To ensure the perpetual achievement of this vision, we have made it our objective to obtain and maintain the best personnel possible and to continually offer our guests only the highest

quality products and service. Gary recognisesthat our goals may be reached only with the support of excelling individuals and all staff aim to show special attention to detail providing guest with all that they require when they dine at our Restaurant.

Gary Macris first established the concept of “Greek Yum-Cha” in his restaurant “Enigma 88” at Brighton Le-Sands in 1997. While in this smaller restaurant, Gary developed his cooking style and developed modern and creative ways of presenting traditional Greek cuisine. With the help of family and friends, Gary’s concept took shape. Before long, Enigma 88 was buzzing and “Greek Yum-Cha” had become the talk of the town.

FOODreviewsSUMMER SALT“Had a special dinner for my sister’s engagement! Staff were

exceptional, friendly and efficient. The food and cocktails were

fabulous. Nothing was a bother and the food was exquisite. We

were last to leave, but that didn’t seem to be a problem. The

whole restaurant is world class.”

Jodie, Dolans Bay

OPAH“My family and I went to Opah on a Saturday night and very

much enjoyed our experience! The service was great. The food

was to die for and there was so much of it. The bar is gorgeous!

The view is stunning and I highly recommend it.”

Jamie, Kareela

HOT ROX“I am a meat eater and pride myself on my BBQ skills. To this point

I have visited many all you can eat meat houses and none (in my

opinion) can cook meat like I do I my beloved BBQ. However, I

ate at HOT ROX Brazilian BBQ and was amazed at the freshness,

quality and taste of the meats that continually come around.

Pork, Lamb, Chicken, Steak, and so on until you say stop…..

Sooo tender and perfectly marinated and what’s more all for

$35.. Unbelievable value. Food, service and atmosphere was

unbeatable… And yes it was better than my own BBQ cooking.”

Luke, Sylvania Waters

DOUGH AUTHENTIC LEBANESE PIZZA“Authentic Lebanese Pizza… who would have thought? This

place is sensational. So cheap and so tasty. They also do

traditional pizzas which are so cheap and have to be the best I

have had in the Shire. We ate in and the service was unrivalled.

They could not do enough for us and were kid friendly giving the

kids special kids plates and cutlery to make them feel special.

Great food and service. I will be back”

Fine Food, Fine Wine & Your Waistline Is it possible to enjoy fine food whilst maintaining

a healthy waistline?

The answer is YES however it is dependent on the

choices you make in regards to the menu, the

regularity of your alcohol consumption and your

specific exercise habits.

In these modern times, restaurants will offer

a selection of meals sourced from fresh,

flavoursome and often organic produce,

however if your waistline is of importance there

are a few items you should attempt to avoid.

Firstly avoid meals with high levels saturated fat.

They include pork belly, duck and many deep

fried items such as ‘salt & pepper squid’ or deep

fried fish. Meals high in saturated fat are very

dense and will lead directly to fat gain.

Meals containing high levels of starchy

carbohydrate should also be avoided (pastas,

noodle or rice dishes). The body can only store

limited amounts of carbohydrate with any

excess being stored as body fat.

When eating out attempt to include proteins

sources such as seafood (prawns, oysters,

scallops, tuna, salmon or lobster) or lean meats

like chicken, turkey or beef.

Do not neglect your fresh fruit and vegetables

as they remain a great source of vitamins and

minerals.

Also never be afraid to request a dish cooked

to your specific requirements. Chefs are usually

more than accommodating when it comes to

satisfying individual nutritional desires.

The occasional glass of wine with a nice meal

not have you packing on the kilos. Drinking

regularly however, will make it

increasingly difficult to shed

kilos. This is due to the body

using the stored calories from

the alcohol as its primary fuel

source. Calories consumed

through food (and alcohol)

will then be stored by the body

with the end result being an

expanding waistline.

When consuming alcohol, better options include

low carbohydrate or low alcohol beer or a spirit

with a diet mixer.

Always remember that moderation with both

food and alcohol are vitally important.

Keeping your waistline in check does not just rely

on a sensible diet. Regular exercise is required to

keep those excess kilos at bay.

Here in the Sutherland Shire we are blessed with

an array of exercise environments to keep you

active.

Whether it is kayaking on the Port Hacking,

running or walking on the Esplanade at Cronulla,

surfing at our beautiful beaches, swimming in our

ocean baths, taking your bike to the cycleway

at Sutherland or bush walking through the Royal

National Park, the Shire has it all.

Whatever exercise you enjoy, ensure it is fun yet

challenging and completed at regular intervals.

If you follow these simple tips you really will be

able to enjoy your fine food and keep those

excess kilos at bay. Happy dining.

Is it true Anthony Rodriquez, General Manager at Sylvania BMW was once a trained chef? Yes, I had 6 years experience inthe kitchen prior to working at Sylvania BMW.

What’s cooking at Sylvania BMW? 2009 has been a very exciting and busy year forus, launching the new BMW 7 Series in March and BMW Z4 Roadster in May and the Government’s 50% tax break has providedus with some exciting opportunities for our small business customers with a turnover less than $2M per annum, meaning you could be eligible before 31 Dec 09.

BMW is also set to release the BMW X1 in March 2010 ,so we are in early planning stages for this model launch.

Favourite ingredient? Basil

Favourite Sutherland Shire eatery? There are so many great options to choose from in the Sutherland Shire, but I am partial to a great café over looking the water serving excellent coffees.

Food you won’t eat? Brussel sprouts

Advice to the home cook? Keeping it simple, relaxed and easy is always nice.

Your five ingredients that could conquerthe world? Cherry tomatoes, garlic, basil, chilli and pasta .

Has your Italian heritage influenced yourlife? Yes most definitely. It has influenced allaspects of my life including cooking, working

& my family. When I cook and entertain at home I want my guests to feel as comfortableas they would in their own homes. We treat all our customers at Sylvania BMW this way also, we are a strong family business when customers are always welcome to come in to join us for a chat, coffee etc.

ExcitingLUNCHBOX IDEASQ: My six-year-old son is complaining that his

lunch is boring and the other children have

fun stuff in their lunchboxes. Got any tips on

creating some excitement for him?

A: When my oldest son was in kindergarten he

would not eat anything but a tossed salad for

lunch. What a lunch box challenge that was. I

came to find out that his interest was not held

by the crisp veggies that I painstaking prepared

each morning, but by the amusement of his

classmates when he opened his Tupperware

tube of salad dressing. The tube was COOL!!

Here is a lesson to be learned. The eye appeal

of the dish is as important as the nutrition. If it

looks good - it tastes better!! Here are a few

suggestions:

Circle Sandwiches

Make your child’s favorite sandwich and cut

it into interesting shapes. Create circles on

Monday, triangles on Tuesday and maybe heart

shapes on Wednesday. What a fun learning

experience especially when after awhile you

“forget” and make a triangle sandwich on

Friday!

SummerSALAD IDEA

Wrap It Up

Roll your child’s favorite combination of cheeses,

turkey or veggies in a tortilla shell.

Unpack A Surprise

Place a fresh flower, a brightly colored bandana

for a placemat, a special sticker, or just an “I Love

You” post-it-note in his lunchbox. Your child will

have a special reason to unpack his lunch

everyday!
