Knowledge and learning have been an integral part of Cravia’s strategy over the years. We have always been keen to create a culture that advocates strong communication and sharing of knowledge across the organization. In this quest to enhance knowledge, Cravia’s Managers took part in the ‘Coaching for Greatness’ training program on Monday, December 17, 2012. The event was conducted by Mr. Tony Ozanne, world-renowned speaker and author.

Coaching employees is a key element of management, and can help you develop a better relationship with your teams, thus resulting in higher productivity and greater morale. Beyond simply managing, coaching your employees can help them better fulfil their potential, develop their skills, and better utilize the ones they have.

WH: Housing and maintenance work is carried out on a regular basis. Any maintenance request or appliance failure is dealt with immediately. The Technical Service Manager, Albert Garcellano, has visited the accommodation in question to check the A/C units. He confirmed that all the units are now in tip-top condition. Please note, improper usage can be one of the main causes of a malfunctioning cooling system. As for the Gas, the company now pays for two (2) gas cylinders per month for 30 employees.

Q7: Marlon Ilano - Cinnabon-JBR

I’m currently a Manager living with 6 people in a flat and I would like Housing Allowance for live out.

WH: Please refer to Q1. We will implement a system for this process.

Q8: Abraham Dispo Jr. - ZwZ-CK

With the addition of 2 ZwZ outlets in Ibn Battuta & Dubai Marina, the working hours in the Central Kitchen have increased yet no overtime has been paid.

WH: This was proven to be incorrect as the employee in question was late for work on several occasions, which offset the overtime payment due to his lateness.

Q9: Marvin Abrigondo - Cinnabon-Abu Dhabi Mall

Flight requests to Philippines to be from Abu Dhabi instead of Dubai.

WH: We will do our best to accommodate the employees’ requests.

Q & A

During our annual Founder’s Awards, some questions were raised in the Q&A session by some of our employees. The session was held by Mr. Walid Hajj, who was delighted to answer the questions that you had in store for him. Please find his detailed response to each and every question below:

Q1: Abdul Latif Tahir - Cinnabon-Souk Madinat

I would like to receive Housing Allowance so I can live out of the provided accommodation.

WH: The housing allowance, if any, will only be given to Managers, not staff. We have rented two apartments and 10 people have recently moved out of this accommodation and into private housing. The same process will follow once the housing is full.

Q2: Arlyn Roxas - ZwZ-Call Centre

Can vacation tickets to the Philippines include a domestic flight up to the province?

WH: We only cover the costs of the international flight because very few staff have a domestic airport in their province.

Q3: Romar Manaligod - Cinnabon-Ajman City Centre

a) There is variance in the salary packages for Filipino Managers compared to Managers of other nationalities.

WH: We aim to be fair in our compensation and pay the market rate.b) Managers are not entitled for an annual ticket, only a ticket once every 2 years.

WH: This is as per the Policy & Procedures.

c) I have completed 10yrs as a Store Manager but the position on my visa is still a Waiter.

WH: We follow the UAE guidelines and visa rules. We have a limited number of quotas for managerial positions. However, when there is a need for any type of certificate stating your position, the HRD will release a letter mentioning your current role as a Manager.d) I would like housing allowance so that I can live with my family.

WH: We have rented a new apartment and we will pursue this policy for married Managers.

Q4: Yazan Osama - Cinnabon-Abu Dhabi Mall

A request for medical insurance for the staff.

WH: We help deserving employees by reimbursing a number of their medical expenses on a monthly basis. The medical claims that reach HRD will be reviewed for reimbursement. We always do our best to help employees in need.

Q5: Mohammed Ali - Cinnabon-DMC Biker

On-time Incentive request.

WH: The incentives have already been released & we will make sure that this happens more efficiently in the future.

Q6: Charlene Ilaya - ZwZ-AUH Salam

A/C in AUH girls’ accommodation is not functioning. We are also contributing AED 5 per head for gas.

Issue #55 | Dec 2012 7

Page 8: By Walid By Louay

Q10: Sailendra Shrestha - ZwZ Marina Biker

There is a problem with the staff transportation on Fridays & Saturdays for ZwZ Marina outlet; the bus is crowded and we sometimes need to take a separate bus.

WH: The Company has rented two new buses that are dedicated to JBR and Marina. One has 30 seats and the other one has 15 seats.

Q11: Mary Jane - AUH

I would like a health card for Abu Dhabi.

WH: HR is looking for a medical center in AUH where staff can benefit from discounts.

Q12: LisaI would like to bring my mother to UAE – is this possible or not?

WH: To apply for a relative’s visit visa the salary should be more than AED 5,000 and accommodation should be available. To apply for residency visa for a relative, the salary should be more than AED 9,000 and a two bed apartment should be available.

Earlier this month we launched the Carvel Cup & Cone Program in the India Court at Ibn Battuta Mall. Within the first three hours of operation Carvel reached 4.5% of the total sales target, and the following day, we reached an astonishing 17.5% of the sales target. This was an incredibly impressive achievement.

Marwan Kandeel: “As always, I would like to thank you all for your help and support, the bakery looks amazing. I would also like to give special recognition to Ahmed Said for his hard work and dedication to ensure that the bakery was ready on time. Once again, thank you for being a true Cravia asset.”

Last month we held an “e-junior” event, the very first of its kind and a truly amazing experience. The event was held at the Etisalat Offices on Sheikh Zayed Road to celebrate the UAE’s 41st National Day. We can confidently say, the children all had a wonderful time. Check out the photos below:

A COMMUNITY

PROMISE

In celebration of the UAE’s 41st National Day, and as part of our promise to continue to reach out to the community, the management and staff of Cinnabon UAE ventured to the Elderly Nursing Home in Ajman. The volunteers made UAE flags out of candy and colored frosting to give to the elders, it was a wonderful experience and the perfect way to honor National Day. Overall, we were delighted with the turnout and there were big smiles to be found on the faces of our elders.

The Zaatar w Zeit management visited the Mirfa Hotel in Abu Dhabi earlier this month. This outing was organized to celebrate the outstandingly high levels of commitment, dedication and continued support by each and every one of you.

MANAGER’S MEET at Mirfa

Taking direction from the original eatery in Lebanon, Zaatar w Zeit in the UAE has unveiled its new identity in Ibn Battuta, which will soon reach all nine outlets across the country. Always on the forefront of the hip and now, ZwZ is evolving to cater to its strong regional audience. While moving forward and beyond borders, the brand never loses sights of its roots – from the way in which food is prepared to the urban Lebanese experience that puts its name on the map. Starting at the Ibn Battuta branch, customers will continue to enjoy all the same food, service and community that they have grown to love, but now in a refreshingly new atmosphere. As always, each venue will feel like a second home, offering a consistently inviting experience that will never change.

Zaatar w Zeit has recently won the award for “Best Retailer of the Year” under the food category at the Retail ME Awards. IS IN THE AIRby Louay

Our event of the year, the annual Kick-Off, was a huge success bringing together all our top managers and executives discussing Cravia’s achievements in 2012 and plans for 2013 and beyond. This year was extra special because of the record number of attendees, especially from our partners, suppliers, franchisors and sister companies.I personally love this event not only because it is an informative session to our key people, but also, and more importantly, because it gives me the opportunity to reflect back on what we have done during the last 12 months

and where we are heading. We get so carried away in everyday business that we tend not to stand back and look at the big picture. And Cravia’s big picture is really big and bright…its future even bigger and brighter, Insha’Allah.

I am happy to report, as I did in the kick-off, that 2012 was a record year from all aspects! In fact, it was a record year already in November. We exceeded our record sales and bottom line of last year in 11 months of this year. That’s an achievement worthy of some recognition. What makes this achievement even more meaningful is that we broke our own record of last year, organically! Meaning, we did not grow through acquiring additional brands or additional markets. The growth was derived totally from our existing three brands… just growing them bigger and better.

2013 will most probably see us add another brand to our portfolio, and one that I cannot wait to tell you all about. However, our focus will continue to be our existing core business with our three jewels, Cinnabon, SBC and ZwZ. The team has an aggressive and challenging target to grow these brands to yet another

2013…HERE WE COME!by Walid

Year. All of the hard work and dedication comes alive during our kickoff.

The event was amazing in every way. Cravia was shining at its best. The recognition, the passion, the information, the cheer and so much more was brought forward as we showed the world why we are the best. The event is the catalyst for the road ahead.

Let us now reflect on 2012. What a glorious year. It was filled with difficulties and challenges but we managed to come out ahead. In the area of sales, we achieved double digit growth and our profit soared to new records. For real estate, we opened six outlets in total. This is especially amazing as we were able to restart the path of growth after the 2009 slowdown. For people, we have exceeded the 800 mark for the first time in our history. I want to also emphasize our belief in people as we have promoted 35 employees in 2012. This clearly shows that we are “Walking the talk”.

new record in 2013. The brands, lead by our stars, Mahmoud and Marwan, and supported by the best team I know exists, are ready to prove that we continue to re-invent ourselves as a company and as individual brands.

After 12 years of operation in the UAE, 2013 will see us, Insha’Allah, open our first outlet outside our home turf. ZwZ Saudi Arabia is a huge project that we are progressing so well in, and one that we hang huge hopes on. I know we won’t be disappointed.

Finally, let me say again and again, that, while numbers mean everything in business, what makes me the happiest CEO in the world is the team and the team work that we have going at Cravia. We get envied on this everyday, and without that team and the spirit and high self-motivation that each of you have, Cravia won’t be Cravia.

I wish you all Happy Holidays, Merry Christmas and a new year filled with achieving your (big) dreams and a year filled with happiness, health and prosperity for you and your loved ones.

2013, here we come…

We have also taken the bold step of regional expansion by opening a branch for our company in Saudi Arabia. This will help Cravia expand its presence and also give staff an opportunity of relocating to Saudi Arabia and fulfilling personal and professional growth. We wish the Saudi team the absolute best in the new challenge.

This is the beginning of a long journey filled with challenges and rewards. I am truly excited and am now preparing myself for 2013 in the best way I know how. By starting ten days early and hitting the ground running at full speed. This will give us a head start.

Team – this is it. Let us reflect on 2012 as great year but be wise and energized by the challenges that we will definitely face come January 1st, 2013.

Get excited and let us show the world what we can do.

Simply the best!

CINNABON FINDS

SWEET SUCCESS IN

RUSSIA, MIDEASTOur global CEO interviewed by the

Wall Street Journal

The holidays are a sweet spot for Cinnabon Inc., as mall shoppers and peckish travelers follow their noses to the bakery chain’s nearest kiosk.

The Atlanta-based company says the last two months of the year account for about 60% of its annual franchise sales in the U.S.; total sales from all channels are on track to hit $900 million in 2012.

Some of that growth comes from parts of the world other companies might choose to avoid. In July, Cinnabon, which is owned by Focus Brands Inc., became the first U.S. franchise in Libya, opening a cafe in downtown Tripoli. Libya’s civil war delayed the opening, but the location has been a success, says company President Kat Cole.

Stateside, the mall kiosk, long a staple of Cinnabon’s business, represents a shrinking piece of the pie as the chain continues its expansion into grocery products, such as flavored pancake syrup, and partnerships with fast-food chains such as Burger King, which sells miniature cinnamon buns in 7,000 stores.

The 34-year-old Ms. Cole, who got her start in the food business during high school as a hostess at restaurant chain Hooters of America Inc., took the top job at Cinnabon in early 2011. In a recent interview, she discussed the chain’s global expansion plans, overseas consumer tastes, and its stores’ distinct smell:

12

WSJ: Where are you seeing growth internationally?

Ms. Cole: Russia is our fastest-growing market. We are almost at 100 locations there, and we’ve only been in that market for 2½ years. The Middle East continues to grow, but we’re quite mature there, having been there for almost 15 years. We’ve got a strong presence in Saudi Arabia and the United Arab Emirates and Egypt and Jordan. We’re actually a staple there. China is really the only place where we aren’t.

WSJ: A lot of people wouldn’t associate Cinnabon with the Middle East. Why focus on that region?

Ms. Cole: Cultural acceptance is high because they love sweets. If I showed you a picture of how they eat their cinnamon rolls, you would get a cavity just looking at it. They cover it in caramel and chocolate.

“We found great franchise partners.

That really was the key.”

WSJ: Cinnabon was the first U.S. franchise to open in Libya. What was the rationale?

Ms. Cole: We found great franchise partners. That really was the key. These

guys are brothers. Containers were headed to Libya with our product when [civil war] erupted in the country. As soon as things settled down, they opened. They’re setting records over there. Now, when a domestic franchisee complains or says, “I can’t get the store open because the construction is delayed,” I’m like, “Give me a break.”

WSJ: U.S. Cinnabon locations are set up in areas with high foot traffic, like airports and malls. What strategy works abroad?

Ms. Cole: Overseas, you will see more streetside locations than you will in the U.S. There just aren’t as many malls. In Russia, more malls are being built, but there isn’t [yet] that type of shopping culture.

WSJ: How are consumer tastes abroad different?

Ms. Cole: Dulce de leche is big in Central and South America, with that heavy Spanish caramel. Chocolate is huge for us overseas—it’s the No. 2 seller in some markets. The products that we develop for Central and South America end up coming here, because we’ve got such a huge Hispanic population in the U.S.

WSJ: The franchising sector was hit hard by the recession. How has it affected sales?

Page 13: By Walid By Louay

CINNABON FINDS

SWEET SUCCESS IN

RUSSIA, MIDEASTOur global CEO interviewed by the

Wall Street Journal

Issue #55 | Dec 201213

Ms. Cole: U.S. [franchise] sales dropped well over 10% during the recession. There’s only so much you can do to convince someone to go to a mall. For the U.S., in particular, If people aren’t shopping and flying, they’re not physically available for us to sell to. It’s even tougher with airports or theme parks. A lot of that is started to come back. An average Cinnabon bakery in the U.S. right now is doing about $400,000 a year

WSJ: Have you been affected by rising commodity costs?

Ms. Cole: For us, the big hits have been tree nuts. We use a ton of pecans. They’ve gone up 300% in cost. It is one of the most expensive things per ounce in our bakery right now. If I see even a little shred of pecan on the ground, I’m like, “That is a dollar!” Wheat, obviously, is something that rises and falls. With the drought in the U.S., that is going to be a big problem next year for us.

WSJ: What’s the business model for your partnerships with grocery brands and fast-food chains?

Ms. Cole: Most grocery arrangements are license partnerships. We work with these manufacturers on product development, they purchase our ingredients and we get a percentage of their sales. It’s different when we fully develop the product, like the Minibon at Burger King; we work with our own manufacturers that produce [proprietary] Cinnabon products so we get a much bigger chunk of royalties.

WSJ: Are these partnerships a big part of the business plan going forward?

Ms. Cole: The strategy is to continue to grow our flagship bakeries and to build on what is already a strong consumer packaged-goods business. We are in about 50,000 points of distribution around the world, including grocery, franchise and food-service

establishments. You will see a shift toward grocery and other food-service establishments, because there are just so many more of them.

WSJ: Does the franchise portion still comprise a majority of the business?

Ms. Cole: It is a slight minority now.

“Help people responsibly indulge.”

WSJ: Cinnabon’s classic roll contains 800 calories. Any efforts to reach out to health-conscious consumers?

Ms. Cole: We will never stand for the epitome of health. For us, the question is, “How do we find ways to help people responsibly indulge?”

WSJ: Will there ever be a low-fat version?

Ms. Cole: When I came on board, there was an initiative to reduce the calories. But you fix one issue, calories, but you create another because you have to bring in artificial sweeteners and other artificial ingredients. Here’s the funny thing: Even though we’re promoting the Minibon, we’re selling more 800-calorie rolls per location than we have in years.

WSJ: Your stores have a distinct aroma. There are conspiracy theories about fans blowing the scent throughout malls.

Ms. Cole: You smell it because we’re opening the oven door; the aroma gets out. By accident, we learned how powerful olfactory senses are in psychological triggers to purchase.

WSJ: You’ve had a nontraditional career path.

Ms. Cole: I was recruited in high school to go work at Hooters as a hostess. By the time I was 18, I became a Hooters girl. I wore the orange shorts. Then I started college right after I graduated. By the time I was 19, I had been offered the opportunity to go open the first Hooters restaurant in Australia, then fell in love with international operations. Six months later, I’d been on three continents. Eventually I was gone so much I had to drop out of college, because there was no way to do both.

By the time I was 20, I was offered a corporate job at the global headquarters heading up training and development for the employees and took various leadership roles within that time.

By the time I was 26, I was a vice president of the company and the CEO passed away shortly after that, so I worked closely with the incoming CEO, which was his son, to help lead the organization through a lot of change. Eventually, we sold the company into private equity. During that time I went back to get my M.B.A. and then moved over to Cinnabon and graduated with my M.B.A. two months after I started with Cinnabon. And I’ve been running the company for two years.

WSJ: You thought you were going to be an engineer.

Ms. Cole: An engineer and an attorney. That was the plan. Get my engineering degree, go to law school. I wanted to work for DuPont .

A version of this article appeared December 26, 2012, on page B5 in the U.S. edition of The Wall Street Journal, with the headline: Cinnabon Finds Sweet Success in Russia, Mideast.

GAME

FUN FACTSDid you know that?

• Your heart beats over 100,000 times per day.

• The world population of chickens is about equal to the number

of people.

• The microwave was invented after a researcher walked by a

radar tube and a chocolate bar melted in his pocket.

• Recycling one glass jar saves enough energy to watch TV for

3 hours.

QUOTES“The difference between a successful person and others is not

a lack of strength, not a lack of knowledge, but rather a

lack of will.”

Vince Lombardi

“If you want to be successful, it’s just this simple. Know what

you are doing. Love what you are doing. And believe in

what you are doing.”

Will Rogers

“There are no shortcuts to any place

worth going.”

Helen Keller

The horses will line up nose to nose 30 minutes after they begin running. Despite the fact that two horses will be on the far side of the track, the four horses will still be lined up nose to nose.
