What is the Slow ‘N Sear?Slow ‘N Sear is the revolutionary charcoal kettle grill accessory designed to add versatility and ease to your backyard barbecue. Its patented design consists of a large capacity charcoal basket combined with an integrated water reservoir to create two distinct cooking zones. The Slow ‘N Sear allows you to grill/smoke/roast/bake easily, and with amazing results, in your kettle.

How will the Slow ‘N Sear change the way I cook in my kettle?

• Improved temperature control - The outer, curved wall of the charcoal basket contours the kettle and keeps coals away from the kettle wall. This creates an insulation barrier and keeps more heat in the kettle. Additionally, the angled wall design of the basket promotes coals to burn down evenly. The result: more efficient and consistent heat generation in the kettle with less effect from the outside environment. Use the air vents to “dial-in” your desired temperature and watch it stay there for hours. Many customers tell us the Slow ‘N Sear delivers the taste of charcoal with the convenience of gas.

• Less babysitting the kettle - Consistent temperatures in the kettle means less fussing with air vents. The large capacity basket (~100 briquettes) will provide 8+ hours of low ‘n slow cooking at 225° F before needing to refill charcoal.

• Maximize grill space – the vertical water reservoir provides both a way to provide moisture to the cooking environment and an effective thermal barrier between the coals and the indirect cooking surface. You’ll find cooking grate temperatures are the same across the entire indirect zone. Use every inch of indirect grilling space in a 22” kettle to accommodate 15-18 pounds of pork shoulder or brisket, up to 5 racks of ribs, or a 20 pound spatchcocked turkey…load up the grill and know it will all cook evenly and consistently.

• Slow-cooked barbecue AND high-heat searing – when fully lit, the charcoal basket creates a high-heat sear zone exceeding 1000° F. Use the two-zones in your kettle to quickly move between direct sear and indirect cooking without needing separate grills.

I don’t see my grill listed above. How do I know if a Slow ‘N Sear will fit?Here are the dimensions for the Slow’ N Sear/Slow ‘N Sear Plus and Slow ‘N Sear Charcoal Basket. Compare these specifications to your grill’s dimensions. Keep in mind that height (charcoal grate-to-food grate distance) is just as important as length and width.

What is the difference between the Slow ‘N Sear and Slow ‘N Sear Plus?

Both units have identical cooking performance (capacity for fuel/water; cooking time; intensity of sear; steam generation duration; etc). The ventilated stainless steel bottom plate on the Slow ‘N Sear Plus adds a level of convenience for some of our customers in these situations:

• Using lump charcoal – the bottom plate holds onto irregular, and often smaller-sized, lump charcoal pieces better than the charcoal grate of the kettle

• Using the center ignition on a Weber Performer – the ability of the Plus to hold coals allows for movement of the Slow’ N Sear across the grill to access the ignition port

• Sifting ash – the bottom plate makes it easy to shake out accumulated ash during low ‘n slow cooks without losing small charcoal embers through the charcoal grate

• Ease of clean-up – after a cook, quickly and easily sift ash then dump/retain unused coals by picking up the Plus and giving it a shake

It seems the regular Slow ‘N Sear or Slow ‘N Sear Plus would also fit in a 26” grill. Why do you recommend the Slow ‘N Sear XL instead?

Yes, the Slow ‘N Sear/Slow ‘N Sear Plus will work well in a 26” kettle. But it has two limitations that are overcome by choosing the Slow ‘N Sear XL:

1. Since the 26” kettle has more space to heat, a single load of charcoal in a Slow ‘N Sear/Slow ‘N Sear Plus won’t last as long during a low ‘n slow cook. The increased charcoal capacity of the Slow ‘N Sear XL allows you to cook longer without needing to refill.

2. The smaller size of the Slow ‘N Sear/Slow ‘N Sear Plus means less room to sear. You get much more searing space (without losing indirect cooking space) with the Slow ‘N Sear XL.

I have an 18” kettle/Jumbo Joe – are you going to make a Slow ‘N Sear with a water reservoir for this grill type?

Space limitations in the 18” kettle/Jumbo Joe prevent us from being able to include a vertical water reservoir that would be safe to fill and not take up too much indirect cooking space. We’ve incorporated a similar double-wall barrier in the Slow ‘N Sear Charcoal Basket to create a two-zone cooking environment and it works great! A water pan on top of the coals can provide moisture during a cook, if needed.

Why are two Slow ‘N Sear products recommended for the Weber Summit Charcoal Grill?

The Weber Summit Charcoal Grill (WSCG) has two charcoal grates:

• an upper charcoal grate close to the food grate where the Slow ‘N Sear Low Profile can be used for low ‘n slow cooking and/or searing with direct radiant heat (searing steak, for example)

• a lower charcoal grate, further from the food grate, where the Slow ‘N Sear Charcoal Basket can be used for low ‘n slow cooking and/or roasting with distant radiant heat (chicken - and chicken skin specifically - love this type of high-heat distance cooking)

The Drip ‘N Griddle Pan (see Page 6) should also be considered essential for the WSCG. The Pan creates a two-zone cooking environment when using our Charcoal Basket on the lower grate and helps to funnel cooler intake air into the Low Profile when it’s set up on the upper charcoal grate.

A good digital thermometerWe can’t emphasize strongly enough the importance of having good digital thermometers. At minimum you should have a dual-probe thermometer to simultaneously monitor pit temperature (note: your dome thermometer is not accurately measuring temperature at the grill surface) and a leave-in probe for meat temperature. Any backyard cook will also be well-served by an instant-read thermometer to quickly check and confirm meat temperatures. Cooking to temperature, not time, is critical to perfect food every time.

Just like grills, thermometers come in a range of models with various features and at multiple price points. Our recommendations for thermometers can be found on our “Thermometers” Shop page. There you’ll find links and descriptions for our favorite ThermoWorks products as well as direct sales of two Maverick products including our custom dual-probe thermometer package (based on the popular ET-732).

ADDITIONAL PRODUCT RECOMMENDATIONS

Drip ‘N Griddle PanAs the name implies, this pan made by Adrenaline Barbecue Company can be used as both a drip pan and a flat-top griddle.
