Sn xut surimi t c nc ngt vn cn mi m v l mt trong nhng hng mi trong cng ngh sn xut surimi. Bi bo ny trnh by nhng kt qu nghin cu sn xut surimi t c M hoa, mt loi c nc ngt, ang c nui thng phm nhiu ni. Chng ti xc nh c nhng thng s k thut quan trng trong quy trnh cng ngh sn xut surimi t c M hoa nh sau: qu trnh ra c thc hin trong ba ln: ln 1 s dng dung dch NaCl 0,2%; ln 2 dng dch a xt acetic 0,01% v ln 3 dng nc thng. Thi gian mi ln ra v t l dung dch ra so vi tht c l 20 pht v 7:1 (v/w). Thi gian p tch nc l 30 pht. Ph gia s dng bao gm ng 4%, sorbitol 4%, tari K7 0,3%. Qu trnh to gel c thc hin nhit 0 - 50C trong 24 gi. Surimi c sn xut ra c cht lng m bo v sinh v an ton thc phm.T kha: Surimi, quy trnh, c M hoa, Hypophthalmichthys nobilis ABSTRACT Surimi is a product from sh meat. Traditionally, materials for producing surimi are mainly from marine sh. However, overcatch and concominant with incorrect catching methods have resulted in risk of shortage of this recource recently. Surimi production from freshwater sh is still new and is one of new trends in surimi technology. This article presents research results in producing surimi from bighead carp, a kind of freshwatersh,iscomerciallyculturingatmanyplaces.Wedeterminedtheimportanttechnicalfactorsofsurimiproduction process from bighead carp as follows: using NaCl 0.2% for the rst washing, acetic acid 0.01% for the second washing and freshwater for the third washing. Duration for each washing time and ratio of washing solution and sh meat were 20 minutes and 7:1 (vol./wt.).Dewater duration was 30 minutes. Addtitives were used, including sugar 4%, sorbitol 4% and tari K7 0.3%. Gel setting process was carried out from 0 to 5oC for 24 hours. Mc tiu ca nghin cu ny l xy dng quy trnh cng ngh sn xut surimi t c M, gp phn gia tng gi tr cho i tng nguyn liu ny.II. Gi tr GS nng NaCl 0,5% gim chcn311g/cm,gitrnyththpngk(p < 0,05) so vi gi tr ca n ti nng mui 0,2%. S dng NaCl trong cng on ra c tc dng hai mt.
