Why do you need to humidify in your bakery? Every baker knows it: the right humidity of the dough is vital for the quality of the product. If the humidity is not right, air bubbles inside the dough will develop and the outer layer can become too dry which will result in a harder crust. All this decreases the quality of the bread, rolls and pastry. Another major problem in bakeries is flour dust. Flour dust will be inhaled. As a result many bakers develop an allergic reaction to flour dust, which causes many respiratory problems and sick-leave. To counter these problems bakers need to take medicines and have to wear masks creating an unpleasant working environment. Worst case the afflicted persons have to change careers. Humidifiers in a Proofer In general a steam humidifier is used. This has some drawbacks. By using cold water humidifiers the relative humidity can be regulated more precise and the distribution is much better. Furthermore a cold water humidifier uses (much) less energy, requires less maintenance and is more reliable. The installation is easy to install by placing nozzles strategically in the proofer.
Advantages of cold water humidification:

steam humidifier) � Less maintenance � More reliable unit
Flour Dust Allergy As explained many bakers are allergic to flour dust. Most problems are caused when the flour is deposited. During this process a lot of flour dust is created. We can reduce the dust problem significantly by placing atomisers around sources, where dust is created. The water will bind the dust and increase its weight. The dust will then drop. Further the nozzles can “blow away” the dust from the nose and mouth, preventing inhalation. Advantages:
� Reduced absence due to sickness � No or less prevention measures are needed � More comfort because there is no mask

Humidification for the Chute/Funnel Depending on the size of the chute/funnel, one or more atomisers can be mounted on the chute/funnel. A thin water film will be created on the inside of the chute/funnel. Because of this water film the dough will slide through the chute/funnel the same way as it would have done with oil. Therefore there is no need to use oil, saving oil and cleaning. Further the Teflon layer will last longer and quality of the end product will increase because there will be less air bubbles in the dough. Advantages:

Humidifiers in the Bakery For an optimal climate control we recommend humidifiers in the bakery. This way the entire bakery has an optimal humidity. The goods do not have to be covered really fast to protect them against dehydration. Next a more comfortable climate is created for people to work in. A humidifier will also decrease the dust in the air and therefore reduces the allergic reactions to flour dust. Because an adiabatic humidifier is used (cold water) you will also get additional cooling and a more comfortable working environment.

The CI-2 nozzle The main advantage of this product line of industrial nozzles is that they are even less susceptible to fouling. The water jet is atomised inside the nozzle, in which manner a finer droplet size is realised. Refurbishable for a durable world Our air-assisted nozzles are constructed completely in stainless steel. As a result the nozzles can be refurbished without any problem extending the lifetime of the nozzle. You simply close the valves in the supply line to the nozzle, remove it and send it to our factory. We shall clean the nozzle and replace the used parts. Within a maximum of two weeks, the nozzle is returned and you can install it again; good for many years of problem free use.
The CG-3 nozzle The main advantage of this nozzle is its low noise level, only 69 dB(A). Therefore they are often used in places where people are working such as preparation areas and the chute(s). As with the CI-2 nozzle, the water jet is also atomised inside the nozzle, in which manner a finer droplet size is realised. The CG-3 nozzle is also refurbishable, making it a very durable product with a long lifespan.

The Cumulus® pivoting nozzle There are applications thinkable where a stationary air-assisted nozzle is not sufficient enough to do the job. For these purposes Cumulus® has developed a pivoting nozzle. It is equipped with a stainless steel mounting bracket and motor housing. Therefore it is robust and has a long lifespan. When in operation, the nozzle pivots from left to right at a constant speed. Possible applications are:

Pre-Proofers – sub zero temperatures Air-assisted nozzles can also be used very well for pre-proofers. The possibility to change the capacity per nozzle makes them very suitable for sub-zero applications. When freezing, the capacity per nozzle can be reduced to 0.5 l/hr. This creates a very fine spray which will not produce ice. Below zero degrees Celsius the nozzles will be fitted with a small electrical heating element to prevent freezing.
Control systems for air assisted humidification Cumulus® manufactures a number of different humidification control units. From a simple on/off unit to a PLC/HMI controlled unit. Depending on what the customer wants, the control units can be tailor-made, so exactly according to the wishes of the customer. The more sophisticated control units can control 1, 2 or 3 zones. They and are equipped with a RH and Temp sensor. As shown below you can follow the trends of both the relative humidity and the temperature. The parameters for RH and Temperature can be adjusted by the customer as well as the alarm value for RH and Temperature and the RH overshoot for starting the blower.

The LegioSAFE®: an integrated control and central assembly unit The safest and most reliable humidification system suitable for all Cumulus® air-assisted nozzles and humidifiers like the EKO-WS and EKO-RS. The LegioSAFE features a fully automated, adjustable anti-bacterial control system with flushing valves, breaker valve, shutting valves and water filter. All these components are assembled in a stainless steel cabinet, which can be installed very quickly. Water and air pressure are indicated by the integrated manometers. A digital display shows the actual RH level measured by the accurate and very reliable RH sensor. Using this display, the required RH level is set as well as other control parameters.

The humidifiers If you prefer to have a general relative humidity solution for your work room we offer you the possibility of controlling the relative humidity in the entire room by using high-pressure spraying. In work rooms one often finds that the temperature is pleasant but that the humidity in the environment is far below the required level. According to scientists a relative room humidity of between 40 and 60% is required to create a healthy working environment. At the majority of places we conduct measurements the relative humidity does not exceed 35% and is often well below this level. This can cause health complaints amongst your staff, such as headache and trouble with the nasal cavity. By installing a high-pressure system in the room you are able to control the humidity, which is beneficial for your product and equally important for your staff.
High pressure humidifiers with integrated air support: the Flex HP-1, the UFO HP Saturnus and the UFO HP Apollo Contrary to air-assisted nozzles, high pressure humidifiers require supporting air flow to carry the droplets until they are evaporated. If no flow from a chiller is available, we offer humidifiers with strong integrated ventilator. The Flex high pressure humidifier, type HP-1, uses 1 nozzle (capacity from 2 to 3.8 l/hr). It has an appealing design and is almost completely manufactured out of high grade plastic and stainless steel. Various nozzles can be mounted in the unit. A main advantage of the Flex is its very low sound level of 51 dB(A). The UFO HP Saturnus is equipped with 6 nozzles (total capacity 12 to 24 l/hr). Its design is optimised to distribute the droplets strongly and prevent falling of the droplets. There are two versions of this UFO: the radial version and the axial version. In general the radial version is used and mounted from the ceiling at for example 6 to 8 metres. For large high halls, the axial version is perfect. The humidifier is wall mounted and the aerosols are strongly blown in to the space. In this way a good distribution is economically realised.

The UFO HP Apollo The UFO HP Apollo humidifier has been designed to be mounted on a long straight wall or appended from the ceiling in a corridor (for example in a warehouse). The UFO HP Apollo can be supplied in three different units: with 4, 6 and 8 nozzles. The water is vaporised with a pressure of 80 – 100 bars through the stainless steel nozzles and the strong inbuilt ventilator. Because of the inbuilt ventilator the water is evaporated more efficiently. To prevent lime deposits on the humidifiers, causing clogging of the nozzles, and a safe operation of the humidifier, we advise to use reverse osmosis water. To minimise the risk of bacteria growth we recommend to use a maximum water temperature of 8˚C for the humidifiers.
The Cumulus® High Pressure adiabatic terrace cooling system In a lot of countries, bakeries have a terrace where customers can enjoy a cup of coffee or tea and the local made bread and pastry. During the summer, temperatures can reach such levels that without cooling it is not pleasant to sit outside and enjoy. Cumulus® has the solution for this problem in the form of its high pressure adiabatic terrace cooling system. Nozzles are placed in various places to cover the entire surface of the terrace. Cold water is atomised under high pressure (approx. 80-100 bar). The vapour extracts heat from the surrounding air and is therefore creating a cooling effect (known as adiabatic cooling). For safety reasons the water is treated using a reverse osmosis unit or a UV-C disinfection lamp. A reverse osmosis unit removes all the viruses and bacteria as well as the salts and minerals from the water. The water is treated to ensure no viruses or bacteria (such as Legionella) are dispersed in the air. The salts and minerals are removed to prevent precipitation of a fine white dust and clogging of the nozzles, caused by the salts and minerals (such as lime) that are present in the water.

Control units for high pressure humidification Cumulus® manufactures a number of different humidification control units. From a simple on/off unit to a microprocessor controlled unit. With the range of control units every wish can be realised. Each type has its specific functions, which you can find in the table on the right. An important function of the control unit is to ensure the Legionella safety of your installation. Cumulus® control units are (apart from the most simple ones) furnished with the WaterFresh® system. This system ensures that the bacteria free RO water can not be infected. This is especially valid for the hot summer months, when the humidification might not be active for a longer period.

At Cumulus®, we believe that humidification is an essential element of a healthy and productive indoor climate. This means that a large part of the year the humidity should be increased artificially. All this is done energy efficient, project specific, reliable and Legionella safe: in one word sustainable.
