The Tigers were out numbered and short of their ros- ter players when the game tipped-off. The Bulldogs controlled the opening tip, but the Tigers grabbed the early lead and never relinquished it to the favored Bulldogs. Trenton’s Tyler Perry set the stage for the Tigers’ as the junior, shooting guard hit 18 points and led the host to their first boys District basketball title since 2000. Meloni Piechocki The unfinished Best Western Grand in Fanning Springs. Construction on Fanning Springs Hotel stopped, construction company files suit Over the last several months, area citizens have been questioning why work on the new Fanning Springs hotel has stopped. Apparently several complaints have been filed by the contractor and the development group. Nature Coast Development Group, LLC held a groundbreaking for the hotel in November 2019. At that time the hotel was to be a Best Western Premier facility that was expected to provide 40 jobs when it opened in the summer of 2020. At the groundbreaking ceremony, it was reported that the 63,000 square foot, five story facility would benefit by nearly $1.5 million in grants and a loan from Freedom Bank as well as several big investors. As of Monday, construction on the hotel has stopped and the hotel is not completed. According to Law360, which is a news and analysis website reporting on legal developments including litigation filings, the general contractor, WB Services claims they were shorted nearly $925,000. WB Services Inc., aka WB Construction Services Inc. of Ohio, stated last week in the complaint that one of the property owners stopped payment on its service and locked them out of the property. The contractor is seeking a judicial sale of the property, return of its equipment, damages and attorney fees among other relief. SB Services stated in the complaint that the bank involved with the $9.8 million construction loan allegedly found Nature Coast Development Group LLC in default last May. Fanning Springs Mayor Trip Lancaster said that he looks forward to the day when the hotel is open. Meanwhile, Fanning Springs has a lot to offer those who come to visit. Tigers take District 6 Basketball Crown over Bell At the beginning of the 2nd period, the Tigers held a 15-9 edge. As both teams were aggressive in their play, Trenton increased the lead to 26-17 at halftime. The second half gave the Gilchrist County fans a lot to cheer for their hometown teams. With 4:24 remaining in the third period, the Ti- gers were holding onto a 32-24 edge. As the final period began, the Tigers increased the lead to 42-33. These two teams had previously battled on two different occasions during the regular season and the Bulldogs had won both of these games by sev- eral points. Bell went into the final period trying to pressure the Tigers into turnovers. With 3:13 left in this game, the Tigers increased their lead to 47-33. It was at this point that this contest became even more physical and both teams went to the free throw line to shoot a Technical Foul. The Bulldogs continued to be aggressive to force a steal and make the Tigers commit a turnover. The Tigers took their chances at the free throw line as they increased their lead to 48-35 with 2:00 remaining in this game. The Tigers held on to take a 19-point lead and the District Crown. This was a great achievement for Coach Cedric Booth and his young Trenton Tigers. The win gives the Tigers the opportunity to host the re- gional semi final game on Thursday as Trenton welcomes the Hamilton County Trojans, the runner-up in Dis- trict 5 last Friday night. This game will tip-off at 7 p.m. The Bulldogs will travel to Madison Friday night to face the Madison County Cowboys, which defeated Hamilton County 59- 35. Letter to the EditorTo the Editor:

Kudos and many thanks to the Gilchrist Health Department for its excellent work in scheduling and distributing Covid vaccinations. My husband and I received our second shot last week and, as with the first one, it went quite smoothly. Staff and (added) Nat’l Guard were welcoming and assuring to the public. In a stress-ful time, it’s great to experience our local government functioning at such a high level. I wish everyone in our state were able to so easily reach their vaccination target.

Thanks to all for their often unsung efforts!

Additional Homestead ExemptionHow does the "double homestead" work? The existing homestead exemption typically reduces the assessed value of a property used as a primary residence by a Florida resident by $25,000. This would provide an additional homestead exemption up to $25,000, on the assessed value between $50,000 and $75,000.

For example, if your assessment is $65,000, the first $25,000 and that portion above $50,000 ($15,000) would be exempt, making your taxable value $25,000 (65,000-25,000-15,000). Prior to new law, the taxable value would have been $40,000 (65,000-25,000).

This additional homestead exemption does NOT reduce the assessed value upon which school taxes are based. Also, it does not reduce or otherwise affect the "Save Our Homes" deduction or any other exemp-tions. It is not necessary to file for this additional exemption if you have the Homestead Exemption already.

The Log Cabin Quilters met Thursday, February 11th at the Levy County Quilt Museum. One of the members was back from an extended vacation and her pictures were beautiful.

The group was busy getting the last two quilts ready to be hung from the ceiling next week, straightening the storage room and checking out the new fabric. Thanks to all the ladies for helping tidy up after working on hanging the quilts on the ceiling.

The ceiling repair is coming along and, of course, with little extra repairs that will be needed. Once we get the last two quilts hanging from the ceiling, work should progress a little faster. They had to go into the attic to make sure all the beams were ok

Our pumpkin wall or door hanging was a UFO (unfinished object/project). Thanks to our friends in the Williston RV Crossing Park for completing this.

This interesting small quilt could be a wall hanging or a table topper. Yes, another snowbird friend completed this UFO.

and not going to be a problem in the future. Thanks Lancaster for all your help. They seem to accept all the changes that we manage to create.

We did get some bad news this week, Maria De Leon passed away. She was often at the Museum helping Winnelle Horne. We enjoyed getting to know her and our thoughts and

prayers are with the family. Some of our visitors were from

two of the local RV parks, Southern Leisure and Strawberry Fields. It’s just a long bike ride down the dirt road next to Strawberry Fields. The ride has lots of old oak trees and is a great country road if the dust doesn’t bother you.

Springhouse Quilter’s News

Springhouse Quilter’s held their monthly business meeting for the Day and Night groups on February 9th with 25 members attending the two different meetings. There was the regular show and tell items, business, sharing, welcoming new members, and enjoying being together again for a short time. President Melva Leynes was absent having a medical procedure so Vice President Kathy Beaulieu chaired the meeting.

The groups celebrated Valentine’s by having a Valentine swap. Each member that brought a handmade Valentine item got the chance to swap their item for another member’s item. There were Valentine decorated tea towels, cup coasters, cup mug pads, handy carry all bags, small gadget bags and other items. The members truly enjoyed making the items and swapping their creation with a quilting friend. And of course, each Valentine had an addition of a chocolate goodie.

Members are making plans to participate in the March 20th Quilting Festival. They are working to get the gift shop fully stocked and finishing up several unfinished quilts that will be for sale. Anyone wanting a nice quilt should plan to visit the Springhouse vendor site on the day of the festival.

For information on joining Springhouse or to get information on displaying a quilt at the Quilt Festival call (352)493-5134.

Gravy!I’m not sure why gravy has fallen

out of favor. I think it happened back in the day when we all thought living a “0” fat life style, was the thing to do. We sure were wrong. This no gravy diet started about the 1980s it seems.

When I checked for gravy recipes in one of my favorite recipe books Seasonal Florida, A Taste of Life in North Florida, I found some 14 recipes for gravy. Jo Manning, the author, had included all her best gravy recipes, everything from Ham and Red-Eye Gravy and Sawmill Gravy to Marsh Hens with Gravy. Oh, I almost forgot my all time favorite Tomato Gravy, served over rice is as Southern as can be.

Anyway, I have been thinking that gravy in moderation is not really all that bad for you. Surly, no more dangerous to your health than eating a candy bar. My grandmother, Shannie made gravy regularly, I guess no one told her it was bad for her. She passed away at 93, no telling how long she would have lived if she could have just left that gravy alone.

The cooks in our family would make gravy by removing all the oil from a frying pan where some type of meat had been floured and fried. The trick was to pour the oil away slowly leaving all the fried crumbles in the bottom of the pan with only

about 3 tablespoons of oil. This is also known as the pan drippings. To this add 3 tablespoons of flour and stir it around until the flour becomes brown over medium low heat. Don’t scorch the gravy by cooking it over high heat. After the flour is browned add about 2 cups of water with some salt and pepper. Stir until the mixture becomes thick. If you want onion gravy just add a hand full of chopped onions to the oil and flour mixture while you are browning the flour. It was years before I learned that the flavor of gravy was enhanced by adding beef or chicken broth instead of water.

Recently, I tested a gravy recipe that did not include pan drippings. This was nice because I don’t always want to fry meat in order to have pan drippings. This gravy recipe starts with butter not drippings. I checked the calories and for a 1/3 cup serving it’s just over 100 calories. Most of the time 1/3 cup is a very ample serving. I don’t put that much gravy on anything. So, considering all this information in my humble opinion a little gravy, now and then, is not such a bad thing after all. In fact, gravy is a mighty tasty addition to any meal.

Easy Pan Gravy1/4 cup salted butter1/4 cup all-purpose flour2 cups chicken or beef broth1/2 teaspoon salt or seasoning salt of

choice1/2 teaspoon black pepper

Melt butter in cast iron frying pan over medium heat. Add flour and whisk until a smooth paste forms. Whisk or stir until the flour turns brown. Slowly add the chicken broth while whisking. Then add salt and pepper and whisk or stir often until the gravy thickens about 5 to 8 minutes.

With this gravy I like to serve this chicken recipe which is also pretty easy to make.

Crispy Pan Chicken4 boneless, skinless chicken thighs or chicken breast1 1/2 teaspoon salt1/2 teaspoon Morton Season All (Seasoning salt)1 teaspoon black pepper2 large eggs1/2 cup whole milk2 1/2 cups panko bread crumbs1 teaspoon Italian seasoning1/4 cup salted butter1/4 cup olive oil

Preheat oven to 350 degrees. Place the chicken thighs between two sheets of plastic wrap and beat with meat mallet until 3/4 inch thick. Cut each chicken thigh in half. Sprinkle each piece of chicken with salt and pepper.

Whisk together eggs and milk in a dish, set aside. Mix the Panko with 1/2 teaspoon of salt, Season All seasoning salt, 1/2 teaspoon black pepper in a flat dish. Dip one piece of chicken at a time in the egg milk mixture shaking off the extra egg milk mixture. Then roll and press chicken in the panko mixture.

Melt about half the butter in a frying pan, then add about half the oil, over medium heat brown four of the chicken pieces on each side. Add remainder of butter and oil to pan and brown the final 4 pieces.

Place chicken in a sheet pan on a wire rack and bake for about 10 minutes or until chicken is cooked through.

Creative clutter is more blessed than tidy idelness.

Wayne ArringtonWayne Arrington passed away on

February 3rd after a long illness. He is preceded in death by his

parents; his sister, Betty Watson; his brother, David Arrington; and his son, John Arrington. He is survived by his wife of forty-two years, Rita; his daughter, Lauren and her husband Ali and his granddaughters, Nura and Sara and his sister, Wilma Jean Asbell.

Wayne was born to G.W. and Lois Arrington of Trenton, FL on July 16, 1944. He was dedicated to his family. After G.W.’s early death, he helped take care of his brother David. Wayne waited to marry until David was settled with Cindy. He enjoyed showering his siblings, nieces, and nephews with gifts, bad jokes, and fishing trips on the Suwannee River. He married Rita in 1979 and was a devoted father to her young son John, teaching him to hunt, fish, and farm. He and Rita loved to go camping with their children, and later in life to go travelling with friends or to see Lauren and Ali in England and Ireland. Wayne took the greatest pleasure in being home, in having a few head of cows, raising a few chickens and planting a few hills of corn, peas or turnip greens. He loved conversations with his lifelong friends, Joe Corbin, Dan Faircloth, Austin Sims, and James Beauchamp.

Wayne knew the value of a simple life, of love for God and family. A man of quiet, solid principles, he will be remembered for all that he taught us.

Arrangements are under the care of the Knauff Funeral Home, Chiefland.

Norman B. Hamilton, Jr.

Loving husband, father, grand, and great grandfather, Norman Benjamin Hamilton, Jr., age 74, passed into the arms of Jesus, and arrived to take his place in Heaven, on Friday, February 12, 2021.

Norman, born July 23, 1946, was a strong man, with a kind heart who never met a stranger, and would always make you laugh.

He is survived by his wife of 55 years, Paula Barton Hamilton; their four children, Norman Hamilton III, Melissa Price, Susan Moore, and Brandon Hamilton. Together, Norman and Paula shared their love with ten grandchildren, four great grandchildren, and a slew of nieces and nephews. As a grandfather, he was respected and truly admired. He was the best “Pop” anyone could ask for. A true friend, and he never went without saying, “I love you.”.

Norman was born and raised in Ft. Pierce, FL. The oldest son of nine children. He did well in school, sports, ran off to live barefoot with Indians for a short time, and always had a fast car to race. Norman was known as “Buddy”, “Big Norman”, and of course his years as the infamous, “Stormin’ Norman”.

In the mid 80’s, Norman and Paula moved their children to North FL, where Norman eventually retired, and then began his rounds around Bell, to check the mail, and say hello to pretty much everyone.

His strength as the patriarch of his family was infinite. He was a loyal friend. A man who would help anyone he could, and he always had a smile on his face. He was wise, but humble, stubborn, but never spiteful, tough skinned, but kind and loving, and never judgmental.

Norman is preceded in death by his father, Norman B. Hamilton, Sr.; his mother, Louise Hicks Hamilton; and two younger siblings, John Owen Hamilton, and Judith Lynn

Hamilton. Norman’s request was to be

cremated, and to be placed with his wife, Paula when she is laid to rest. In lieu of flowers, Norman would hope that you plan a dinner with your family. Go out and smile. Ask someone how they’re doing, how are their kids, and “listen” to their reply.

A gathering and dinner with family and friends will be held on Sunday, February 21st, at The Hidden Plantation, off St Rd 47, from 3:30 to 6:30. All who knew Norman is welcomed. Any questions, please contact Susan at 352-318-9695, or Melissa at 352-221-1095.

GILCHRIST COUNTY FAIR BOOSTERSDear Gilchrist County Fair Exhibitor & Parents:

In the past, Gilchrist County Fair Boosters have tried extremely hard to cover each and every child down at the Suwannee River Fair on the day of the sale. Due to the current economic conditions, we are asking for your help and support to ensure no child is left standing in the sale ring hearing RESALE. We are diligently soliciting any and all funds available through our local businesses and generous residents of Gilchrist County.

Please see the following breakdown for this year’s show:

Gilchrist Exhibitors Feeders: 18 Fat Steers: 8 Swine: 65

Wethers: 23

As you can see, there is a major obligation to Gilchrist County to provide Buyers on behalf of our children. Over the past several years, two or three individuals have gone around door to door, doing mail-outs and making phone calls on behalf of our children. Their dedication to this community and our children is much appreciated. It has always been the philosophy of the Boosters to try to support ANY and ALL children in need from Gilchrist County.

This year, in order to ensure the success of the fair boosters, we need your help. We are currently out raising money and the fair is quickly approaching. For Gilchrist County Fair Boosters to be able to move forward and continue to aid each child in need, we feel the need to employ your help.

This year, again, due to the current state of the economy, we are requiring exhibitors and/or family members to assist the Booster Club in raising money. For you (or your child) to have the Booster Club consider bidding on your animal, you must raise at least the minimum amount as follows:

Fat Steer: $ 100.00 Feeder Steer: $ 75.00 Swine: $ 50.00

Wethers: $ 50.00

Please understand the Booster Club is in no way trying to exclude anyone from receiving assistance, but your help is needed to enable us to continue to purchase animals for Gilchrist County exhibitors. If you already have buyers lined up for your animal, you do not have to participate in the fund-raising efforts. Finding your own Buyers is highly encouraged as the Booster Club is not able to purchase everyone’s animal. All money must be turned in by March 15, 2021.

Please contact one of the boosters below with questions, comments or to turn in your collec-tion. Thank you for your time and attention. We look forward to hearing from you. Most sincerely,

The Gilchrist County Soil and Water Conservation District hosted their annual youth speech contest on Tuesday, February 9, 2021. Students from Bell High School FFA program placed in the top three; in first place was Carleigh Newsom, second place was Bertha Sutterfield, and third place was Kiara Cobb. The speech contest was open to all students grades 6-12. Each contestant prepared a five to seven minute prepared speech on a given topic. This year’s topic was “healthy forests, healthy communities.”

In first place, Carleigh Newsom spoke on the diverse benefits of the forests such as the economy, soil conservation, and water quality. Newsom made a plea that such

She stated, “I am always impressed with how much I learned after participating in this contest.” This was her second time competing in the youth speech contest. Newsom will advance to an area competition in April. She won a $150 prize for her victory.

In second place, Bertha Sutterfield was competing in this contest for her fourth time since she was in middle school. As a junior, Sutterfield said, “I cannot wait to come back next year to compete my senior year!” In her speech about healthy forests, she spoke on the importance of sustainable practices to safeguard the future of our healthy community.

She won a $125 prize for her second place finish.

In third place, Kiara Cobb competed for the very first time. She spoke about how forests are “fundamental for the basic functions of our environment.” She won a $100 prize.

The agriculture teacher and FFA advisor at Bell High School, Brett Wasden, expressed his excitement for his students’ success in the youth speaking contest. He, also expressed gratitude to the Gilchrist County Soil and Water Conservation District for hosting the event.

Gilchrist Farm Bureau celebratesFood Check-Out Week

The third week of February is Food Check-Out Week, a time to celebrate the abundance of fresh and nutritious food available to consumers at affordable prices in the United States.

The average American household spends less the 19 percent of their disposable income on food. This is the lowest in any country. Likewise, the USDA reports that the “farmers share” of the money spent on food is 10 cents of every dollar.

According to the U.S. Department of Agriculture, the average family of four will earn enough money to pay for their entire food supply for one year after seven weeks of working. By comparison, it takes 100 days of work to earn enough income to pay your taxes.

Farm Bureau Members statewide use this week to highlight Florida agriculture and the healthy and nutritious food that farmers and ranchers provide us throughout the year.

The Gilchrist County Farm Bureau celebrated Food-Check out Week early by giving away Florida grown strawberries and gift certificates for groceries at both Scaff’s/SunStop in Bell and Hitchcock’s in Trenton on Saturday, February 13th.

“We are proud to highlight Florida Agriculture and the people who make it successful,” said Gilchrist Farm Bureau Board President Gray Smith of Bell.
