Fish Tacos with Watermelon
Ingredients
4 cups diced seedless watermelon
1/2 small red onion, finely diced
1/2 cup roughly chopped fresh cilantro
Juice of 2 limes, plus lime wedges for serving
1 jalapeno pepper, seeded and finely diced
1 tablespoon plus 2 teaspoons extra-virgin olive oil, plus more for brushing
Kosher salt
1 pound skinless wild striped bass fillets
1 teaspoon chipotle chile powder
1 romaine lettuce heart, thinly sliced
8 corn tortillas
1 avocado, sliced
Directions
Make the watermelon salsa: Combine the watermelon, red onion, cilantro, lime juice and jalapeno in a bowl. Toss with 1 tablespoon
olive oil and 1/2 teaspoon salt and set aside.
Preheat a grill to high. Sprinkle the fish on both sides with the chile powder and 1/2 teaspoon salt; drizzle both sides with the remain-
ing 2 teaspoons olive oil. Brush the grill with olive oil, then add the fish and grill until marked and cooked through, 4 to 5 minutes per
side. Transfer the fish to a plate and break into bite-size pieces.
Meanwhile, toss the lettuce with 2 tablespoons of the juices from the watermelon salsa and a pinch of salt. Warm the tortillas on the
grill and fill with the fish, watermelon salsa, avocado and lettuce. Serve with lime wedges.
Key Lime Pie
Ingredients
1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
4 tablespoons (1/2 stick butter) melted
2 (14-ounce) cans sweetened condensed milk
1 cup key lime or regular lime juice
2 whole large eggs
1 cup sour cream
2 tablespoons powdered sugar
1 tablespoon lime zest
Directions
Preheat the oven to 375 degrees F.
In a bowl, mix the graham cracker crumbs, sugar, and butter with your hands. Press the
mixture firmly into a 9-inch pie pan, and bake until brown, about 20 minutes. Remove
from the oven and allow to cool to room temperature before filling.
Lower the oven temperature to 325 degrees F.
In a separate bowl, combine the condensed milk, lime juice, and eggs. Whisk until well blended and place the filling in the cooled pie shell.
Bake in the oven for 15 minutes and allow to chill in the refrigerator for at least 2 hours.
Once chilled, combine the sour cream and powdered sugar and spread over the top of the pie using a spatula. Sprinkle the lime zest as a
garnish on top of the sour cream and serve chilled.
Here are some delicious recipes that should spice up and tame your cravings these summer nights!

The numbers 1-9 have to be in each box, row and column. So if you have one
with 8 numbers, you can work out the last one. And you can see where a number
goes in a box if it’s in that row or column, you can’t put it in that row or column
in the box.

Let’s begin by introducing myself. My name is Todd Draffen, the golf course superintendent here at TPC Treviso Bay. I
am very pleased and excited to be working here at Treviso Bay. I feel we have a very great and special golf course and I
enjoy every day that I come to work. Let me give you a little history of myself and background information. I have a
Bachelor’s of Science, in Wildlife Science, from Purdue University and a Bachelor degree in Agronomy from The Ohio
State University. I moved, with my wife, to Fort Myers in 1998 and started working at Collier’s Reserve County Club.
Then I went to The Old Collier Golf in 2000 and worked there until 2007 when I came to Treviso Bay. I started here dur-
ing the construction of the golf course and have been here through thick and thin. It has been an exciting ride. I am ex-
cited be able to meet as many of the members as possible. One of my jobs here at Treviso Bay is to educate the mem-
bers on golf course management. I will from time to time some information in the newsletter concerning things on the
course that we are doing or other things that might be of special interest.
I am going to start with aerification. I know that golfers do not like when the golf course has recently been aerified, it
disrupts their round of golf. Aerification needs to be seen as long term preventative measures to help ensure that we
have healthy turf grass year round. When we aerify the golf course, we will do the whole golf course and get things
cleaned up. There are many benefits to aerifying turf grass. The first is that it helps relieves compaction, when we
loosen the soil, it helps oxygen, water and nutrients to enter the soil profile. The second is aerification improves soil con-
ditions near the surface where the majority of root development occurs in turf grass. The third reason is that aerification
helps reduce thatch. There are many other benefits of aerifying, increased soil microorganism activity, water penetra-
tion, helps alleviate soil dry spots. The benefits far outweigh the negative aspects of having a bumpy green for a week
after aerification.
Below there is a diagram that helps explain the benefits of aerification and photo of the aerification process. One com-
plaint that many golfers have is that superintendents always tear up the golf course in the summer. That is true due to a
couple of different factors. The first and main is that when we aerify, it does a lot of stress on the plants, and during the
summer the plant is growing the best, the plants are able to recover in the shorts amount of time with the minimum in-
puts. The second is that we have the fewest golfers in the summer months, and it gives up the minimum disruptions to
the fewest members.
