Spinach DipThis tasty party treat is always a crowd pleaser and can be

served warm or cold, as desired. Note: You may need to

double the recipe if the loaf is large.

1 round or oblong bread loaf

1 package of CO-OP Frozen Chopped Spinach

(must be thawed, drained and squeezed dry)

1 cup CO-OP Sour Cream

1 cup CO-OP GOLD Whipped Salad Dressing, Regular or Lite

(or mayonnaise)

1/2 cup chopped green onion

1 tsp parsley flakes

1 tsp CO-OP Lemon Juice

1/2 tsp seasoning salt

green onion slices (for garnish)

paprika (to sprinkle)

Directions: 1. Place spinach, sour cream and salad dressing (or mayonnaise) in a medium bowl and stir to mix. Add green onion, parsley flakes, lemon juice and seasoning salt. Mix well. 2. Cut the top off of the loaf. Remove the bread from the inside, leaving a 1” thick shell. Save the inside of the loaf and cut into pieces for dipping. Fill the hollow loaf with the spinach mixture and garnish with green onion slices and a sprinkle of paprika. Replace the top of the loaf. Wrap the loaf in tin foil. 3. Bake at 300°F (149°C) for 2 hours.4. Remove the loaf from the oven, turn back the foil and place on a serving dish. Arrange bread pieces around the loaf. An additional baguette may be required for dipping.

Thick-crusted Garlic Prime Rib

RoastServes 8 to 10.

Prep: 10 minutes Cooking: 3 hours7 lb Prime Rib Premium Beef Oven Roast8 cloves garlic, cut into thin slivers2 tbsp Worchestershire sauce salt and pepper1/2 cup coarsely-chopped fresh parsley1/4 cup Dijon mustard2 tbsp Herbes de Provence or dried thyme2 tbsp vegetable oil Shallot Gravy (recipe follows)Directions:1. Cut shallow slits all over roast; insert garlic slivers into slits. Rub all over with Worcestershire sauce, salt and pepper. Combine parsley, mustard, herbes de Provence and oil in bowl. Set aside 2 tbsp on the mixture for Shallot Gravy, rubbing remainder all over roast.2. Place roast, bones down, on rack in shallow roasting pan. Insert oven-safe meat thermometer into centre of roast. Roast, uncovered, in 450°F (230°C) oven for 10 minutes. Reduce heat to 275°F (140°C); roast until thermometer reads 135°F (57°C) for medium-rare to medium, about 2 3/4 to 3 1/4 hours. 3. Remove from oven. Cover loosely with foil and let stand for 15 to 30 minutes before carving. Drain off all but 2 tbsp (30 mL) drippings from roasting pan and Shallot Gravy.

SHALLOT GRAVY:1. Place roasting pan over medium heat. Add 3 shallots (coarsely chopped) and reserved herb rub. 2. Cook, stirring, until shallots soften. Stir in 2 cups (500 mL) beef broth and 3 tbsp (45 mL) Worcestershire sauce. 3. Simmer, stirring up any browned bits from the bottom of the pan. 4. Combine 1 to 2 tbsp (15 to 30 mL) cornstarch with equal amounts cold water, making a smooth mixture. Gradually stir the mixture into the broth and bring to a boil. Stir the mixture until thickened, about 3 minutes. Strain.

Tom Spoletini, Mike Palumbo and Tony Spoletini, all first-

generation Italian-Canadians, are also all former members of the

Calgary Stampeders. Drawing on the experiences in their Italian
