VINEYARD:
Seven Springs is in the Eola-Amity Hills just north of Salem, the vineyard was
planted with Pinot Noir, Chardonnay and Gamay in 1984 with direction from
Bordeaux legend Dominique Lafon. It lies close to the Van Duzer corridor, an
opening in the Oregon Coastal Range which allows cold Pacific air to flow into
the valley, slowing down the ripening of these short-cycle varieties. The grapes for
Summum, their prestige Chardonnay cuvee, come from a thread of 14 rows of
vines, that run along the spine of Seven Springs, grown on volcanic soil
VITICULTURE:
From the start the vineyard has been dry farmed and grown following LIVE
sustainability methods, and since 2007 it is also managed following biodynamic
practices.
WINEMAKING:
The grapes are handpicked and gently whole bunch pressed on a Champagne
press cycle. The must is then fermented in new 500l Stockinger puncheons using
natural yeasts. Following fermentation, the wine stays in these large barrels for 10
months before being racked to tank. It rests a further six months in tank.
This wine is suitable for vegans and vegetarians.
TASTING NOTES:
An inviting nose of lemon oil, tangerine rind
with a touch of vanilla. Wet stones, citrus zest,
brioche and baking spices all coming together
beautifully in the glass – combining to make an
intense, lithe and focused palate with a precise,
mineral driven finish. A wonderful example of a
world-class, age-worthy Chardonnay from
Oregon.
