We visited the Okanagan recently, and had a wonderful time touring win-eries, gardens, and of course enjoying good times and good food with our friends Duane and Lisa. Lisa is always on the lookout for interesting recipes and was happy to share some of her newest “finds” with me. I think you’ll en-joy the flavours in these fall-off-the bone ribs, and the smooth texture of the maple dessert. Mmm, so good!

BarBecue riBs with rum4 lbs pork baby back ribs1 cup light brown sugar¼ cup ketchup¼ cup low sodium soy sauce¼ cup Worcestershire sauce¼ cup amber rum½ cup chili sauce1 clove garlic, crushed1 teaspoon dry mustardCoarsely ground black pepper to taste

Cut the ribs into serving size portions and wrap securely, as one layer, in heavy aluminum foil. Place the foil-wrapped ribs on a sheet pan and bake at 350 degrees F for 1 ½ hours. Remove ribs from the foil and transfer to a shallow dish.

In a separate bowl, whisk together all the other ingredients for the barbecue sauce. Pour 2/3 of the sauce over the ribs, cover, and marinate for approxi-mately one hour at room temperature. Set aside the remaining 1/3 of the sauce to baste the ribs with when grilling.

Preheat barbecue to medium heat and spray grates with non-stick cooking oil. Place ribs on the grill and cook for approximately 30 minutes, basting with the remaining barbecue sauce.

maple cream1 envelope unflavoured gelatin¼ cup cold water½ cup milk2/3 cup maple syrup1/8 tsp. salt2 cups whipping creamAdditional maple syrup

In a small bowl, sprinkle gelatin into cold water and let stand for one minute.

In a small saucepan, bring milk to a gentle boil and stir in the gelatin mixture until dissolved. Remove from heat and stir in maple syrup and salt. Cover and refrigerate for approximately 45 minutes, until partially set.

In a large bowl, beat the whipped cream until stiff peaks form; fold into the gelatin mixture.

Spoon into 8 individual serving dishes or martini glasses; cover, and refriger-ate for at least 4 hours before serving.

Drizzle with a little additional maple syrup before serving.

When we take the time to walk down to our lo-cal pond, swamp, or marsh, we may be fortunate enough to spot the American Coot. Don’t be mis-taken, the Coot is not a duck and is in fact, not at all related to the mallard. Unlike the typical stream-lined mallard, the coot has a plump body, much like a chicken. He is dressed in dark-grey and black, with a bright, white, bill and forehead. If you are close enough, or equipped with a good set of binoculars, you will be able to see the small tuft of red on his forehead.

To some, they might look quite ridiculous when walking (not waddling) out of the water. Their round body is accompanied by a short tail, short wings and large feet. To make him stand out even more, his feet are not webbed like a duck, instead, his long toes have broad lobes of skin that help him kick through the water. These lobes fold away for

walking on land and keep him from sinking in the marsh mud.

When he is on land, he collects food in the form of grains, leaves and sometimes insects, snails and salamanders. Eventually, he will return to the water because where he chooses to build his nest. His nest is usually hidden in the bulrushes and reeds along the water’s edge. Don’t try to get too close though, the mother coot will always protect her eggs and nestlings.

The water is where he finds most of his food, in the cat-tails, water lilies, algae and eelgrass. The coot doesn’t mind diving under the surface to snatch his food, in fact, he prefers diving and floating over flying. This is notice-able when the Coot prepares to take to the skies. This is quite the task for the coot; he must begin by flapping his wings while running across the water for many metres. Not nearly as elegant as most other birds..

ending homelessness is a community affairA man living in an apartment funded through Cal-gary’s 10 Year Plan to End Homelessness described his 20 years of being homeless as a darkness he couldn’t escape. “And then an outreach worker asked me if I wanted a home,” he said. He laughed because he believed it was impossible. The outreach worker disagreed. It was possible.

A year later he describes his new state of being. “I’d lost me in the darkness,” he said. “I had no pride. And now, I’m proud of me. It’s not easy, but it’s sure a lot better than where I was.”

Sometimes, we look at others and wonder, “What is their problem? Why don’t they clean up? Get a job?”

The path in and out of homelessness is complex and challenging. So challenging that when offered a home, this man was unable to say ‘yes,’ at first.

That’s why we are working together as a community to find our collective ‘yes.’ We’re making space in our neighbourhoods to help those in the darkness of homelessness find their way home.

Emergency shelters are needed but they’re not a long-term solution. The long-term solution is match-ing people with the kind of housing and support they need. From the stability of a home, they are better able to work on the issues that led to their homelessness.

Governments, non-profit-agencies, businesses, the faith community, philanthropists and volunteers are working on Calgary’s 10 Year Plan. The man de-scribed above is one of nearly 6,000 people who have received housing with support since the Plan was launched in 2008.

It has taken a community to make the progress we’ve made over the past six years. It will take community to continue efforts to help those stuck in homelessness. If you would like to learn more, please visit www.calgary homeless.com.
