Susan Schafers, chair of the Egg Farmers of Alberta and a second-generation farmer with

STS Farms Ltd., has 7,000 hens in her free-run barn. Although that may seem large,

it’s less than the provincial average which is more than 10,000. In Canada, Susan says,

there is approximately one hen for every person in the country. That’s a lot of eggs!

When it comes to brunch, Susan enjoys the classics — like a traditional eggs Benedict or a savoury frittata. “My favourite frittata has

some bacon, broccoli and hearty cheese in it.” She also recommends heading to eggs.ab.ca

for other recipes using Alberta eggs.
