The magic and charm of San Cristobal is a cultural fusion that can be felt in its streets, reflected in its people, seen in its traditions and, ultimately, rejoices in his food. The cuisine of the city is a living cultural expressions that shows our identity. Its blend of flavors have been carefully guarded to preserve the secrets of our ancestors and conquer those who have the good fortune to enjoy them. So worth transcend. The mixture was gourmet ingredients brought from Spain in the sixteenth century, came to enrich our vast menu. While in pre-Hispanic cultures corn, co-coa, beans and peppers were the basis of our food, the Spanish colonists introduced wheat, sugarcane, spices, vegetables and livestock - making the meat a -. essential At the beginning of the colonial period, the difference between the diet of Spanish and Na-tive Americans was very strong, but it was merging to create a rich and varied, keeping the flavor of our roots, has acquired distinctiveness and has managed to do with experience and saucers in every way. Our culinary arts - as well as being enjoyed by those we found in Chiapas the best place to live - should be investigated and promoted in the world because they enrich the tourism industry, keeping alive the culinary culture of Mexico.
