“SUMMER AND SMOKE” The Chef of the Future?

From the Pastor

I spent the late afternoon and evening of May 23 opening cards and unwrapping gifts. After my 40th anniversary celebration I was very tired. But just being tired hadn't dulled my curiosity- - especially about two large boxes and a smaller package that looked suspiciously like a barbecue grill, a starter chimney, and various "tools" and accoutrements no backyard chef de cuisine should be without! What a nice surprise to discover that our choir had given me a gift with so much potential! Yes, I do cook, but I am a real beginner at an outdoor grill. As a child, I loved going to Italian festas. The smell of grilling sausage and peppers on a warm summer night, the lemonade, the press of the crowd … it didn't cost much, but it became one of my favorite celebrations of food and people. Festas are very close to the Mediterranean sense of “FAMILIA.” It isn't just what happens when sausage and peppers meet the grill. It's about tradition, warm memories, Mama's cooking, the butcher who grinds the meat and the guys who know how to grill! So, now I have a grill. I have cook books, two meat thermometers, a stylish lime green "tool bag" and a matching "umbrella." Among my gifts were various "rubs" and recipes for marinades. And, yes, I've been watching more "Food Channel" and “Cooking Channel” shows on the many ways to grill and barbecue just about anything. All of this could be a "dream come true" or a "nightmare" in the making. If you watch enough "Food Channel," I think you know what I mean. There are two programs that feed my fears and curb my confidence at the grill. They are "Chopped" and "Bobby Flay's Throwdown." When I first saw "Chopped," I didn't want to see it again. The premise for the show is to take four confident chefs, offer them a $10,000 prize, and

then give them “mystery ingredients” to prepare an appetizer, entrée and dessert. The baskets of "mystery ingredients" might include candy canes, Canadian bacon, and English muffins. Try making a dessert from those ingredients! The judges rate contestants and send most of them down a dark corridor and out a back door. The “chopped” often leave angry, embarrassed, or hurt. Now and then, the show’s format allows for a "second chance..” I now watch “Chopped.” I even dream about being a contestant. Isn’t that a "nightmare?" Can you imagine opening one of those baskets and not being able to think of a thing to do with the ingredients? Imagine what it feels like to be “chopped!” Bobby Flay is an "Iron Chef,” a successful restauranteur, and one of the world’s great grill masters. He came up the hard way, has a strong New York accent and an even stronger ego. From what I've observed, he’s extremely creative and doesn’t lose many "Iron Chef" challenges. Bobby Flay began with a show called "Boy Meets Grill" and has hop-scotched around the Food Network in a variety of programs. The latest--and, for me, the scariest--is "Throwdown.” Bobby's team does research on cafes and restaurants that have a reputation for producing the best breakfast, crepes, omelettes, ribs, e t c., e t c., etc. Bobby and his team devise a similar (and usually far more sophisticated) version of the dish. Then Bobby and company arrive unannounced to challenge a chef and be judged by a panel of experts and/or regular customers. Bobby occasionally "loses” but is no less intimidating. I remember one show, in particular, where Bobby challenged a Filipino priest and seminary instructor to a ”Teriyaki Throwdown.” Even though the priest won, I couldn't help sharing "white knuckle" empathy with him. When I stand before my Weber Kettle the last thing I would want is a Bobby Flay "Throwdown"

Page 3: 8149 Golf Road ~ Niles, IL 60714 847/967-1060 ~ … › 512032.062710.pdfBobby Flay is an "Iron Chef,” a successful restauranteur, and one of the world’s great grill masters. He

of any kind. Getting beyond dreams and nightmares, I plan to fire-up the grill soon. Part of the legacy of my predecessor, Fr. Ed, are four bags of charcoal. I don’t expect or want the "Food Channel" to be on hand for my debut. I don't think I have to worry about Bobby Flay. I don't even have to worry about the neighbors to the West. I know when it's Fried

Chicken Day at Jewel and when the Himalaya Restaurant does an explosively good curry. What I will add to the horizon is a small sizzle and a puff of smoke. When I feel it's safe to invite people, Lisa Hall and the Choir will be honored guests. I am grateful for their gift. It's a "throwdown" without "fear of Flay." - Fr. Luczak

We REALLY need Bingo Workers! We have a critical need for the following areas. Kitchen The kitchen sells comfort food for our patrons. We offer Sloppy Joes, Tuna Salad, Grilled Cheese and Hot Dogs along with fresh Pop Corn and candy bars. The Kitchen is open from 5:30 to approximately 7:30. Preparation begins between 4:00 and 4:30. We need two volunteers to man the kitchen each week. The goal is to have 8 to 12 individuals who would rotate responsibility. Bingo Games The doors for Bingo open at 5:30. Our goal is to have four teams each consisting of five to six workers. The teams are made up of a Leader who oversees operations; a Caller who runs each game; three Floor Walkers who sell Bingo cards and verify winning cards; and a Casher. We are extremely short of help in this area, particularly on the third week of each month. We need 10 to 12 volunteers to man this operation. For further details on any of these opportunities please contact the Parish Office at 847 967 1060.

EUCHARIST FOR PERSONS WITH CELIAC-SPRUE DISEASE

The Liturgy Board has been made aware of low gluten hosts that are available for the faithful who have gluten intolerance. The low gluten breads meet the stipulations set forth by the Roman Catholic Church and are fully endorsed by the US Conference of Catholic Bishops Secretariat for Liturgy. Made from wheat starch and water, the gluten content of these breads is .01%, but it is still recommended that those who have Celiac consult with their physicians. Our question is: Do we have a need here at St. Isaac Jogues Parish to offer low gluten hosts? If “yes”, they will be purchased and the Liturgy Board will create a plan for distribution at Masses. If you or someone in your family is gluten intolerant and you would like to have low gluten hosts available at Mass, please contact Dee Stanton at 847/966-1180 or Julie Higgins at 847/967-5328 (evenings) by July 15th.

HUMAN CONCERNS

Ministers of Care to Meet The Ministers of Care gather tomorrow evening, June 28, at 7PM in the Holy Family Room. The evening’s agenda includes a continuation of the presentation on Advance Care Planning – from the perspective of the Catholic Church – and discussion around the 2010-2011 season and Ministry plans.

Skin & Sun 101 As old Sol resumes a prominent position in the sky, we have left the hibernation of our wintering homes to seek the sun’s rays & pleasant outdoor weather. Exposure to the long awaited light will stimulate the skin’s production of Vitamin D – a “nutrient” essential to bone health, but also will result in tans & burns – and words of caution! The sun emits radiation in the form of ultraviolet (UV) light. UV (A, B & C) radiation is “linked to skin cancers” (basal & squamous cell carcinomas & melanomas) & “premature skin aging.” UVA rays “penetrate deep into the skin” & “are responsible for tanning.” “UVB rays damage superficial skin cell layers causing sunburn.” The majority (95%) of the radiation that reaches the earth is UVA & 5% is UVB. UVB rays are a concern. Sunburns they cause are linked to melanoma – skin cancer’s most lethal form. UVA rays, though, also have been found to increase our risks for skin cancers. Thus we need protection from both types – whether the source is natural light or a tanning lamp. UV rays emitted from a tanning light primarily are UVA (causing tanning), their intensity, however, may be 3 times that of the sun. A 2002 study conducted by the National Cancer Institute, showed “a 50% increase in the risk of basal cell carcinoma” & more than 100% increase in squamous cell carcinoma.” Another report, an analysis of 19 studies on indoor tanning & the risk for melanoma, yielded sobering results. “People who started indoor tanning before age 35 had 75% risk of developing melanoma.” Interestingly, since 2002, the US National Toxicology Program has listed “UV radiation from any source as a known carcinogen.” “Both UVB and UVA rays damage the cell’s DNA potentially causing mutations that may lead to cancer.” Next week: Skin & Sun 102 Pat Kellen, Parish Nurse, Advocate Health Care/ St. Isaac Jogues Quotes from: Celeste Robb-Nicholson, MD, “Is a Tanning Bed Safer that Sunlight?” Health & Fitness, Daily Herald, Mon., March 22, 2010, pg. 8.

The Nurse Is In… Pat Kellen, our Advocate Parish Nurse, will hold office hours on Sun., July 11 from 8:30AM to 1:30PM in Room 6. For an appointment, please call her at 967-1094.

AT A LOSS When wealth is lost, nothing is lost; when health is lost, something is lost; when character is lost, all is lost.

- German proverb

The Mass Book is now open. Anyone wishing to reserve Masses for loved ones or special in-tentions may do so. Please note: we will take only one intention for each liturgy. We sug-gest a $10.00 stipend for each Mass. According to the Code of Canon Law 948: Separate Masses must be applied for the inten-tions of those for whom an individual offering, even if small, has been made and accepted. What is normative in the practice of the Church is that there be separate individual Masses offered for individual intentions. Therefore, the practice of combining individ-ual intentions on a regular basis has ceased at St. Isaac Jogues Parish.

June 9, 2010 Dear Father Andrew, Thank you for the generous response of St. Isaac Jogues Parish to the Catholic Charities 2010 Mother's Day Appeal. We received your parish collection on 6/4/2010. More people are turning to us for help: those who may have lived in poverty for years as well as those whose lives were upended by the latest economic recession. With your support, we can be here with open arms, to shelter, protect and comfort those in need. We reaffirm our commitment to treating each individual with the dignity and respect he or she deserves. I extend my gratitude to you and your parishioners for all that you do for Catholic Charities. BLESSED JUNÍPERO SERRA (1713-1784) July 1

No one who has stood before the quiet majesty of Mission San Juan Capistrano, or the altogether different but no less lovely Mission Dolores in 'San Francisco, or any of the missions from San Diego to Sonoma can fail to bless the Franciscan padre who, while not founder of each, was inspiration for them all, Blessed Junípero Serra. Abandoning the comfortable academic life to which his doctorate in theology entitled him, Serra journeyed to the New World where his tireless traveling, dramatic preaching, and penitential austerity converted thousands of native peoples. Saving souls and celebrating the sacraments were Padre Serra's primary mission but not his only one. Education in letters and crafts, trades and agriculture transformed the people, while roads and irrigation systems transfigured the landscape. His more than thirty years of ministry were not free from conflict with authorities or without controversy in the retrospectively critical eye of history. But when John Paul II beatified him in 1988, he praised Padre Serra for assisting his converts to use their new faith to advance their true human development. - Peter Scagaelli, © J. S. Paluch Co.

ADDING NAMES TO THE PARISH SICK LIST It has always been the policy of St. Isaac Jogues to offer our parish community an opportunity to pray for those parish-ioners who are ill and in need of our prayers. We have tried to keep close track of these names for our Bulletin as they are made available to us. However, now we face an important privacy issue, very much like the issues faced by hospitals, health institutions, and certainly by other parishes. We cannot (by law) publicly let our parish community know the health status of any of our members without their permission. We appreciate the fact that often friends, neighbors, and acquaintances wish to do something special for a person who is ill, and ask to place their name on the list to be prayed for. While their intentions are surely good, we simply can no longer accept names in this manner. We will institute a new process regarding calling in names for the Bulletin list. Names for the sick list placed in the Bulletin have to be called in by the person who is ill, or by a member of their family. At the time they call in the name, they will be asked whether they are the sick person him/ herself, or a member of their family, and if they give permission for the name to be placed on the list. They will be asked for the cor-rect spelling of the sick person's name. If a family member, they will be required to give their name for our records. Thank you for your patience regarding this new process. We wish to do all we can to offer our parish community the opportunity to offer prayers for those who are ill — but we must also be cognizant of the fact that all members of our con-gregation are entitled to their privacy in this regard.
