NUTRITION Dates are a low-calorie, nutrient rich food, and are excellent as a snack as well as a versitale ingredient in recipes and product formulations. High fiber content • Naturally fat-free • High enzyme content to facilitate nutrient assimilation Naturally sodium-free • High in potassium • Average California date has only 23 calories BAKING WITH DATE PRODUCTS Date products, particularly diced and paste, are excellent replacement ingredients in many baked product recipes. They can be used to reduce fat and increase fiber, adding nutritional value to baked goods. SERVICES AND CAPABILITIES Desert Valley Date is a fully integrated producer, with the capability to grow, process, pack and ship all of our products. We operate from a modern processing facility in the Coachella Valley in close prcodmity to our date palm groves. Equipped with state-of-the-art processing and packing technology, we produce both date products and a variety of other dried fruit products. All imported dates are cleaned. processed, and packaged at our facility to meet our high product standards.

Desert Valley Date produces branded products and private label products. We also provide co-processing and co-packing services for date and other dried fruit products,

FOOD SAFETY Desert Valley Date is committed to the highest standards of food safety and quality of all of our premium products. All of our products are USDA or FDA inspected onsite at our facility. We adhere to a fully integrated HACCP Program for food handling, production, packaging and storage. Our products routinely undergo microbiological testing and meet the highest standards of food safety.

CERTIFICATIONS Desert Valley Date currently produces some products that are USDA National Organic Program Certified organic USDA products and more certified organic products will be available in the future. DATE NUT BREAD A dark sweet bread filled with delicious dates and crunchy nuts. Perfect for breakfast, dessert or anytime snack.

Ingredients

1 1/2 cups diced dates 1 cups boiling water % cup light brown sugar 2 tablespoons butter or margarine, softened 1 egg 2 cups all-purpose flour 1 teaspoon baking soda % teaspoon salt 1 cup chopped pecans or walnuts

Preparation

- Preheat oven to 350° F.

- In small saucepan, boil water and stir in dates. Remove from heat and cool to lukewarm.

- In mixing bowl, cream brown sugar and butter until blended. Add egg and beat until smooth, then add date/water mixture, and beat until blended.

- In separate mixing bowl, combine flour, soda and salt. Stir wet ingredients into flour mixture, until blended. Do not overbeat; batter should be lumpy. Fold in nuts.

- Pour batter into greased standard loaf pan, or three mini-loaf pans.

- Bake until wooden pick inserted in center of bread comes out clean, about 60-75 minutes for standard loaf, 45-60 minutes for mini-loaves.

- Remove from oven and cool in pan for 15 minutes before removing from pan to cool on wire rack.

Yield: One standard loaf or three mini-loaves.

DATE CHIP COOKIES A delicious variation of the classic chocolate chip cookie with all the natural nutrition of dates.

Ingredients

1 lb 10 oz diced dates 2 lbs 12 oz cake flour % oz salt % oz baking soda 1 lb 4 oz brown sugar, light 1 lb 4 oz granulated sugar 1 lb 10 oz butter 7 whole eggs 1 oz vanilla 1 lb chocolate chips (optional)

Preparation

- Preheat oven to 375° F

- Soak dates in hot water for one minute, drain for 15-20 minutes.

- In 20 quart mixing bowl, cream butter and sugar until light and fluffy.

- In separate mixing bowl, blend flour, salt and baking soda. Set aside.

- Blend eggs and vanilla into butter and sugar mixture until totally incorporated.

- On slow mixer speed, blend dry ingredients into wet ingredients to form dough.

- Slowly mix in drained dates to dough and add chocolate chips (optional).

- Deposit approximately 34 oz. of cookie dough on parchment lined baking sheets.

- Bake 7 to 9 minutes and cool on wire rack.

Yield: 15-16 dozen cookies.
