Our Mediterranean Cuisine & Homemade Products

The traditional Mediterranean diet was defined with the following characteristics:

• Plenty of fiber (fruit, vegetables, bread / cereal, potatoes, legumes, nuts).• Olive oil as the main source of fat, containing valuable fatty acids.• Dairy products (mostly cheese and yogurt) daily in small to moderate amounts.• Fish and poultry in low to moderate amounts.• Red meat twice per month.• Minimal or no processed products.

Within our hotel gardens we cultivate rosemary, mint, lemongrass, coriander, mallow, sage and laurel in order to enrich our dishes with the taste of fresh, pure herbs. As honored representatives of the GREEK BREAKFAST, a certification by the Hellenic Hotel Foundation, every day we present to you the traditional Greek products that define greek breakfast, in all our hotels. For all our menus we choose to cook with local & seasonal products, so that the result is fresh, healthy & delicious dishes.

ILIASThe first grandson of the P.A.P Corp. family was born in 1996 and so was the wine ILIAS that took the name after the youngster. ILIAS is made from the most refined grape vines of HALKIDIKI and carries in its flavor and cent all the qualities and values of a limited production house wine. It is a unique memento of your visit in Macedonia.

KONSTANTINATI ESODIAThe birth of KONSTANTINA in 1999 adds another lovely member in P.A.P Corp. family and simultaneously a home made product named after her. The yield of Konstantina, the virgin olive oil from the family’s olive trees gives the secret touch in the culinary creations of the P.A.P Corp. Executive Chef.

EKATERINI THE MELIRRITOSYear 2001.. the first year of the new millennium brings another family member to life. The newborn girl Katerina gives her name to a house product, sweet and pure, as herself. The nutricious and fully flavored honey "AIKATERINI the MELIRRITOS", born in the pinewoods of Halkidiki, travels around the world spreading sweet taste.

IOANNA THE SWEETESTIoanna, born in 2004 is gifted with sweatness, so the most appropriate home made product that could be named after was a fruit in syrup. A traditional all year round recipe made from seasonal fresh fruit of the family’s gardens.

BARBARA’S ELIXIRBarbara, born in 2006 is the elixir of our souls, just like the effect of the traditional home made liqueur. This liqueur is made by cornel fruits, lemon or pomegranate from our gardens in Chalkidiki. A recipe made for generations by our family, offered since 2006 as a dowry to our newborn Barbara.

Corp. hotels, Alexander the Great Beach Hotel in Kriopigi, Halkidiki & Xenia hotel in Ouranoupolis, Halkidiki, received the ACCESSIBILITYPASS® certification, the first hotel for its accessibility for people with disabilities in motion, vision and cognition, and the second for its accessibility for people with disabilities in vision and cognition.ACCESSIBILITYPASS® is an integrated global certification system for hotels, which classifies the level of accessibility, based on their infrastructure, offered services and their human resources skills.It aims to offer useful & credible information regarding the accessibility of certified hotels, so that people with disabilities can easily choose a hotel suited to their own, personal needs.
