Capsicum/ Paprika Oleoresin
is a deep red colored, semi
viscous liquid extracted from
dried red pepper or paprika. It
draws its deep red color from
various Carotenoids present in
Red Pepper. Capsicum/Paprika
Oleoresin is a natural extract
without any antioxidant &
contains capsaicin as main
pungent (flavoring) and
capsanthin as key color
pigment. It is highly sensitive
to light, heat and air. The
Capsicum/Paprika oleoresins
are produced by solvent extraction of dried, ground red
pepper fruits.
Oleoresin Paprika is used as a food coloring agent by people. It offers
deep red color to the food. It is a natural food coloring product derived
from the lipids, or plant fats and pigments of sweet
red peppers.
Oleoresin paprika is a widely accepted food colorant
which is often used in the production of seasoning,
sausage, and snack foods. It is a natural dye product
that is prepared in a variety of mixtures that offer it
a vast range of color shade powers.
Food colorant has short shelf life, and people can
store oleoresin paprika for up to 18 months safely.

dying ability soon
like other food coloring agents.

oleoresin gives a range of red color.
Safety Gear: It is used in making safety gear for girls and
can make a person blind for few minutes.
Preservative: Capsaicinoids help to preserve the meet and
other food items against microbial activity.
Manufacturing and processing:
Two types of process are used
1 Conventional Solvent extraction: This
requires grinding of raw chili to
required mesh size and treatment with
suitable solvent (Such as hexane,
Acetone and Ethanol etc.). The
resultant solvent /extract solution is
concentrated and solvent is recovered. A maximum solvent residue limit is
maintained and followed.
2. SCFE (Super Critical liquid extraction):
This new technology is gaining popularity
specially with respect to oleoresin as the
possibilities of residual solvent is
practically not required. It requires
grinding of raw chili to required mesh
size and treatment with Liquid Carbon di
oxide under pressure which collects
oleoresin. As the pressure is normalized
CO2 is evaporated without use of any
energy and solvent free product is processed. The disadvantage is the heavy initial
investment cost but its worth it.
