We spoke to our lovely cover girl about herself and other roles as well as what its like to go vamp.

nina dobrevWhat was it like potraying a character with an abusive relationship in your latest movie Perks of Being AWallflower?

It’s a really heavy topic, and I hope my character gives girls some perspective. I think more than anything, girls allow abuse to happen because they’re embarrassed it happened and that they allowed it to happen. They know it’s not right. There’s no excuse for it. That’s why it’s so important to show girls that they can admit that it’s not their fault.

How is your realtionship with Ian going? You two look very in love!

Aw thank you! I remember the first time I was on the cover of a magazine, the cover line said ‘Nina: Why she wouldn’t date any of her co-stars.’ And then cut to three years later…it’s funny that I said that, but you know what? It was honestly what I believed at the time. I didn’t want to be dating one of my costars—my goal on the show was to be professional. But sometimes you can’t help who you have a connection with, and you can only fight it for so long—which I did for a really, really long time.

How are you dealing with the pressure that comes along with fame?

I try not to read best-dressed lists or anything like that. For every good thing, there will often be a not-so-nice thing people would say. My mom sends me lots of messages like, ‘You’re standing next to Kate Winslet! Oh my god, I love Kate Winslet!

We’ve heard you’re a kid at heart...?

You’ve heard right! [laughs] I want to go to Harry Potter Land! I actually should text Emma Watson to see if she can hook us up with a backstage pass or something. That’s the perk of doing a movie with Emma called The Perks Of Being A Wallflower.

Do you still spend a lot of time with friends? Whats your most important aspects of spending time with them?

Girls weekend with the Vampire Diaries girls has become a big deal! It’s our quality time. It’s so much fun to unload and not feel guilty complaining or talking about your insecurities or bonding over things that you thought you were on your own about. When we get there, we go to dinner or cook dinner together, watch movies, lie on the beach, and take tons of pictures.

So Nina, which guy would you choose - Damon or Stefan?

I keep getting asked this. I am not in a position to choose. I dont know - the world is so big. Why would [anyone] choose?

Now Elena is a vampire.Whats that like for you?

It will be fun to explore a different side of Elena. It is tragic . She didnt want this at all, but at the same time, it was more fun for me to be both. Now it is go-ing to be a challenge to make them different. I liked being both. I walked around the set bragging about how I got to be both human and vampire - I got the best of both worlds - but now I have no bragging rights, no street cred on the set.

How is she going to fell about Stefan honouring her wishes?

Is there going to be any resentment?I dont think so. She was in the same position and Ste-fan saved her and not her parents. And, although she was grateful to him, she didn’t want that to happen again. She wanted to sacrifice herself for the people she loved. She had enough of all of this, but she is go-ing to be incredibly thankful that he had enough re-spect for her and cared about her enough to [think] about her wishes.

Was it always a plan for Elena to become a vampire?

It was always the plan; it was just a matten of when. It happened in the books, so it was defintely going ot happen on the show. At one point there was a talk of it happening in the second season but I am glad they waited until the third.

How is it going to change her realtionship with her friends?

Caroline was accepted by the group as a vampire. I think everybody’s just going to be sad. They’ve spent three seasons...I don’t know how long it is in the show...They have just spent all this time doing everything in their power to protect her, and know she is a vampire, so I guess now she can protect herself.

Do you think Elena will find out that she met Damon first?

When you become a vampire your compelled memo-ries come back to you, so yes, she will. We did shoot that and it was interesting. It is in the first couple of episodes.

What else will fans see?

We literally just started shooting, so I don’t have any spoilers for you. I didn’t even know I was going to be-come a vampire until two or three episodes before.

How does that work?

They start off with a plan, but then something changes and it completely veers off in a different direction so it is ever-changing. That is the beauty of television - you get to explore the life for a long time.

What would you like to see happen to her?

As a vampire, I would like her to realise that now she is independent and can go do her own thing. She can disappear for a while, go to Europe and go crazy. It is kind of like a college experience. You go to high school and you are finally let out of the house, and you have an interesting, fun college time. So this is going to be her coming-of-age college experience.

Do you think she will miss anything about being human?

Everything - she didnt want to be a vampire. I imagine she’ll be sad that she’ll never be able to have kids and she’ll never get married and have a normal life and just go to college. She’ll never have that ever again. That’s all she wanted. She was constantly trying to hold on to her humanity, and now it’s gone forever.

Are you still having fun on this show after several years?

Yes, because every day is so different. I always say it is actor’s boot camp. I have done action, drama, under-water things. We have done stunts...There are so many cool things. It is really fun. ❃

What would you find in the little nooks and crannies of your closet? YOUTH’s fashion editor Lotta tells us how to declutter (and detox!) our wardrobes.

Make a jewellery stationIf you leave your jewellery in boxes and drawers you’ll never wear them. Use teacups, bowls and other cute holders to display them instead.

Be inspiredMake a collage for each season of celebs, catwalk trends or a friend’s style that you like. It will be much easier to get dressed in the morning.

Sensible splurgingBuy all your trend pieces cheaply and just splurge on things you know you’ll wear for a long time such as a leather jacket, a classic pair of jeans, boots, etc.

Bag storageStack your bags neatly on a shelf so you can actually see them otherwise you’ll have no idea what you ac-tually do and don’t have.

Shoes! Shoes! Shoes!Use shoe boxes for your nicer shoes and leave your everyday ones out where they’re easily accessible.

Loop hole[der]Find one of these multi-use hangers. They’re great for belts and scarves and take up just as little space as a normal hanger.

Go woodenDon’t EVER use wire hangers — they end up misshap-ing your clothes. It’s a very boring expense, but wood-en hangers will make your clothes last longer.

STACK YOUR KNITSKnitwear should always be folded neatly. The less folds the better. Never hang them up as they’ll stretch and lose their shape.

We made four piles: “store” (for the boxes underneath your bed), “throw” (for the clothes that have been worn to death), “charity” (for the pieces you haven’t worn in a long time) and “Ebay” (imagine making money out of your old pieces!). ❃

New York City is a tourist’s dream destination. With a veritable limitless number of sightseeing tours, photo-graphic opportunities and historical landmarks, you can spend a week in the Big Apple and not get past the first block. First-time visitors will always choose the most common sights to see in New York City, and perhaps that’s best, but re-turning visitors might be more inclined to look for things that show the uniqueness of the city. Here are the top ten things to do in New York, whether you’re a first-timer or a seasoned professional.

Try the classic pies at Lombardi’s Pizzeria on Spring Street for a taste of old NY and don’t let the line at Grimaldi’s Pizzeria in Brooklyn scare you, it moves pretty quickly!

8) Take it to the Top of the RockThe newly opened Top of the Rock Observation Deck on the 67th, 69th and 70th floors of 30 Rocke-feller Plaza offers one of the most impressive views of one of the most impressive cities in the world. It’s open until midnight for a romantic visage of the twinkling stars above mirroring the glittering lights from the city below.

7) The Metropolitan Museum of Art From the early 20th century portraits and sculp-tures to the steel mastery of Frank Stella, the Met is one of the foremost collections of fine art in the world. The museum is so expansive and visual; you should plan on spending an entire day here. If you’ve never been, get on a flight to New York City and go see some fine art. Tip: Wear comfortable shoes!

6) Radio City Music HallIs there a more American theater than Radio City Mu-sic Hall? This timeless testament to entertainment has captivated visitors since the 1930s and no other dance troupe will ever hold the esteem in the hearts of Americans like the Rockettes.

5) Madame Tussauds Wax MuseumWhere else in the world can you have a picture taken with Britney Spears, President Bush and Jack Spar-row? This world-famous wax museum is one of the most visited spots in New York and you shouldn’t miss the opportunity to visit these stunningly accurate fig-ures.

4) BroadwayIf you can make it here, you can make it anywhere. And without a doubt, you should try to make it to a Broadway show! This is the most famous theater dis-trict in the world, and you can choose from timeless classic productions like “Chicago” at the Ambassador or a newer stage rendition of “Mary Poppins” at the New Amsterdam Theater. Either way, no trip to New York is complete without some singing and dancing.

3) Times SquareIt doesn’t have to be New Year’s Eve to enjoy Times Square in New York City. As the heartbeat of NYC,

Two Door Cinema Club’s hit 2010 debut was called Tourist History. The effervescent Northern Ireland trio should have saved that title for the follow-up, Beacon (Glassnote), due September 4. “When we recorded the first album,” says 22-year-old bassist Kevin Baird, “we hadn’t been anywhere. We hadn’t seen anything. We lived at home and made music in our parents’ garage. Then we spent three years traveling the world.”

That shift — from wide-eyed tyros to experienced road dogs — deeply informs Beacon, which finds the band sounding still as rhythmically energetic and melodically bubbly as ever, but, as on first single “Sleep Alone,” on which singer Alex Trimble sighs, “I’ve never been so far from home,” also features the addition of some nicely rueful touches. Baird spoke to us about growing up, and the pressure of following a successful first al-bum, and the band’s being its own worst enemy.

You guys wrote the first album when you were still teenagers. Now your lives are radically different, and that change happened at such a formative time. How did that affect the music that ended up on Beacon?

Being 17, 18 years old, we had a more youthful excitement, a naiveté in some respects about what we were trying to do and why we were in a band. We hadn’t listened to as much as we have now. We hadn’t discovered as many records. So everything was thinking about the future. The new album is more reflective. Or I can put it like this: the first album was a case of us trying to imagine what being in a band would be like. The second album is more, “This is what it’s really like.”

What was some of the new music you discovered that changed the way you guys thought about what you do as a band?

When we started listening to music in a serious way, we were 15 or 17 years old, and that’s the same time that the Internet became so instrumental in discovering new music. Then we ended up on tour in our early 20s. So we were constantly inundated with new music. We weren’t going back and discovering much. We’ve spent a lot of time lately going back and listening to old school Beach Boys and discovering Beatles songs that aren’t “She Loves You.” When we were writing the new album last year, we were getting in the Talking Heads and Kraftwerk. It’s like, we learned that there’s a reason why everyone knows the Who and it’s not CSI.

How did those bands specifically affect Two Door Cinema Club, though?

In terms of songwriting, we watched this Beatles documentary and they were talking about how when they were starting the band, there weren’t chord books and you couldn’t look up guitar tabs online. You had to learn a new chord and show it to your friends. That blew our minds a little bit. It made us try and be a bit more creative about what we were doing. I think we got into a little bit of an easy formula on the first album. There weren’t outrageous chords structures and the structures of the songs were classic pop struc-tures — verse-chorus verse-chorus. On the new album we got a bit more creative.

The first album was successful enough to allow you to tour for a few years. At any point during the making of Beacon, did you feel pressure to have a similarly successful second album?

The only time we felt pressure was before we started proper-ly writing for the new one. I think we all felt a bit worried that we’d get in a room together and plug in our guitars and turn the amps on and then have no idea what to do. It’d be like, “How do you do this again?” But as soon as we started writing songs, things came to us pretty quickly. At least 75 percent of the album was written in October and November of last year and we went in the studio in January. So it was quick.

Given that you toured so long for Tourist History, how hungry are you to get back on the road and play new material?

All of us are really excited to get out there. We’re gonna be in the States at the end of September. We are not sick of our old album, we still really love the songs, but this one is more of an impression of where we’re at now. It’s actually really weird: We’ve been doing so many interviews and getting everything ready for the release of the new album, but we’re still the only ones that have heard it. So we’re really, really excited to share it with people.

But since the album is sort of about how it was a struggle to be on the road and be in a band and have your life change so much, is it daunting to be facing another year of touring? Why would it be any less of a strug-gle this time around?

It’s daunting, yeah. The narrative of the album is about our struggle with the relative amount of success we had, and being away and loving that completely but also having to make sacrifices in our personal lives. Facing that again is a bit scary. But this time around we’re starting off on a much higher platform than be-fore. We’re starting where we left off last time and that was a pretty big place. So it’s exciting at the same time as being scary. But as much as I’m saying to you now that I’m nervous about what’s going to happen, I’m sure I’ll be asking our manager next week why we’re not playing more. We’re our own worst enemies. ❃

LEMON & CHIVE ricotta bruschetta{appetizer}

This ricotta mixture is light and mellow – it’s not a punch of garlic-herby flavor – it’s bright and slightly sweet.

ingredients6-8 slices whole grain bread

drizzle of olive oil

1 clove garlic

1/2 cup fresh, ricotta cheese

1-2 tablespoons lemon juice

1/2-1 teaspoon lemon zest

1-2 teaspoons honey

2 tablespoons of

chopped chives

salt & pepper

1 tomato, sliced

basil (to go on top)

sprouts (to go on top)

method1. Drizzle bread slices with olive oil and salt. Toast under the broiler, or grill.

2. Slice tomato, sprinkle it with some salt and set aside.

3. Mix together ricotta, lemon juice, lemon zest, minced garlic, honey, salt and pep-per. Taste and adjust.

4. Assemble and top with chopped basil and sprouts.

method1. In a small bowl, combine your ingredients, through the cilantro.

2. Mix thoroughly.

3. Pour marinade over chicken breasts and turn to coat. Cover and allow to marinate for at least 1 hour.

4. Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.

If you’re cooking for a load of friends, or for a party, these kebabs will do the trick. They are so easy to make and damn tasty. Marinated in a blend of spices, they can be grilled, chargrilled or cooked on the barbie.

ingredients3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon vegetable oil

juice of one lime

2 garlic cloves, minced

1-2 teaspoon Siracha

red pepper flakes, to taste

2 tablespoon cilantro

1 pound skinless, boneless chicken breasts

cook’s notes* If you’re using bamboo skewers, soak your sticks in water for at least 5 minutes. Cut chicken into large chunks, and skewer. Allow to marinate for at least 1 hour.

method1. Preheat oven to 350F and position a rack in the middle.

2. Line the inside of 8-10 muffin tins with cupcake liners, or 8 ramekins or one 8-inch round cake tin (use a piece of parchment paper at the bottom).

3. Lightly butter or spray the inside of the tins.

4. In the bowl of an electric mixer, whip the eggs and sucanat/sugar for 2-3 minutes at medium speed until light and airy. Turn the speed to low and add the sour cream, the melted chocolate and butter and continue to whip until everything looks fully blended.

5. Slowly add the cocoa powder, all the gluten free flours (or all purpose if using), the gum, baking powder and pinch of salt. Turn the speed back up to medium and whip until the batter comes together in a uniform manner. Divide among the prepared cake tins (or one single cake pan) and bake 25-30 minutes or until a toothpick inserted near the center comes out clean. ❃

This could well turn out to be your favorite gluten free chocolate cake to date. One that holds many promises for changes and substitutions. Maybe add chocolate chips to the batter for that little extra fudgy feeling when they are still warm out of the oven. A ripe mashed banana could easily find its way in there one day soon. Who knows? Experiment yourself!

3/4 cup (150gr) sucanat or regular sugar

1 cup (250ml) sour cream

6 oz (180gr) bittersweet or semisweet chocolate, melted and cooled

1 stick (115gr) unsalted butter, melted and cooled slightly

2 tablespoons cocoa powder

1/2 teaspoon xanthan gum 1 teaspoon baking powder

1/2 cup (75gr) superfine brown rice flour

1/2 cup (75gr) superfine sweet rice flour

1/2 cup (65gr) sorghum flour

1/2 cup (75gr) millet flour
