Summer is in full swing and that means fresh fruits and vegetables! There's just nothing tastier than produce ripened in the sun and picked at the height of its flavor. You can't help but load your plate up with all the goodness! Our farmer's market offers a variety of locally grown produce for re-sale to tempt you. When planning your summer meals consider using meat as the secondary food of choice or go meatless and supplement with plant proteins. Salads are a refreshing choice this time of year, and our family favorite is Caprese Salad...it doesn't get any simpler than fresh tomato slices paired with fresh mozzarella cheese and topped with fresh basil leaves. Top it off with a bit of olive oil drizzled over all and you have a light satisfying dish. For a more filling meal, enjoy with chilled (cooked) quinoa, flavored with chopped fresh veggies of your choice. Try cucumber, spring onion and bell pepper and a splash of vine-gar/oil. A cup of cooked quinoa has 8 grams of protein and is gluten free. Fresh fruit is a perfect dessert...OK, fruit pies and cobblers are hard to beat, but it's SUMMER: who wants to turn on a oven?!? The summer 2016 edition of Church Health Reader offers options to sugar laden drinks using fruits, veggies and herbs. I share one here. WATERMELON BASIL TANGO A juicy watermelon isn’t just for a snack! This spicy but refreshing option is a perfect compliment to a hot day. Serves 8

Ingredients: 3 cups seedless Watermelon 1 bunch Fresh Basil, washed well and patted dry 1 Jalapeno, washed and seeded (optional) 3 Tablespoons Honey 1 quart Carbonated Water 1 Lime, juiced 8 lime wedges Ice

In a food processor or blender, puree the watermelon, jalapeno, lime juice, and honey. Fill a large pitcher with ice. Pull

the stems from the leaves of half of the basil. Reserve the other half for garnishing. Roll the leaves up and slice them

into thin ribbons and place them into the pitcher. Pour in the watermelon puree and the carbonated water and stir.

Pour into 8 well-iced glasses and garnish with lime wedges and basil sprig and enjoy. The month of July brings with it our country’s celebration of Independence Day. This year, July 4th marks the 240th anniversary of the signing of the Declaration of Independence and the birth of our nation. It is a moment when we share holiday celebrations – time with family, food, fun, and fireworks. But most importantly, this occasion calls for reflection on the gifts of freedom we enjoy simply by virtue of birth. The United States was founded on the principles of “life, liberty, and the pursuit of happiness,” as Thomas Jefferson stated in the Declaration. We are privileged to live in a country where individual freedoms are of the highest importance. It is our duty to use these freedoms in a responsible manner; to take seriously the responsibilities that come along with citizenship. As Christians – citizens of the king-dom of God – we are already well-equipped to understand the nature of those obligations. In other words, we know what it means to be free. While our country was founded on independence from a repressive regime (taxation without representation), our Christian freedom is a privilege that is much more personal. Through the gift of Christ, we are set free from the power of sin and death. We are no longer slaves to the power of evil in this world, but set free for the sake of sharing God’s kingdom. For us, this is where a “right” becomes a “responsibility.” The ultimate expression of freedom for a Christian is the freedom to serve. Free to serve our neighbors, free to share the good news of God’s love, free to care for those in need. It may sound like a paradox, but this is the truth of our existence: Christians actually give up certain freedoms for the sake of serving God and serving our neighbors. In an odd way, giving up freedoms for the sake of service is the ultimate expression of being free. As citizens of this great land, we believe that the very existence of our country – the United States of America – is the very best human expression of personal freedom. I am incredibly thankful for the fact that we live in a country that represents the very pinnacle of governance. While we don’t always live up to that ideal, we are neverthe-less bound to the principles of freedom, equality and justice. But let us never forget that our Christian beliefs take us one step further. We have received our own gift of freedom through Christ – freedom to serve. That truth exists before any idea of government. So when we gather with friends and family on Independence Day to celebrate the life of our nation, let us remember that our freedoms exist for an even higher purpose. Have a Happy Fourth of July! Fr. Blessings and Grace to you in the name of our Lord, Jesus Christ.

It has been my pleasure, my honor, and a true bless-ing to serve as your Acolyte Master for the past two (and some months) years. However, I will be handing over the reins, in September, to Tiffany Martin. As it is stated in our new Acolyte Customary, Tiffany will lead you in this important ministry for the next three years, through September, 2019. She will serve as a positive influence in this ministry to Epiphany! I am thankful that she answered, after much prayer and thoughtfulness, this call to ministry.

In August (well before school starts), on a date to be determined, we will hold an Acolyte meeting for a training and refresher course in all of the various du-ties performed by the acolytes. Acolytes serve at the altar in the following capacities. Crucifer Torch Bearers Server Chalice Bearers Gospel Book Clergy Cross

Several of you have expressed a desire to participate in these duties. All are very welcomed, at this meeting, to train for whatever service you would like to perform as an acolyte. Just let Tiffany and I know well ahead of time.

On that note, we will especially needs adults willing to train as Torch Bearers for regular Sunday services so please, give this some thought between now and Au-gust.

Once again, it has been my honor to serve you and our home community, Epiphany. Thank you all for your patience, your support, your encouragement, your willingness, your guidance, your forgiveness... But most especially your service. It truly takes a vil-lage to participate in a community of faith as wonder-ful as Epiphany. And so many have done so without fail. Thank you all for helping me to serve our God, and to grow in my faith.

We require someone each Sunday to run the sound system during both church services. We have a "Sound Team" that rotates just like the ushers. If you would like to volunteer, contact Dave Burks [email protected].

Greeters make sure our parishioners and guests are welcomed to Epiphany. They also carry the oblations up to the altar and help the ushers pass the offertory plates.

We need lay readers to read the lessons and intercessory prayers for both Sunday services, 8:00 a.m. and 10:30 a.m.

A lector is a lay person who is appointed to read the lessons that precede the gospel, to lead the reading of the psalm and to lead the Prayers of the People. The role of lector is among the oldest of the liturgical lay ministries.

USHERS AND SUNDAY COUNTING MINISTRY

Epiphany needs more ushers for the 10:30 service. You will not have to count the offerings unless you want to. If you have never served as an usher, you will be trained as to what to do during the service. If you desire to also become part of the counting team on Sunday, you will receive training for that ministry as well. Thank you to the many volunteers who helped to make VBS a success for the children who attended. Thank you for donating supplies and loaning items for props. Thank you for coordinating crafts, games and food. Thank you for leading groups of children to the various activities each day of VBS. Thank you for helping to prepare decorations and helping to trans-form Woodall Commons, Sanderson Hall, the chil-dren’s chapel and the library into ancient Egypt. And thank you for helping to take it all down, cleaning up and returning the rooms to their regular state. VBS would not be possible with out YOU! God’s Peace, Shelly Hardin

Epiphany Work Day July 30th 8:00am – 12:00pm

It doesn’t seem quite fair to call it a work day, because it really can be a fun day. A chance to explore a part of the building you may have not been in before, meet a new friend, prepare a classroom for young children or sanitize toys in the nursery – all with your church family. Whatever you call it, the children and youth ministries need your help with a variety of jobs in the classrooms, nursery, youth loft and playground: Cleaning and “freshening up” the upstairs classrooms, bathrooms, hallway Cleaning and “freshening up” and sanitizing toys in the nursery Pressure wash the playground equipment Remove cobwebs, and bugs from overhead lighting Dust Organize supplies We need you! Young and young at heart! We will even have some jobs kids can help with. Work will begin at 8am and go until 12:00pm. You don’t need to sign up, just show up! Back to school! But wait it is July!

We wanted to let you know in July that we are starting our fall programming in August! Mark your calendars for August 7th at 10:30 a.m. for the Blessing of the Backpacks. That’s code for blessing our children, teachers and parents, in preparation for students returning to school that week. Please bring your backpack and join us as we ask God for a safe and successful school year. On August 14th, children and youth Sunday school resumes at 9:30 a.m. and Senior Episcopal Youth Community (Sr. EYC), for youth in grades 8-12, resumes at 5:00pm. On August 17th, Wednesday evening programing resumes with Eucharist, dinner and programs. Stay tuned for details in the August newsletter.
