ONDERVOEDING = NU NOG EEN PROBLEEM?
… Every careful observer of the sick will agree in this that thousands of patients
are annually starved in the midst of
plenty, from want of attention to the
ways which alone make it possible for them to take food …
Notes on Nursing

Verenigde Staten:
• 3.7 miljoen ondervoede ouderen
• Prevalentie = 25%
België:
• Uit onderzoek blijkt dat iets meer dan
één op de tien Belgische ouderen
ondervoed is.
• Gezien de gezondheidstoestand van de
oudste ouderen is de incidentie hoger in ziekenhuizen en in woonzorgcentra
dan gemiddeld bij thuiswonende
ouderen.

million people aged over 65 years
• In 2050: triple to more
than 1.5 billion

voedingspatroon
• WERK OP MAAT EN GEEF INSPRAAK: fingerfood, reologie, empowerment

VOEDING METEN? Project in 2014:
Development of a quality of meals
and meal service set of indicators
for residential facilities for elderly
TREFDAG ONDERVOEDING, PROF. D. BEECKMAN, 2016
WAT IS EEN INDICATORENSET?
o Information is required to give an opinion on the quality of care
o This information is obtained by measuring
o An indicator gives meaning to a measurement, it has a signal
function o However, an indicator becomes meaningful if a norm is determined
o A deviation from the norm needs to be adjusted (e.g. by quality
improment projects)
A quality indicator is a method of measurement
which gives data thaty may be related to the quality of a service. (Øvretveit 2001)

MEASURE AT DIFFERENT LEVELS
Structural indicators
o Indication of the organizational conditions to provide care
Process indicators
o Indication of the care processes in an organiszation
Outcome indicators
o Indication of the outcome of care

HOE BEREKENEN?
TREFDAG ONDERVOEDING, PROF. D. BEECKMAN, 2016
DISCUSSIE
o The first short and simple set of meal quality indicators
o 13 quality indicators covering food, food service, choice, nutritional screening
o Structure, process, and outcomes measured
o Content validated using a multidisciplinary experts (BE and NL)
o Feasibility in practice should be assessed in future studies
TREFDAG ONDERVOEDING, PROF. D. BEECKMAN, 2016
DISCUSSIE
o Quality indicators
o start point for dialogue
o motor of improvement, not the goal
o Guide meal and meal service quality improvement projects
o In collaboration with kitchen staff and health care
professionals
o To improve food intake and
reduce risk of malnutrition
among elderly in residential facilities

CONCLUSIE
28
• Blijvend significant maatschappelijk
probleem met grote gevolgen
• Groot potentieel om grote impact te hebben (door soms kleine
interventies)
• Blijvende en steeds toenemende
aandacht is noodzakelijk • Screenen + actie + monitoring =
succes
• Complexe diagnostiek en risicobepaling
• Nood aan multidisciplinaire en
transmurale opvolging en bijsturing • Nood aan indicatoren om kwaliteit te
meten
