zuma, the brainchild of founder and chef rainer becker, brings its internationally acclaimed style of
contemporary japanese cuisine to midtown, manhattan. zuma boasts three distinct kitchens; the main
kitchen, the sushi bar and the robata grill - a concept which originates from the cooking style of
northern japanese fishermen, first introduced to europe by chef rainer. greatly influenced by his time
in japan, rainer has introduced a modern, elegant and sophisticated cuisine philosophy that is inspired
by the informal japanese dining style – izakaya.

such is rainer’s dedication to sake - he serves 40 different varieties -
including his own biwa no choju, which is brewed exclusively for zuma from the
waters of lake biwa in the shiga prefecture. the lake’s natural mineral water was
made legendary in japan by the last shogun, tokugawa yoshiro, who in the 15th
century created the rules that govern japanese cooking styles
and tea ceremonies today.
designed by noriyoshi muramatsu of tokyo-based studio glitt, the space captures the style and
elegance of zuma worldwide, while embracing strong urban design elements exclusive to new york.
zuma new york features a main dining room, a bar and lounge area, and six private rooms,
situated across two levels. the interior design elements include steel and iron combined with glass and
granite to give a real connection to the city and feeling of permanence and belonging. the private
dining rooms offer exclusive locations for both business and social dining events; accommodating all-
day business meetings, seated lunches, cocktail receptions and dinners.

in its second floor private dining space. rather than offering the traditional
individual starter and main course menu structure, zuma’s menu has been
designed with the concept of sharing. dishes are brought to the tables
steadily and continuously throughout the meal.

reflect zuma’s global aesthetic, a gracious setting inspired both by the four elements of earth, fire,
water and air and by the vibrant metropolitan energy of manhattan itself. beautifully appointed with
reclaimed monkey pod wood, clear, crisp glass, rich leather and exquisite details, such as shades
wrapped in antique obis*. floor to ceiling windows provide sweeping views of both the restaurant’s
main dining room and the bustling city on madison avenue below.
