Salt cod frittersRecipe

Method1. Soak the salt cod in cold water for at least 24 hours,

changing the water two or three times. The cod should swell as it rehydrates. Sample a tiny piece. It should not taste unpleasantly salty when fully rehydrated. Drain well and pat dry with kitchen paper.

2. Cook the potatoes, unpeeled, in a pan of lightly salted boiling water for about 20 minutes, until tender. Drain. As soon as they are cool enough to handle, peel the potatoes, then mash with a fork or use a potato masher.

3. Pour the milk into a pan, add half the spring onions and bring to a simmer. Add the soaked cod and poach very gently for 10-15 minutes, or until it flakes easily. Remove the cod and flake it with a fork into a bowl, discarding bones and skin.

4. Add 4 tablespoons of mashed potato to the cod and beat them together with a wooden spoon. Work in the olive oil, then gradually add the remaining mashed potato. Beat in the remaining spring onions and the parsley.

5. Season with lemon juice and pepper to taste. Add one egg to the mixture and beat it until thoroughly combined, then chill until firm. Shape the chilled fish mixture into 12-18 balls, then gently flatten into small round cakes. Coat each one in flour, then dip in the remaining beaten egg and coat with dried breadcrumbs. Chill until ready to fry.

6. Heat about 3/4 inch oil in a large, heavy frying pan. Add the fritters and cook over a medium-high heat for about 4 minutes. Turn them over and cook for a further 4 minutes on the other side, until crisp and golden. Drain on kitchen paper, then serve with allioli, lemon wedges and salad leaves.

Ingredients 1 1/4 lb floury potatoes 1lbp salt cod6 finely chopped onionsJuice of 1/2 lemon Plain flour (for dusting)2 tablespoon chopped fresh parsley 3 1/2 oz dried white breadcrumbs Olive oil, for shallow frying Lemon wedges and salad leaves, to serve

Pop-up Restaurants

The Dining RoomWeymouth is seeing so many new restaurants opening up this summer, all in time for the Olympics. The restaurant scene has never been so vibrant. But a new phenomenon (to Weymouth) is the emergence of Pop-up restaurants.

Pop-up’s are temporary restaurants and often operate from a well known building, private home, former factory or similar places during a festival time.

Pop-up restaurants have been popular for a while in Britain but they are not a new idea. They have existed for years in Cuba, known as 'Paladares' where local cuisine is simply served from private homes. Of course nowadays diners can make use of social media, such as blogs and Twitter, to follow the movement of these restaurants and make online reservations.

Pop-up restaurants are an ideal way to gain exposure for young professionals with skills in the field of hospitality, usually with the aim of attracting attention and potential investors in order to open a restaurant or another culinary concept. Masterchef Professional Finalist 2011 Claire Hutchings and her partner Ibraheem Musleh have recently opened a pop up in Cafe Vie D’Amour with this in mind. The menu is innovative and should be a real treat for locals and tourists alike. Another pop- up due to open in July is Salt in Brewers Quay. Salt will be a pop-up-bar and kitchen serving local seafood and will be another great addition to a wonderful foodie scene in Weymouth. We wish these new ventures great success.

Here at The Dining Room we have held three really successful supper clubs, Spanish, Moroccan & Japanese nights. It was great to see so many locals really relishing these international cuisines. We look forward to creating many more of the supper clubs and making them a regular feature at The Dining Room – watch this space for more details. For now, we are enjoying the response to our new menu and are looking forward to a busy summer.

With the recession biting and unemployment figures rising, for millions this is a time of heightened uncertainty and change, leading to increased anxiety and putting a strain on individuals, relationships and families.
