SULTANAS:PRODUCT DESCRIPTIONSultanas belong to the grapevine family (Vitaceae) and arenative to the Caspian Sea. Currants, sultanas and raisins,
including those still on the bunch, are known collectively as"raisins. The difference between these three dried fruits isexplained below:Sultanas: seedless, large-berriedandlight yellow. Largerthancurrantsandsmallerthanraisins.
Currants: seedless, small-berried, purple/blackcolor. TheirnamederivesfromtheGreekcity ofCorinth.Raisinsonthebunch: seeded, large-berried, generally withstalk.
To produce: thegrapesaregrownonthesultanagrapevine. Thegrapesareharvested when overripe. They aretheneitherair-
driedorincreasingly dried in special drying plants. Mostsultanasarebleached(sulfured) afterdryingand mechanicallydestalked in ordertoextendtheirstoragelifeand preventsubsequentdiscoloration. Suchtreatmentmustbeindicatedappropriately onthe packaging.Treatment with vegetable oils isintendedto preventthesultanasfromstickingtogether.

is used in Sultanas production, 30 % is used asconfectionery industry and 3 % is used in wineindustry. Seedless grape takes the first place in ourexport of the table grapes. A seedless variety, sultani

DIPPING
Grapes are dipped into a dipping solution before drying,
in order to remove the natural wax from the skin of thefruit. This accelerates drying (max. 10 days) as the wateris able to remove faster, thus decreasing the rate ofenzymatic browning reactions. Consequently, lighter
colored Sultanas are obtained compared to the non-di ed Raisins.

Sun Dried Sultanas are bleached with SO2 (to avoid deterioration anddiscoloration). Well-dried Sultanas are pre-cleaned by winnowing andremoving large pieces of stalks, stones, very light berries and foreignmatters by means of Sieves and Aspirators. Pre-sized and Packed Sultanas
are transported to the Markets or directly Factories.
