Sicilian Aubergine Stew

6 aubergines

1 onion

Olives(250g) andolive oil (1 spoon)

Capers (50g)

IngredientsTomato sauce

Ingredients

wine vinegar(3 spoons) Sugar

Preparation

• Cut the celery ribs in bite-size pieces .

• Blanch them in lightly salted water for five minutes.

• Cut the aubergines in chunks .

• Fry the diced aubergines in hot oil.

Preparation• Sear finely chopped

onions.

• Add tomato sauce and cook for a few minutes.

• Add celery and stir gently.

• Add the fried aubergines• Add the olives

• Add the capers•Dizzle with sugar

and vinegar .•Season with salt

and pepper

Serve it cool with fresh basil. Enjoy it!
