its 25th anniversary and the Fourth of July
with a special annual promotion titled “A
World of Cuisines.” The 35,290-square-foot
complex offers a one-of-a-kind culinary
experience for locals and tourists alike,
with a wide selection of ethnic restaurants
all in one setting, such as Vietnamese, Thai,
Chinese, Japanese, Korean, Italian, local
plate lunches and fast food establishments.
Dining Out recently caught up with McCully
Shopping Center’s marketing director Terri
Hansen over a spread of entrees exquisitely
prepared by top-notch chefs from the cen-
ter's many restaurants, where we explored
the many facets of culinary magic that
spans all continents and cultures.
DO: McCully Shopping Center was found-
ed in August 1986, and throughout the
years has served as an integral gathering
place in our community, wouldn’t you
agree?Hansen: Yes, when the shopping center
came into fruition the concept was to serv-
ice the community. We have various servic-
es here that cater to nails, hair, makeup,
waxing, body boarding, etc. We’re not just
restaurants, although restaurants eventual-
ly began opening one after the other — and
we’ve always kind of been known for our
many restaurants. All of them are top-grade
restaurants where customers frequent over
and over again. Our restaurants here basi-
cally offer any cuisine that you can think of
and it’s not hard to appease everyone.
DO: “A World of

taste buds by trav-
eling the world with
our many restaurant selections, including
Curry House, Fook Yuen, So Gong Dong,
Regal Diner, Phuket Thai, Yotteko-Ya (one of
the best ramen you'll find in the state),
Banana Leaf Pasta Cafe, Bistro Ah Un, Taco
Bell, Pho 777 and our newest addition, Hot
Pot Heaven, where you can order anything
from a Thai broth, to a Hawaiian broth, to a
vegan broth.
DO: There’s also going to be a prize draw-
ing for an amazing trip as part of this pro-
motion. Can you elaborate on this?
Hansen: This is a promotion that we’ve
been doing for the past six years, and every
year McCully Shopping Center sends a
lucky winner and his/her companion some-
where around the world. This year we’re
sending two lucky winners to Las Vegas.

Hansen: For starters, Banana Leaf PastaCafe is known for its Italian food, specifi-cally its Seafood Risotto ($14.95), anItalian-style rice simmered with shrimps,mussels, clams and calamari in tomatosauce or a light cream sauce. Fook YuenSeafood Restaurant offers up Live MaineLobster ($10.99) in four different styles:garlic and butter sauce, ginger and greenonions, black bean sauce or with salt andpepper. Yellow Curry with Shrimp($11.95), Red Curry, Green Curry and

DO: Hawaii is well known for its exoticblend of cultures. Do you believe this ishighly represented in McCully ShoppingCenter's variety of food establishments?
Hansen: Yes. I want to say there’s notanother place on the island that has asmany restaurants as we do in such closeproximity of each other. I mean, literally,you can go out one door and into anotherrestaurant. Not only are we a world ofcuisines, but most importantly, we’re con-venient — we have ample parking down-stairs in our basement — and we're herejust to service the community. We alsohave a few more eateries, such as Coffeeor Tea and Snow Factory, which also arequite popular.
DO: Do you think it’s the restaurantsthat draw in the majority of your cus-tomers to McCully Shopping Center?
Hansen: Oh yes, our restaurants defi-nitely draw in the majority of our cus-tomers. Without the restaurants, I thinkthe center would have a totally differentlook and feel to it. We cater to everyone —locals and tourists, and we've gotten a biginflux of college students since theUniversity of Hawaii is just down the roadas well. And the diversity of customersfrom UH really helps with the ethnic flairhere.

So where does Zippy’s get the inspiration for its tasty menu offerings?According to Charlene Kim,the restaurant’s administra-tive director, suggestionsfor new items come fromcustomers, employees andproduct vendors, and arepassed on to research anddevelopment chef WayneKomamura and the menuplanning committee. Aftersamples are created, theyare tested and tweakeduntil being deemed readyfor the menu. “It’s reallyneat,” says Kim of theprocess. “(Komamura) willcome up with a lot of ideasfor items that aren’t on ourstandard menu. The itemsalso are designed to be pre-pared and served easily byour staff.”
As part of Zippy’s continu-ing health and wellness ini-tiative, the restaurant isserving up two new saladchoices available 24 hours aday through August in thedine-in restaurant only. TheTeriyaki Beef Salad ($9.95) includes strips of broiled teriyaki beef topping a bedof Nalo greens with grape tomatoes, cucumber medallions and chopped eggserved with Zippy’s house dressing. The Apple Pop Salad ($8.75) includes Nalogreens, apple slices, grape tomatoes, mozzarella cheese and kettle corn pop-corn served with a zesty lilikoi vinaigrette dressing. The latter creation is the
brainchild of Zippy’s Kahala Restaurant cook TrevorLuke and former employee Brandon Lee who won asalad making challenge at a recent employee picnic.
“We came up with (the challenge) as part of ourhealth and wellness initiative,” Kim says. “One of theprizes was putting the winning salad on the menu andintroducing it to the public. Chef Alan Wong was thecelebrity judge, and he called the salad ‘refreshing and really
creative.’ The combinationreally sold the judges.”
Luke, who was trained atthe Kapiolani CommunityCollege Culinary ArtsProgram, got the idea forthe unique salad combina-tion while flipping throughone of his many culinarybooks. “I read that lilikoiand champagne vinegar goreally well together,” hesays of the salad’s tangydressing. “Then, I threw insome li hing powder, andadded the popcorn as acrunchy element. It all justcame together and itworks really well.”
Just in time for theIndependence Day holi-day, Zippy’s has anotherspecial worthy of fanfare.The BBQ Smoked TurkeyDrumsticks ($10.95)includes two large drum-sticks tossed in a tangybarbecue sauce, and isavailable now through
July 4 from 10:30 a.m. to 9:30 p.m. in the dine-in restaurant only. The drum-sticks come with hot vegetables and a choice of white or brown rice, mashedpotatoes or french fries.

sine (makes us different) — his foodhas that local flair. What he’s done isincorporate that local flair style intohis menu.”
The local flair that’s infused intoChoy’s cooking truly captures theessence of the eatery and caters toisland residents.
“The mission or vision for therestaurant is to portray the Alohaspirit with great food and service,”he says. “The food is good for thelocal style cuisine, which incorpo-rates families. It’s a family-typeenvironment restaurant.”
With that in mind, it’s no wonderthat some of the most populardishes on the restaurant’s break-fast, brunch, lunch and dinnermenus have a distinct local flavor.Among the most requested appe-tizers Golden Fried Calamari($10.95), Sam’s Original Fried Poke($10.95) — wok-seared marinatedisland fish with furikake — andSteamed Manila Clams ($13.95),served in a ginger miso pestobroth. Lunch favorites includeFried Poke Salad ($14.95) — mixedgreens and somen noodles coveredwith Sam’s famous fried poke —and “Da Hilo Original” Loco Moco
($12.95), a local-style homemadehamburger patty served with riceand topped with sautéed onions,two farm fresh eggs and Sam’sbrown gravy. Popular dinnerentrees include Kalbi MarinatedButterfish ($29.95); Crab & ShrimpLouie Salad ($23.95), featuring Nalogreens, somen noodles, egg,cucumber and tomato topped withcrab and shrimp salad as well asking crab; and the Crab meatStuffed Island Fish ($27.95), whichis baked with Choy’s famous shi-itake mushroom cream sauce.
Instead of having a signaturedish, Choy’s shiitake mushroomcream sauce is the eatery’s signa-ture sauce, according to Gaspar.
“He’s (Choy’s) known for his shi-itake mushroom cream sauce,” hesays. “He’ll use it on a couple of hisdishes on the menu, such as theMacadamia Nut Crusted Chicken($19.95), and people love it.”
The restaurant also is knownfor its desserts, which have theirown menu.
“We do our own in-housedesserts,” Gaspar says.“Everybody always heads towardthe banana bread pudding, pineap-ple cheesecake or key lime pie.”

“Before Capt. Cook” Poke ($14.95) — marinat-ed ahi with limu kohu, green onions, Hawaiiansalt and inamona — which was just addedabout a month ago. Seafood Skewers ($24.95)— scallops, shrimp, island fish and assortedvegetables atop a rice pilaf — and RibeyeSteak ($27.95) also are newcomers to themenu.
The restaurant also has recently revampedits daily specials. In addition to the Monday-Friday “Early Bird” special (7-7:30 a.m.) — $3.99for an assortment of fruits, eggs or fried riceand eggs — the restaurant presents its cus-tomers with a new lineup of evening specials.
“Monday is ‘Two Pound Snow Crab Night’;you get two pounds for $25.95,” Gasparexplains, listing a few of the specials.“Wednesday is ‘Prime Rib Night,’ and that’san 18-ounce prime rib for $19.95. Friday is‘Aloha Friday’ with the Hawaiian plate andlive entertainment from 6 to 9 p.m.”
Besides these daily specials, July bringsadditional promotions because of the restau-rant’s 14-year anniversary. From July 1 to 31,all guests who dine at Sam Choy’s for threemeal periods — breakfast/brunch, lunch anddinner — will earn a $20 passport certificate,which can be used before Sept. 30. Therestaurant also continues to have a daily
Happy Hour from 5 to 6:30 p.m., during whichcustomers can order $3 pint beers and full-price appetizers are 50 percent off.
In terms of upcoming changes, the restau-rant is looking to expand this fall with theopening of the “Aloha Beer Garden.”
“There’s going to be an addi-tion to the restaurant; it’s like anexpansion,” Gaspar says. “It (theAloha Beer Garden) will be moreof a lounge type bar atmospherewith pupus. We are our own brew-ery and we do have a brew master.”

The event features allthings mango — from local farmersand growers sharing their productsto seminars about cultivating yourown fruit to cooking contests. Andof course, beachhouse at the Moanaoffers a selection of mango appetiz-ers, entrees and desserts through-out the day.Admission is free and open to the
public, but you must purchasescripts for some of the tastings.Mangoes at the Moana began
when beachhouse manager AudreyKamiya decided that she wanted tohost an event centered around a popularitem. The mango, she says, is the perfectchoice. “The mango appeals to every-body, the locals and the visitors alike,”says Kamiya. “The mango is seasonal, soyou can’t get it all the time.” Whenmango season does come around — thepeak of which is typically June and July— the delectable fruit is in high demand.
And the Islands have some of the best.Many of the mangoes will be locallygrown. “It’s another way to highlight thelocal growers and farmers,” saysKamiya.The event also is combined with the
second annual Mango Throw Down — acooking competition among 11 localcelebrity chefs who will prepare dishesusing mangoes as the main ingredient.
The chefs include Darren Demaya ofRum Fire, who will prepare ButterPoached Kona Cold Lobster, CurriedMango Vinaigrette with Green MangoSalad and Mango Salsa, and NormanSoderberg of beachhouse who will beprepare Braised Beef Short Ribs withHamakua Mushroom Risotto Cake,Mango and Chipotle infused DemiSauce with Island Mango Chutney. Each of the dishes will be available
for tasting with the purchase ofscripts. “It’s a good chance for thepublic to sample [the chefs’] uniquecreations,” says beachhouse mangerAudrey M. Kamiya. Proceeds gotoward the UH Culinary Institute ofthe Pacific. Chef Lee Anne Wong ofTop Chef fame will judge the contest. And don’t forget to bring your own

Shabu shabu is a warriors’ meal,dating back to its creation in the13th century. Concocted by
Mongolian emperor Genghis Khan,shabu shabu (as it is called today) wasa quick, efficient and nutritious way tofeed Khan’s army regime while in com-bat.Now, thankfully, we
may all enjoy a shabushabu meal — withoutthe pressures of anintruding army marchingupon us — particularly atHanaki in ManoaMarketplace. Hanakioffers a variety of brothsfrom which your shabushabu dish shall begin.“We have mild soups

“We have about a dozen differentdipping sauces you can create. Wealso have a house sauce we made up.You can also create your own with ourchili pepper, garlic or ginger flavors orjust have plain shoyu,” Mitsuyoshiadds.As an a la carte menu item the shabu

Yakiniku restaurants seemto have blown up in thelast few years, becoming
the latest trend in Hawaii practi-cally overnight. New yakinikuvenues have popped up all overthe island, giving diners plenty tochoose from.
Bouan Fujieki, Elliot Kim andBradley Shigezawa say that theyhave found the best of the bunchat McCully eatery CamelliaBuffet. They dined there recentlyfor the all-you-can-eat buffet(lunch $15.95; dinner $22.95), andsay that this incredible deal hasdrawn them in again and again.

Mini Garden is offering cus-tomers a major deal thissummer — 20 percent off
all takeout orders (excluding vege-tarian dishes, which will be offeredat 10 percent off), as well as 10 per-cent off all dine-in meals.“We are doing this because the
economy is really bad right now,”
explains owner Yinnie Chiu. “Theportions are big, and it’s cheaperthan if you were to cook (thesemeals) at home, and there’s morevariety for you to choose.”There are around 250 items on the
menu, but Chiu says a few of therestaurant’s top sellers are the ChefSpecial Crispy Shrimp Balls ($14.50),Braised Brisket and Tendon withBean Curd ($12.95), and Mini
Garden’s Best Quality Roast Duck($8.95) and Char Siu ($8.95).Perfect as a light summer meal or
savory treat-to-share before the maincourse arrives, the Crispy ShrimpBalls are eight whole shrimps thathave been battered and deep-frieduntil golden and slightly crunchy onthe outside yet still sweet and juicyon the inside.For the Braised Brisket and
Tendon with Bean Curd casserole,Chiu says they slow-cook the brisket
and tendon for more than fivehours, leaving the meatextremely soft and tender.They also use fresh bean curd,which lends a richer flavor notachieved from using the driedvariety.But possibly the best-kept
secret of Mini Garden is theRoast Duck and Char Siu,which are both prepared freshevery day with a special blendof seasonings and roasted sothat the meat comes out hot,crispy and full of flavor.“Our duck is real famous
because not too many placesroast their own duck,” Chiusays.Since dining is family-style at
Mini Garden, the portions aregenerous and meant to be
shared. Even then, Chiu says some-times diners will be unable to finishtheir meals and take home the left-overs for another day.

Mini Garden has along-standing rep-utation among
local foodie circles asbeing one of the best Chinese restaurants onthe island. Since opening in Chinatown in1973, the family-style eatery has suppliedhungry diners with a range of authenticChinese and vegetarian cuisine, from CrispySpring Rolls and Gau Gee ($7.50 each), toOng Choy with Bean Curd Sauce ($8.95), MaPo Tofu ($9.50), Shrimp Fu Yung ($9.95), GonLo Mein ($8.95) and a smattering of congee,fried rice and noodle dishes.“It’s healthy Chinese food,” says owner
Yinnie Chiu, who, along with her sister, hasbeen in charge of operations since 1997.“We use very little sodium and no MSG
upon request.”In 2005 Mini Garden moved to a space at
2065 S. Beretania St., which left some customerswary that the food they had grown to love may havebeen left behind.
“We carried all our original recipes with us,” Chuiassures. “The won ton, the roast duck and the char siuare the same recipes that have been around forever.”However, there are a few new items not to be dis-
missed. For example, they recently started offeringcustomers a complimentary dessert with each meal.
“In Hong Kong, every Chinese restaurant will offerdessert,” says Chiu, who moved from the city-stateto Hawaii in 1978.Called a “float,” the free after-meal treat is similar
to a sorbet and comes topped with choice of freshstrawberries, mango, lychee or guava.“This will complete your meal,” says Chiu.
“Something sweet to clear your palate and coolyou off ... A lot of customers come back just forthe dessert!”

reminds people of all thoseuncles in their lives,” says man-ager Sean Simpson. “We have alot of family photos on the wallshere, and actually the owner,Bruce Johnson, is my uncle.”According to Simpson, all fish
comes directly to the restau-rant from the auction block.“We get fresh fish from the
auction block six days aweek,” he says. What’s on yourplate was caught that morning.”Geoffrey Arakawa has been serving

Ingredients:• 1 filet of salmon, about 3 pounds.Skin and remove pin bones• 3 tablespoons chopped fresh dill• 6 tablespoons sugar• 3 tablespoons salt• 2 tablespoons grated lemon zest
Ingredients for crab mousse:• 1/2 pound crab meat• 2/3 cup cream cheese• 1/2 cup mayonnaise• 1 tablespoon chopped celery• 1 tablespoon chopped onion• 1 tablespoon chopped chive• 1/2 tablespoon lemon juice • salt and pepper, to taste
• tobiko caviar and fresh dill, for gar-nish
Preparation:• Combine 2.5 tablespoonschopped dill, sugar, salt andlemon zest in mixing bowl and setaside.• In a flat pan, coat salmon evenlyon both sides with seasoning tocure fish. Let sit overnight or forat least four hours. • Remove coated seasoning thor-oughly from salmon, then slicesalmon about an inch wide and 4-5inches long. Set aside.• In a mixing bowl, combine all
crab mousse ingredients togetherand mix evenly. Make sure thereare no leftover lumps from creamcheese.• Lay down a piece of salmon,then add about one-half table-spoon of crab mousse and roll itover like a cigar. Garnish withblack tobiko caviar and fresh dill.Repeat until you run out of fishpieces.
Tip: you may serve this rouladeon slices of cucumber or on crack-ers. It makes a perfect party appe-tizer.
