1. 30 minutes before cooking, remove from the fridge a 1.5 kg fresh whole chicken
2. Preheat oven to 175°C/ 350°F.
3. Remove any chicken giblets from the cavity and rub the surface of the chicken with
1 TBS olive oil
4. In the small bowl, mix together 1 TBS sweet paprika 1 tsp Himalayan salt
5. Sprinkle or rub the paprika mix over the chicken.
6. Place the chicken, breast side down, in the baking tray - this keeps the breast moist.
7. Cook for 1 hour or until the juices run clear when you pierce the thigh with a skewer.
