Pizza (try the thin-crust pineapple or artichoke) and pastries (ooh,those chocolate brownies) are done from scratch. Subs (on fresh-baked sub rolls) and sandwiches are made fresh and to order. They’ve doubled the food menu in the last year. Nochain store, Moe’s is still a mom-and-pop operation, founded almost 16 years ago by Pattyand John Sherman. “This is their community; they live and work here. They and theirfamilies are hands-on,” Pagnotta says. Dive into their lively new Web site,www.moesbagel.com, which invites the community to enter the “Design the Moe’s Van”contest and sign up for tours of the Arapahoe commissary for pre-school and elementary-school kids. “We’re listening to what the community wants,” Pagnotta says. “Boulder is sucha magical place. We’re so grateful to be here.”

That was just the first course, so to speak.Something new is always in the works. Over time the pastry line has increased – both wholesale and retail. Lastyear’s expansion doubled the size of the café. A wood-burning pizza oven turns out Tuscan-style crispy pizzas.You can order hot food at lunch and dinner, eat in or take out. Grilled sandwiches and fresh-tossed salads arepopular. Breakfast at Breadworks is elaborate, with such hearty victuals as individual frittatas, oven-baked applepancakes, and polenta or red-fennel hash. But don’t just come in for meals: They spin their own fresh gelato(top-of-the-charts is dark bittersweet chocolate, followed by vanilla bean and wild strawberry) and sorbet(pomegranate, grapefruit and watermelon are mouth-watering originals). What’s cooking for the future?Domnitz and Executive Chef Colleen Domnitz run the business together and are developing a line of wheat-free and gluten-free baked goods. He explains Breadworks’ success: “We are fanatical about quality. Everythingthat we serve is as good as we can make it. We’ve built up a reputation over the last 12-1/2 years. We addthings that are of interest to our customers and staff. Everything is fresh. We use top-quality ingredients.”

For instance, she addsshrimp to the beef typically stuffed ingrape leaves. And stuffed tofu, served inVietnam with tomato sauce, can beordered with one of her creations –black bean or coconut sauce. Pad Thaiis not like the Thai version; sheconcocted her own sauce. Her sesametofu differs from the Chinese version; itis fried once rather than twice. It alladds up to original, delectable cuisine.“It’s like painting a picture,” shesuggests. “If it’s not happy enough, let’sput some red in it.”

Last year another branch opened at 1800 Broadway, and on theCU campus students can get their Vic’s caffeine fix at the ATLAS Building. Despite the competition, Vic’s – like thecream in its coffee – has risen to the top. Owner Mike Hilliker has the formula for success: “Good environment, good people, goodservice, good product.” No doubt that Vic’s is a big hit. It prides itself on friendly, fast service and on the expertise of its staff: Thosewho prepare espresso drinks are highly qualified, trained baristas.
