Give this Light and Lemony Summer Soup a Try!

Quick Lemony Greek Chicken Soup

Serves 6 (serving size: 1 1/4 cups)

Ingredients

• 1 tablespoon olive oil • 3/4 cup cubed carrot • 1/2 cup chopped yellow onion • 2 teaspoons minced fresh garlic • 3/4 teaspoon crushed red pepper • 6 cups unsalted chicken stock • 1/2 cup uncooked whole-wheat orzo • 3 large eggs • 1/4 cup fresh lemon juice • 3 cups shredded rotisserie chicken • 3 cups chopped baby spinach • 1 1/4 teaspoons kosher salt • 1/2 teaspoon black pepper • 3 tablespoons chopped fresh dill

How to Make It Step 1

Heat oil in a Dutch oven over medium-high. Add carrot and onion; cook, stirring often, until vegetables are softened, 3 to 4 minutes. Add garlic and crushed red pepper; cook, stirring constantly, until fragrant, about 1 minute. Step 2

Add stock to Dutch oven; increase heat to high, and bring stock to a boil. Add orzo, and cook, uncovered, until orzo is al dente, about 6 minutes. Step 3

Meanwhile, whisk together eggs and lemon juice in a medium bowl until frothy. Once orzo has cooked 6 minutes, carefully remove 1 cup boiling stock from Dutch oven. Gradually add hot stock to egg–lemon juice mixture, whisking constantly to temper the eggs, about 1 minute. Pour egg mixture back into Dutch oven, and stir to combine. Step 4

Reduce heat to medium-low; stir in chicken, spinach, salt, and pepper. Cook, stirring constantly, until spinach wilts, about 1 minute. Divide soup among 6 bowls; sprinkle servings evenly with dill.

Eric Zimmerman is headed to States! He qualified and took first place in the 100 Meter running it in

10.90 seconds, and he ran the 200 Meter in 21.88 seconds, both personal records for him.

Michael Antonyuk took first place in Discus with a throw of 138-7 to secure his place in the State

Championship!

Julia Laubach has secured her place in the State Championship taking first place in the Long Jump with

a 17’ 2 ¾” jump. Wow!

Congratulations to you all! Can’t wait to see how you do in States! We are rooting for you!

SUN TECH’S ADVANCED WOODWORKING STUDENTS

MIDDLE SCHOOL ENVIROTHON CLUB COMPETES IN SUSQUEHANNA VALLEY ENVIROTHON

Mifflinburg Area Middle School Envirothon Teams competed in the Susquehanna Valley Envirothon. Students from Union, Snyder, Montour, Columbia and Northumberland Counties were invited to participate in this competition. Each school could enter up to four teams consisting of 3-5 students each. A total of 30 teams competed in the areas of Forestry, Wildlife, Soils and Aquatics. Mr. Stenger and Miss McGlaughlin were very proud of what their students accomplished and happy to report that Mifflinburg Teams placed 3rd, 4th and 15th in the competition! Our students represented themselves with pride and good character all year. Congratulations to all Team members for this great accomplishment!

WILDCAT BASEBALL & SOFTBALL NEWS

Miff Tops Jersey Shore, 10-2

The Wildcat Boys’ Baseball Team took down Jersey Shore in a high action

game. Anthony Bennage was the winning pitcher of the game. The following

individuals scored in this game: Gavin Enders was 2-for-3 with two runs; Garrett

Becker was 1-for-3 with a run; Darin Miller was 1-for-2 with three runs and one

RBI; Michael Warren was 1-for-2 with three runs; and Josh Foster was 1-for-3

with a double. Nice work guys!

Wildcats Shut Out Penns Valley, 3-0

The Wildcats took another win this week shutting out Penns Valley, 3-0.

Anthony Bennage was the winning pitcher of the game. Making plays in this

game were the following: Garrett Becker with a single and a run; Michael

Warren with a double, a run and one RBI; Darin Miller had a double and a run;

Josh Foster hit a single and one RBI; and Denzel Sampsell had a single and one

RBI.

Miff Takes on Rival Lewisburg and Wins, 3-2

In an exciting game, the Wildcats topped Lewisburg, 3-2. Winning Pitcher of

the game was Cade Dressler. Gavin Enders scored a run, and Garrett Becker was

1-for-3 with one RBI. Michael Warren was 1-for-3, Josh Foster was 1-for-3 and

Darin Miller was 1-for-3, with a homerun. Great job guys!

Wildcats Dominate Over Bloomsburg, 15-3

The Wildcats blew it out of the park in this game with two grand slams, one

hit by Libby Whittaker and the other hit by Camryn Murray! Vanessa Martin

was the winning pitcher of the game, and she had two hits and two RBIs. Vanessa

Boop also had two hits and two runs. Great job ladies!
