• There are a few steps to getting the dry aged beef you love

Step 1
• Purchase the whole ribeye or loin strip beef you choose
• Whole ribeye and USA Prime or Upper 2/3 Choice beef are the highest quality beef and best for dry aging
• Keep in mind you can not age an individual steak
Step 2
• Unwrap the meat and rinse it well with cold water allowing it to drain before patting it dry with a paper towel
• Immediately wrap it in a large towel and set it on the bottom shelf of your refrigerator
Step 3
• Here is the easiest step. Carefully change the towels every day and replace them with fresh ones
• This will go on for 7-21 days
• The amount of time depends on your desired aging time
Step 4
• When the meat has reached the amount of time you prefer unwrap the meat using a sharp knife
• You will want to remove the hard, dried outer layer
• Trim as desired from roast beef or cut into individual steaks
