Seed oysters ready to go on the oyster trestles
All our oysters are authentic Whitstable Oysters (Protected Geographical Indicator-PGI) from our own beds. They are either rock oysters (Crassostrea gigas) available all year round or the famous native oysters (Ostrea edulis) available when they are in season. Both types of oysters are fished wild from our boat Melissa E - the last wooden boat to be built in Whitstable. The rock oysters are also farmed on our beds just off Whitstable on trestles which can be seen at low tide.
