What a great time we had at the Isle
Of Ely Produce/Chippy Chat Open
day. The day was put on as an educational
and fun one for all involved and could
not have gone ahead without the help
of our partners for the day. Union Norge,
Kerry Foodservice, Middleton Foods, KFE,
Drywite and Divaa Potatoes.
Our main feature this month is our last in
2015 on Frying Ranges. Again we have
many top shops telling us why they use
their particular brand in their shops.
What a great promotion we have on our
front page from Nortech. Their Superior
brand features a brilliant ‘Win a Car’
promotion starting now. One lucky shop
who purchases Superior in the next few
weeks could end up driving away a brand
new car.
We look over to Ireland for this month’s
Chip shop abroad who having increased
their menu size (but not footprint) have
customers queueing around their shop.
Well done to the Top 20 shops in this
year’s National Fish and Chip Awards.
As usual contact me at Austen@

involved
Ps The Chippy Chat Chip Baron’s Ball
is selling well and we have “(like) The

Donda Michaelas, now 40, has no regrets about turning his back on the celebrity lifestyle which his partner on the show,
Jenni Falconer, chose. He is settled into village life, surrounded by
his family.Speaking as celebrities continue to pay
tribute to Cilla Black, who died of a stroke in her Spanish villa earlier last month, Mr Michaelas said: “Cilla was amazing. You don’t meet her until the show and I was nervous, but she relaxed you quite easily.
“My parents used to watch Blind Date and Surprise Surprise so I grew up with her. Of course I was sad when I heard she’d died. My wife came and told me.
“Cilla told us our episode would be big. She said the cheer when Jenni picked me was the
loudest she’d heard in 13 years of doing the show. But it was only after our first show was screened that we realised how big it was going to get.”
National newspapers suddenly wanted to interview the pair and Mr Michaelas was offered work with 90s fitness instructor Mr Motivator, famed for his appearances on GMTV, & Channel 4 show The Word.
But how was his date with Miss Falconer?“Jenni was a lovely girl. We spent four days
in Brittany. Blind Date looked after us from beginning to end. The hotel was top-notch and we went horse riding, sailing, swimming and played tennis. On the second show, neither of us put each other down. Twenty years on we’re still in contact.”
Marino’s Fish Bar in Ashford Road was opened 25 years ago by Mr Michaelas’s parents Peter and Androniki but now it’s him and wife Samantha selling the fish and chips.
He added: “Twenty years on I look back and I know I made the right choice.”
Surprise! Surprise!Twenty years after a chip shop owner appeared on
Blind Date and was picked by a future TV presenter,
he is happily married and still frying fish at the same
Bearsted business.

This year, they are celebrating 30 years of making high quality, artisan sauces and for the first time ever,
using their wealth of experience blending and making sauces, have developed their own Goldfish Brand Tomato Ketchup in a handy, small bottle specifically for fish and chip shops and restaurants. It’s termed the “Dinky bottle with a little bit extra”.
Goldfish Brand Tomato Ketchup has been blended especially for the fish and chip market with 70% tomatoes and the perfect balance of sweet and tangy to bring alive the humble Great British Chip.
Available in a small (12 x 218g) glass bottle it is the perfect size to pop in your pocket or keep in the car or caravan for when-ever you fancy a warming fish and chip supper.
The perfect product for up-selling to help increase your customers purchases, therefore more profit for your business. A premium product with a great value price.
Millers Fish & Chip Shop, London Road, Ipswich, stock this great new sauce.
A warm welcome awaited from owner Cengiz where the new Goldfish Brand Chip Shop Champion Tomato Ketchup is available for his customers to buy to take away. Cengiz used to stock a
proprietary brand of ketchup but now stocks Goldfish. “It is the best tomato ketchup that we can buy for the money. It is very reasonable and we can sell to our customers at £1.00 per bottle and still make a profit. Our customers like it and we have no complaints. Other products on the market are too big and too expensive to sell as an add on. We then become like a supermarket. “
He also serves his fantastic chips with lashings of Goldfish brand Chinese curry sauce. Cengiz said “This is the best curry sauce on the market and we always get very high feedback from our customers.”
Millers also stocks a range of our Mr Lee’s pancake rolls which are available in four flavours, Chinese, Curry and Vegetable 150g and Emperor 175g. These have been developed for the fast food market so that they can be cooked and sit in a hot cupboard without cracking.
Please contact us on 01473 827304 or email [email protected] for details of a local stockist of any of the above products. Visit - www. keejays.com
Keejay’s experience in the field of developing and producing artisan sauces spans 30 years. They offer bespoke development for specialist applications and their main range of products cover the core flavours of Chinese cooking.
They are very much a national sauce manufacturer based in East Anglia. In particular they would like to focus on supporting businesses within the fast food industry.
Goldfish Brand -The Chip Shop Champion Tomato KetchupKeejays, a family business that is run and owned
by the Lee Family, based in Hadleigh, Suffolk has been making and supplying Goldfish Brand Curry Sauce Concentrate and Mr Lee’s Pancake
Rolls into the fish and chip trade since 1987.

Second time around at Towngate Fisheries
I first bought Towngate Fisheries in the village (now a suburb between Leeds and Bradford) of Idle in 1997. It is a
small takeaway situated in a splendid 19th century building. It was a reasonably busy shop, but only open very short hours (18 hours a week frying time). I remember the people I was buying it from telling me I’d struggle to cope (they didn’t know I’d sold a shop with 5 times the turnover a few months before). I ran the shop until 2002 when other demands on my time made me sell it. But in 2005 I bought it back again (for less than half the price but with considerably less than half the trade remaining). It was in very poor condition and the frying range was past repairing, so I bit the bullet and bought a new Dutch high efficiency range and had the kitchen area refurbished. Trade grew rapidly and despite the building looking big from the outside we were always very short of space. In 2010 I had work done to refurbish the customer area to
help us speed up service, but with still growing trade the fact the shop consisted of 2 rooms connected by a very narrow passageway meant when busy it was very hard work.
I had previously considered opening up the shop into one large room but we simply wouldn’t have had the storage and preparation space we needed. However in 2013 I switched from preparing my own chips to using ready chips from PG Chips in Bury. This meant my former potato prep room (an old coal shed at the back of the shop) was freed up for extra storage space including space for the large chest freezer. After 2 years of using ready chips and being very happy with the product and confident I would never change back I decided it was time to put my plan into action and make the shop open plan.
My 3 pan range was still in good condition, but I really needed extra frying capacity at peak times. I considered refurbishing around the existing range,

but thought it best to change everything at once. Having visited the Florigo factory near Amsterdam last year (accompanying the Young Friers group – I’m an honorary member!) I had been very impressed with their build quality and advances in design in the last 10 years, so I ordered a new 4 pan range that with a lot of thought into the design fitted into our very limited space. I commissioned Elite shop-fitters from Leeds to design and undertake the refurbishment, removing the middle wall to make one large space. I wanted to keep our classic black and white design, but also wanted it to look different, so I chose white and black “brick” tiles. The work was all completed and we re-opened in under 3 weeks despite a few minor hiccups and me requesting extra work to be done such as replacing our windows and front door (we are in a conservation area so these all had to be made in wood) with just a few finishing touches (such as the black granite surfaces) to be completed in the days after we reopened.
We opened on a Friday and were extremely busy. It was immediately clear that the shop would be so much easier to work in with everything easily to hard, despite the fact that the first few days we were getting used to the new controls for the range and everything being in a different place.
Since we reopened trade has been busier than ever with many customers commenting how much bigger the shop
looks. It is certainly much easier to work in when busy and at our busiest times although we have still had a queue out of the door, we are serving faster and the limit on speed is how fast our servers can serve rather than how fast we can produce the food. We had many customers asking why we needed to refurbish when the shop was already smart, modern and in a good state of repair, but they can see for themselves the results and I’m sure it was an investment well worth making.

There’s a clear reason Norwegian cod and haddock tastes so good. And it’s not just our water.Norway’s pristine waters give our cod and haddock their distinctively chunky, succulent white fl esh.
But just as importantly, our vessels freeze their catch at sea to lock in the Arctic freshness. Wherever you
see the Norge logo in fi sh & chip shops, you can rest assured that the cod or haddock you order is the
real thing, of exceptional quality and sustainably caught from our abundant stocks. Enjoy!

“We spent a lot of time researching ranges,” says Indy. “We searched the
internet, visited a number of shops and we were very impressed with the Hewigo High Efficiency range especially at Hewigo customer Bal Singh, who operates shops and restaurants in the Market Drayton area.”
Indy adds, “Hewigo could not have been more helpful with the advice they gave us. We have found the range absolutely brilliant and a joy to use.” The range is a 3-pan Advantage High Efficiency with eye-level computerised control, twin-pipe
built-in filtration and display cabinets with Hewigo’s unique high light/low heat jacketed heat lamps. The range is finished with curved edges to cabinet and counter and candescent curved stainless steel panels with programmable LED lighting.
“Following the opening earlier this year things could not have gone better. Hewigo helped us to make our long-held ideas a reality,” says Indy.
Phillip Purkiss, Managing Director of Hewigo UK comments, “It’s always good to see a new operator come into the fish and chip business. It’s even more satisfying when they come with an open mind, do the research and then choose Hewigo.”For further information contact Hewigo on 0121 544 9120 or visit www.hewigo.com
Hewigo golden standards winning new customers!Persistence paid off for new Hewigo customer, Indy Garcha at The Grange Fish & Chips, Biddulph.
1 High Efficiency.Hewigo is very clear. Our ranges operate at 93% efficiency - the highest level achievable - and are certified by the gold standard - Gastec. When you talk to a range maker about high efficiency ask to see the certificate. We have made more high efficiency ranges in the UK than all the others combined and have the experience and technical knowhow to make it work at its best for you.
2 CE Marking and SurveillanceAll Hewigo ranges are CE marked. In fact all ranges from reputable manufacturers should be. We first achieved CE accreditation in 1997. We undergo an annual surveillance too. This ensures that our appliances are being manufactured in line with the original specification or that modifications in design conform and that all testing equipment e.g. gas analyser is correctly calibrated.
Our methodology for testing is also observed and following a satisfactory conclusion the CE surveillance certificate is issued, in our case by Kiwa, part of Gastec.
Got the Certificate? To ensure that your new range meets the highest possible standards, the only sure way is to check the certification for claims made by the manufacturer.

Our passion for thinking outside the usual constraints, while keeping a close eye on the trade usually means you will feel you should have
had a Scotrange range years ago. There are standards to be
acknowledged, surpassed and improved upon. We at Scotrange meet these three
things head on.
Basically, if you look at our web-site you will get the distinct impression that we at Scotrange do everything
from the heart. Our range was born from a wealth of experience and knowledge accumulated over the years and by listening to our customer’s requirements -resulting in our ‘Bespoke’ Superior Build Range.; a ‘Work Horse’ solid and reliable.
However, just as important is an efficient and effective back-up service i.e. in the unlikely event of a break-down. In Scotland where we manufacture our ranges it’s easy. We have an excellent reputation, for a start we don’t have many callouts, and on the occasions where we do our customer’s are extremely satisfied with our rapid response - which they can verify, remember, they’re reading this magazine as well! So, going Nationwide was always a bit of a stumbling block for as much as we undoubtedly have confidence in the Quality and Reliability of our Range, for customer’s peace of mind we believe it is important to provide the reassurance that a reliable back-up service is in place should the need arise. So we avoided spreading our wings until now!
We are pleased to announce that we now have a network of very experienced Frying Range Engineers dotted nationwide with the same attitude as ourselves. We can confidently Supply our Bespoke Frying Ranges Nationwide coupled with a reliable back-up Service whilst maintaining our untarnished reputation. Win Win!
Points of InterestSince we have been manufacturing ranges, we have NEVER had to change a pan. We’re sure you may have heard some of the horror stories about burst pans in ranges only a few years old, and the associated stress and thousands of pounds involved in having to change them. We at Scotrange still consider our range to be young at Ten Years Old.
Contact us and we will be more than happy to give you telephone numbers of any of our customers – not just a select few. Most of our Customer’s have exceptionally busy shops and can verify that our Ranges- no matter how fancy or plain in design (your choice) – can definitely Walk the Walk. Saying you’re the Best to actually being the best is borne out by the test of time and ‘doing what it actually says on the tin’.
Come and Join the ‘Scotrange’ Family, Our Sales Engineer not only has experience in manufacturing and design but also a wealth of experience from a Fryer’s point of view.
Check out our website; take time to study the truthful comments, and honest customer feedback.
We often hear Fryer’s say that ‘Ranges are not as strong or as well built as they used to be’.
Oh Yes They Are At Scotrange!
Our Vision is to Inspire You
We embrace obsession, follow our hearts, not
our heads and revel in the detail to make the
Scotrange range stand apart, consistently out class the established
benchmarks, yet comfortable, friendly and
familiar.
We work with you the individual fryer to create your ideal ‘work horse’ ultimate efficiency frying range, with a back up that does what is says on the tin; for the whole of the ranges long long life!

All proceeds from the event this year will be split between the Fishermen’s Mission, Cancer
Research UK and Alzheimer’s Research UK.
Twenty-three cyclists completed the 40-mile ride – two times around a lap from Brae to Voe, up Dales Voe and back round in the face of a stiff southerly wind to Brae – with Pete Fenwick of Shetland Wheelers first home.
Seventeen did the 20-mile ride – one lap of the same course – with Dugie Gunn from Muckle Roe leading the group over the line, while 12-year-old Flora Quinnell was the first of the two riders in the 10-mile ride from Brae to Voe and back.
Flora, from Aith, said: “I was delighted. It was a really enjoyable ride out to Voe and back to Frankie’s.”
Local electrical retailer George Robertson Ltd has donated a set of Otone Bluwall Speakers which will be presented to each of the three winners.
Prior to the race Peter Dade, former superintendent of the Mission in Shetland and now superintendent in North Shields, who was deputising for Audrey Jamieson,
wished the cyclists well and thanked them for taking part to support the work of the charity.
After a welcome fish supper for all participants, a bumper raffle with a series of top prizes kindly donated by a wide range of sponsors was drawn. A final tally from entry fees, sponsorship and the raffle will be calculated shortly.
Since it began in 2011, the Frankie’s Cycle Sportive has raised more than £20,000 for charities.
Frankie’s manager Carlyn Kearney said: “It was a great day, with cyclists of all ages and abilities taking part and enjoying themselves thoroughly.
“I’d just like to thank everybody who took part, the staff here at Frankie’s for their hard work in arranging the event, Red Cross staff for medical back-up and manning one of the feeding stations, Steve Henry from Shetland Motorcycling Training for making sure the routes were safe and the boys from Brae Garage for support out on the road.”
Three charities will benefit from the efforts of 42 cyclists who took part in the fifth annual Frankie’s Charity Cycle Sportive on Sunday (30th August).

This month’s Chippy Chat guest editor is Ryan Hughes from The Crispy Cod Fish
Bar, Tonyrefail, Wales.
It’s been almost a year since I reached the final of the Young Fish Frier of the Year competition organised by
Drywite, and I am once again, in the running. I don’t think my passion for fish and chips will ever fade away, and one day, I hope to reach the prestigious top step and represent Drywite and live my dream of becoming the best young fish frier in the UK.
I started working at The Crispy Cod fish bar at a young age. I jumped to the chance to help turn a derelict wine bar into a modern fish and chip shop & from then on, my passion for the industry grew. From washing dishes to peeling potatoes to learning food hygiene and customer service, I soon worked my way up the ladder to where I am today.
I couldn’t have gone this far without the help and support from the business owner Mathew Williams. When His mum unexpectedly passed away, I took the big step up to help with the daily running of the business. This is where I really began to fall in love with the industry and entered our 1st competition, the
National Fish and Chip Awards. To my amazement we won Welsh Fish and Chip Shop of the Year, twice! I then entered The Young Fish Fryer of the Year competition 3 times, firstly reaching the Semi Finals, The final of 2015 and now the final again for 2016.
Along my journey I have been fortunate to visit many places, which is not only beneficial to me, but my customers.
Having the opportunity to attend study days/trips have been mind blowing. The opportunity to visit Norway and actually step foot on a trawler was a life time opportunity, and visiting so many places has been amazing including:
Isle of Ely Produce Potato Farm TourPeterHead Fish Market KFE Training schoolNFFF Workshops DaysFlorigo Factory In Holland The 2017 Young Fish Frier of the Year
in association with Drywite.ARE YOU AGED 18 TO 25! And share
my passion for Fish and Chips, if so, enter this fantastic competition. I can assure you the help is out there to help you on your journey.
If anyone would like any tips on next year’s entry please don’t hesitate in contacting me or any other young frier.

KC & the Sons
Shine Brand
Fifty odd years on, while Douglas has transformed into a sprawling suburban megalopolis just two miles
south of Cork, one small, ex-cottage right in the centre has hardly changed at all. Apart from the wall colours and a menu 1950’s locals couldn’t have dreamed of the humble fish and chip shop remains so. Only the incessant queues are a testament to the attention given to tradition, innovation, value and devotion.
Their ethos hasn’t changed to this day. They still produce quality food, using the best local ingredients. They keep their prices low. And the queue moves faster than ever...
The McKenna’s Guide 2015 (List of 100 Best Eateries on the Island) wrote:
To understand how KC and Son & Sons is revolutionary, you need to have a sense of humour, a sense of taste, and a sense of language.
The sense of humour will help you get the most out of all the funny, jokey, rib-tickling aspects of this iconoclastic food business.
The sense of taste will tell you that eating KC’s food is no simple matter. Instead, it’s a
In 1958 Ken and Edith Crawford had a simple idea. Produce quality food (primarily fish and
chips), at prices everyone could afford and serve it efficiently

soulful matter, for the team here care deeply about what they cook and how they cook it.
And your sense of language will tell you that applying the term “fast food” to what Wes Crawford and his family do is way, way wide of the mark.
KC’s, instead, is a “fast-casual” restaurant. It’s like Danny Meyer’s Shake Shack: great cooking in an informal set-up, with long queues of hungry people every day testifying to the goodness of what they do. Sincerely sourced and superbly cooked ingredients that create delicious meals, done without pretension.
Ireland needs more fast-casual restaurants like KC’s, places where you get real food, and great service and value. The country would be well-served by a KC’s fast-casual restaurant in every town. Instead, every town has fast-food restaurants, but we don’t go there.
Instead we go to KC’s, and have Bresnan’s steak sandwich, a KC’s special burger on Hassett’s bap; a meat patty, a side or two of chips, a bottle of water.
So, remember: KC & Son & Sons is not fast food. KC’s is fast-casual, and fast-smart, and fast-good. And fast-Cork, of course.

been incredibly well-supported by the fish and chip shop industry and supply chain. Through our combined efforts we’ve managed to grow the impact of Chip Week year on year, with 2015 recording fantastic results.
“However, we feel the time is now right to move away from a week-long consumer campaign and instead switch the emphasis completely to the trade, with a single-minded focus on product quality. Getting this right is at the heart of the consumer experience and will have the biggest impact on keeping customers coming back for more.
“While chips shops are continuing to hold their own and have seen chip sales increase by 4.8% in the last year (that’s an additional 9million servings from March 2014 to March 2015) consumers now have more choices than ever before. This means a bad or indifferent chip shop experience can have a significant and long-term

impact on sales. After all, there is always somewhere else to go!
“So, what will we be doing instead? Well, for starters, in order to build an impressive skill set across the sector and deliver great tasting, top quality chips every time, dedicated best practice advice and information has been created for the industry to tap into. This is now live at http://potatoes.ahdb.org.uk/promotion/chip-skills
“There are specific sections to build potato knowledge and excellence, including Good Potato Management, with useful buying and storage guidelines, as well tips to achieve the best chips. A Potato Variety Guide highlights the best chipping potatoes, with detail on seasonality and suggested minimum specifications while the Top Tips section is packed full of suggestions for delivering healthier chips, which can be downloaded as a poster for staff use.
“All of this is supported by up to date news and market data and coming soon, chip shop owners will have access to a Marketing Toolkit. This will provide access to useful examples of how to effectively market their shop based on tried and tested promotional techniques.
“Many of the marketing tactics have been honed during previous years’ Chip Week activity and will be of great benefit to shops looking to improve visibility both locally and regionally, as well as customer loyalty and retention.
“While Chip Week might be missed, the industry continues to be well supported with the introduction of National Fish and Chip Day. Run by NEODA (National Edible Oils Distributors’ Association) in conjunction with Seafish and NFFF, the day will return on 3 June 2016 to drive awareness for our much-loved national dish. Seafish’s National Fish & Chip Awards, in January, will also continue to create a buzz for shops, both of which AHDB Potatoes will continue to support.
“The fish and chip shop sector is a healthy and vibrant contributor to the local economy, dramatically outnumbering other types of fast food outlets. Thanks to a strong cultural heritage it holds enduring appeal with customers and staff alike. Afterall, having a bag of freshly cooked, great quality fish and chip chip shop chips is one of life’s great pleasures – lets keep it that way!
While its currently good news for chip shop chips, quality counts in order to sustain growth!
While total out-of-home food only sales are in growth (0.9%) chip shops are outperfoming the market, with 1.9% increase in servings
Overall, out-of-home chip servings are up 2.6%
In the Quick Service Restaurant (QSR) sector, it is only the Ethnic and Fish and Chip Shop sectors that are recording increased chip servings
In the twelve months to March 2015, chip shops sold 9 million extra chip servings (4.8% growth)
All data, NPD Crest, year ending March 2015
While Chip Week might be missed, the industry continues to be well supported with the introduction of National Fish and Chip Day

Guest of honour for the tour was National Federation of Fish Friers president Gregg Howard, who opened the day with a presentation about how
important knowledge of chip preparation, storage and frying is to serving great fish and chips.
More than 80 people gathered at the farm and were welcomed by host Chippy Chat Editor Austen Dack who delivered them the packed agenda for the day.
Mark Gilbert, was on hand to take the group on a tour of part of the farm and talk through the process of what makes a great potato — from seed through to delivery to the trade.

John Boutwood, managing director of Isle of Ely Produce said: “Our purpose is very much to be at the heart of our business communities and to champion their aspirations and to support them.
“This open day helped cement our position further and increased the bond we already have within the trade.”
Isle of Ely Produce also organises the popular potato race on October 10 on the streets of Ely.
Sponsors of the day included Union Norge, Middleton Foods, Kerry Foodservice and Drywite.
As well as the farm visit guests also got to try some great new products from Kerry Foodservice including battered chips and Chicken Train piri-piri seasoning. We had two presentations from award winning chip shops Simpsons from Cheltenham and Frankies from Shetland.
Kate Cox from the Potato Council was on hand to tell chip shop owners about their new plans for the industry (see pages 38-39).
Austen took the room through plans for Chippy Chat in the next few months and also introduced the Spinal Injuries Association who presented their excellent Chip Supper promotion.
In the evening many of the guests stayed on in Ely and went out for a meal and just a few drinks!
Our host Chippy Chat Editor Austen Dack welcomed all attending and mapped out the itinerarry for the day
Mark Gilbert provided a facinating insight into the working of a potato farm complete with a short movie. We were all to visit the farm later.
Kerry Foodservice introduced battered chips and Chicken Train piri-piri seasoning. Firstly on stage and then served up for lunch. Tasty!

After 52 years of serving behind a take-away counter and in his 40th year behind this one, Eddie Ho is
going to be missed by his regulars who pour out of the station of an evening and head for his shop.
As one of his customers, retired nurse Sherry Wakeman said: “So many people have passed his doors and enjoyed their chips. He is providing a real service to the community. I think it would be nice to thank him from the locals and the not so locals for all his years of cheerful and gentle service. He is such a lovely man.”
Mr Ho opened the Mountfitchet chip shop when as the chef at the nearby Chinese take-away, The China Garden, people kept asking him to cook them fish and chips. For a while he ran both businesses.
He remembers: “The door of the fish and chip shop would be open and customers would buy fish and chips while they were waiting for their Chinese take-away, sometimes the children would prefer pie and chips or chicken and chips.”
The secret of success he says is quality. His chips are made from fresh potatoes peeled and chipped on the premises, never frozen.
“I always use big, deep sea fish, between 16 and 32 ounces.
Mr Ho came to England from Hong Kong in 1961. “I wanted to see the world and what it was like.” He didn’t mean to stay but he met his wife Madeline, a student nurse working at Whitechapel Hospital.
“I knew her brother at home in Hong Kong, he told her to visit me in London.”
They have three sons and four grandchildren and still live in London. Eddie’s chip shop will continue. Mr Ho is planning to retire in August but the eatery is being taken over by restaurateur Moinul Abedin who currently owns an Indian restaurant in Bishop’s Stortford.
Happy Retirement Eddie!
Eddie fries out of StanstedAn episode of Lovejoy starring Ian MacShane was filmed there, The Daily Mail has listed it in the paper’s national guide to good chip shops, but now Mr Ho, 74, is retiring from Eddie Ho’s fish and chip shop in Stansted Mountfitchet.
