Spring is here but at the time of this writing it certainly has not sprung. What a tough winter…

Wow!

General Update

I hope we see sunshine soon so we can get to our garden and yardwork, catch our first sunburn

and break out the BBQ. The winter has not been without progress here at Pilgrims however. As

mentioned in my last update we have a great computer programmer developing a one-of-a-kind

custom coupon printing kiosk to bring you more savings. After a couple excellent trade shows in

January and March I am happy to say that many of our favorite manufacturers are eager to support the program and help you save money

while shopping healthy with us.

New Discoveries

In January I was invited to attend the Good Food Awards Ceremony in San Francisco and to join the Good Food Retailers Collaborative. I have

yet to join the collaborative but will this year for sure. It is a group of independent natural food retailers from around the country committed

to supporting the cottage industry of small artisan food producers. The collaborative supports them through promoting the sales of their items

in our store but also through the awards ceremony where small producers are recognized for not only the quality of their food but also for

their commitment to a variety of ethical standards depending on their area of focus. In a time when independent organic farms and brands

are increasingly owned by very large corporations it is refreshing and encouraging to see a group focus on small independent food companies

which are more committed to ethical standards that we support ourselves.

Good Food Awards

“For a long time, certifications for responsible food production and awards for superior taste have remained distinct - one honors social and

environmental responsibility, while the other celebrates flavor. The Good Food Awards recognize that truly good food - the kind that brings

people together and builds strong healthy communities - contains all of these ingredients. We take a comprehensive view, honoring people

who make food that is delicious, respectful of the environment, and connected to communities and cultural traditions.”

The 2017 Awards saw 2,000 tasty entries and honored 193 winners. These outstanding companies not only received top scores in the blind

taste testing in September, but also passed rigorous sustainability vetting.

What is this “vetting” you ask? Well it is too extensive to detail here but here are a couple brief examples. In the category of confections

the vetting included emphasis on those “produced using locally grown, natural, minimally processed ingredients that celebrate regional and

cultural tradition, highlight American terroir and exemplify excellence in candy making craft.

The following represents just some of the requirements for consideration in for the Good Food Awards for Chocolates:

• Made by the entrant from bean to bar in the USA

• Free of artificial and synthetic colors, flavors, preservatives, GMO’s

• Cacao must be sourced in a manner that meets or exceeds Fair Trade standards regarding price, transparency and treatment of laborers.

Priority given for farms practicing sustainable environmental practices.

• Dairy products must be sourced rBGH-free and in compliance with Animal Welfare Approved guidelines and certified organic is encouraged.

While criteria for Good Food Awards doesn’t require all ingredients be organic they do encourage producers to move that direction as well

as address many ethics not addressed by organic regulations like a variety of social ethics like fair trade standards and individual ownership.

Large corporate ownership disqualifies an entrant. Most entrants are family, cooperatively or individually owned which provides greater bene-

fits the local community and economy. Furthermore high fructose corn syrup artificial ingredients and colorings are prohibited in all categories.

A group that has recently bloomed in Coeur d’Alene and shares many of the same values Pil-grim’s Market strives for is the Inland Northwest Food Network (INWFN.) This group works in the community with the goal of educating peo-ple on the benefits of eating locally, seasonally and eating more nutritiously.

The INWFN puts on a program called the “Seasonal Kitchen” and it brings together people from all around this area to learn about the simplicity of making home cooked meals and how to find the best in-gredients locally. All the

ingredients used in the classes are sourced from local businesses like Pilgrim’s Market or directly from local farmers.

“We try to get people thinking about what’s involved in the process of growing and mak-ing foods from scratch and having them gain appreciation,” said Teri McKenzie, Founder and Executive Director of INWFN.

The Seasonal Kitchen brings forward the idea of eating seasonally and gaining the skills to create dishes using ingredients that some folks don’t often cook with. Teri mentioned that a lot of people tend to stay in line with what’s conve-nient but not with what’s practical with each season, and the INWFN wants to help people curve their eating and cooking habits.

“We strive to find positive solutions to these issues by giving the community the tools and resources to take action on the health of them-selves, the economy, the environment and the

community as a whole,” said Teri.

She also mentioned that the INWFN will be connecting with the community in other ways this summer with programs such as the Power of Produce Club, farm to table tours, and the new “Drink This!” program which goes in to depth on different kinds of locally produced beverages and highlights local farmers and entrepreneurs.

Pilgrim’s Market will be hosting a “Drink This!” event on May 25th featuring Brad Miller from Springs of Hope Creamery. Protein supplements are not breaking news. There are literally thousands to choose from in today’s market – so why would we create a new one? Because something is missing from proteins supplements – and that something is superior absorption. We turned to a time-honored, natural process that amplifies the amino acid profiles and nutritional components of protein sources – fermentation! • 8 oz Unsalted Organic Valley butter• 1 large onion, chopped• 2 pounds assorted fresh mushrooms, sliced• 4 cups Pacific chicken broth (or vegetable broth)• 1 cup Lundberg organic wild rice blend, pre-cooked• 2 cups Organic Valley half & half (or Organic Valley soy creamer, original)

• 1 tsp nutmeg• 2 Tbs fresh parsley, chopped• Salt & pepper to taste

1 whole red cabbage1 whole white cabbage5 large carrots½ Daikon radish

3 stalks CeleryGenerous handful of chopped cilantro2 cups apple cider vinegar1 cup sesame oil (or olive oil)

1. Melt butter in a large stock pot over low heat until foaming. Add onion and sauté until translucent. Add mushrooms and cook for 5 minutes on medium-low heat, stirring frequently. Season with salt and pepper. Add broth and bring to a boil. 2.Reduce heat, simmer for 45 minutes. 3.Add rice and heat through. 4.Stir in half & half and nutmeg. 5.Sprinkle with parsley before serving

Add a small amount of ginger or garlic for a spicy kick! Shred veggies and hand toss them together in oil and vinegar. Serves 8-10 people. Lasts one week in fridge.

In a small bowl, combine brown sugar and butter. Spread into a greased 9 inch round pan. Layer with rhubarb;sprinkle with sugar. Set aside. In a large mixing bow., cream the butter and sugar. Beat in egg yolks and vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. In a small mixing, beat egg whites and cream of tartar medium speed ‘till stiff peaks form. Gradually fold into creamed mixture, about 1/2 cup at a time. Gently Spoon over Rhubarb. Bake at 325 for 40-45 min or until cake springs back when lightly touched. Cool for 10 minutes before inverting onto a sering plate. Serve warm with whipped cream if desired. *you can substitute the dairy for non-dairy choices!

What got you interested in working at Pilgrim’s Market? It’s one of the places in Coeur d’Alene that’s a land mark and a lot of people know about it. I think the sense of community when you come in here is very obvious and I wanted to be a part of that.

What inspired you to join the supplements staff ? I wanted to know more about different kinds of natural medicines and it’s been something that I’ve been interested in even before I started work here. Pilgrim’s is the first time I’ve ever pursued that interest as a job and Pilgrim’s provides and continues to provide educational opportunities for the staff to keep them trained and updated on regulations, requirements and what’s going on in the market.

Favorite products from your department? I think that if I was to give one thing to someone out of supplements it would be Ubiquinol CoQ 10. I think that’s one a lot of people have heard of but don’t know a lot about. Ever since I started taking it I saw a dramatic change in my mood and energy level and overall brain functions. A lot of people know it as a heart health supplement but its other functions commonly get overlooked.

Activities outside of work? Mostly a lot of backpacking, hiking, and traveling.

Managers that you’ve looked up to the most? I think this is the first job where there hasn’t only been one person that I’ve looked up to. A lot of the managers who were here before me have all done an incredible job of helping me when I needed it.
