In a medium sized bowl, sift together flour, sugar and baking soda. Mix together in separate bowl, cooked pumpkin, melted butter, eggs, 1/4 cup of water, and spices. Combine with dry ingredients until just incorporated - do not over-mix. Fold in the glace or crystalised ginger and slivered almonds. Spoon mixture into a prepared muffin tin and bake for 25-30 minutes. Check with a toothpick by in- serting into the centre of a muffin. If it comes out clean, it’s done! Cool on a rack.

Muffins

Makes 12

Ingredients:

1 teaspoon ‘Pumpkin Pie Spice’

1 1/2 cups self-raising flour

1 cup sugar

1 teaspoon baking soda

1 cup pumpkin, cooked and mashed

1/3 cup butter, melted

2 eggs, beaten

1/4 cup water

1 teaspoon ground ginger

1 cup slivered almonds, chopped

Method:

Beef Skewers

Ingredients:

• 500g beef, cubed

• 2 tablespoons of flavoured Extra

Virgin Olive Oil of choice

• 1 tablespoon of meat/coffee rub

• 1 punnet of cherry tomatoes

• 1 red onion, roughly chopped

• 1 capsicum, roughly chopped

• Small wooden skewers

Method:

Combine oil and rub of choice. Brush on

beef and marinate for 2 hours, covered in

refrigerator. Soak skewers in shallow dish

of water for 2 hours. Thread beef on

skewers, alternating onion, capsicum and

cherry tomatoes if desired. Preheat a grill

pan or barbecue grill on high heat until

hot. Reduce heat to medium. Cook skew-

ers, turning, for 4 minutes or until cooked

as desired. Serve skewers with rice, potato

or green garden salad.

Moroccan White Beans

Ingredients (serves 6)

2 tablespoons of ‘Ras El Hanout’ seasoning

1 onion, chopped

300g cannellini beans

800ml Vegetable Stock

2 tablespoons of ‘Your Inspiration at Home’ Extra Virgin Olive Oil

100g finely diced butternut pumpkin

Method

In a pan, heat oil and sauté onion and

pumpkin until softened. Add stock,

beans and ‘Ras El Hanout’ seasoning

bringing to the boil. Reduce heat and

cook on low for 30-40 minutes until

beans are tender.

Serve immediately, or serve at room

temperature with grilled meat or puree

and serve as a dip on toasted sourdough.
