Alas this is our final issue for the year. Since producing our first issue way back in February for the Gozo Carnival we have produced 15 issues full of interesting content for those who have chosen to drop in for a stay in Gozo.
With this last issue for the year, it is quite obvious that the theme of the month is Christmas. We have put together a feature on the mammoth initiative of the locality of Ghajnsielem to present a life-size reenactment of Bethlehem. This is a must for any visitor to Gozo to go and see.
There are quite a lot of activities going on within the island in relation to the festive season. Therefore take a look at our ‘What’s On’ section. Plus even we
at Arkadia Commercial Centre have put together an active calendar of events.
Arkadia Commercial Centre is a must visit for Christmas shopping. Therefore for added convenience we will be opening up to 8PM up to 23 December. This even includes our foodstore! We will also be opening on all public holidays except Christmas. But do not worry. We will be back in full operation as usual on Boxing Day, which coincidentally is a Sunday.

Feature
Preparations for the third edition of Bethlehem f’Ghajnsielem, the event that has enchanted thousands of visitors over the past two years, have now reached the final-touches stage. The nativity village is situated adjacent to the Ghajnsielem main square, just 5 minutes by walk from Mgarr Harbour. The life-size crib, constructed on 20,000 sqm of fields on a stretch of land known as Ta’ Passi, comes to life during the month of December with about 150 actors taking visitors back in time to Judea of 2000
years ago. This year’s event promises to bring the timeless Christmas story to life as never before.
When visiting the live crib one finds it very hard to believe that until October of 2008 Ta’ Passi fields were an eyesore right at the centre of the village of Ghajnsielem, uncultivated and abandoned, accumulating refuse. The NGOs of Ghajnsielem, with the full support and the financial backing of the Local Council decided to take on what turned out to be a very
ambitious and complex project. In the space of a few weeks, they managed to clean up and rehabilitate the area while converting it into a crib along the basis of those we build at home, only larger, much larger. The experiment turned out to be such a huge success that in the space of a month, the nativity village managed to attract tens of thousands of visitors from all over the Maltese islands. It is no secret that the success of the event was owed to the artistic and creative abilities of project director Mr Franco

typical Gozitan rustic look. Each dwelling will be inhabited and animated by whole families, respectively, to remind everyone that Christmas is a celebration of the family. This year visitors shall be able to go inside the carpenter’s and the blacksmith’s houses and taste traditional Gozitan delicacies prepared meticulously by Mrs Carpenter and Mrs Blacksmith respectively. The stream has been re-done to blend better with the surrounding landscape. The Tavern area has been re-shaped
in a manner to give customers the feeling of being in a food court with enhanced views of the Grotto area. The surrounding fields have been cultivated with crops just about ripe for picking. Seasonal fruits, fresh fish and a wide selection of vegetables will be available from the open-air market while a local crafts area will promote traditional craft skills and folklore. A picnic area will offer the unique surroundings for a family outing on Sundays while oil lamps will be distributed for those who
Ciangura. Today, the ‘Fondazzjoni Bethlehem f’Ghajnsielem’ has been established to take on the responsibility of organizing the event which is still fully sponsored by the Ghajnsielem Local Council together with a number of other strategic partners.
A unique experienceThe community of Ghajnsielem has been mobilised once again to take on this massive but highly successful and extremely popular project. The army of carpenters, blacksmiths and skilled individuals, all members of the organisation, has been in action since mid September. This year they were given a new challenge – don’t just make it bigger and better, make it safer and greener! For those who attended the event over the past two years certainly understand the magnitude of that challenge. With just a few days left before the inauguration one can already tell that this team of highly professional and extremely dedicated individuals managed to meet their challenge. Every dwelling has been enlarged and internally decorated to give it a

Spend a night at the Bethlehem InnThe main novelty of Bethlehem f’Ghajnsielem 2010 will be the ‘Bethlehem Inn’, a two-storey hotel with four rooms that will be available for rent! In fact, each of these rooms will be decorated and styled to resemble an inn around the time of the birth of Jesus Christ. Each room will enjoy the view of the village centre at the back, and at the front the breathtaking view of the nativity village with Mgarr Harbour in the background. The ground floor will house the stables as well as a small cafeteria where residents can have breakfast. Those interested to live this wonderful experience will be offered a 1-night stay at the Bethlehem Inn or 5-day package at the Grand Hotel with one of these nights spent at the Bethlehem Inn. Those on the 5-day package will have the advantage of
having their room at the Grand Hotel still available when spending the night at the Bethlehem Inn, which means that in effect they don’t have to relocate. During the morning following the night stay at the nativity village, ‘residents’ can try hands-on farming. There will be horses, donkeys,
goats and sheep to feed along with a wide variety of poultry. There will also be cultivated fields that require weeding. Residents will also be given the unique opportunity to animate during the regular opening hours of the nativity village,

Other AttractionsAdditional attractions
for this year’s B e t h l e h e m f’Ghajnsielem will be re-enactments of the ‘trip’ from Nazareth to Bethlehem of Joseph and Mary as well as the visit of the Three Kings on horseback. Also new will be the barracks of Roman legionaries located at the eighteenth century Fort Chambray located just across the road from ‘Ta Passi’ fields. The nativity village will close with the
Adoration of the Magi on Epiphany, 2nd January, when the three Wise Men will depart on horseback from Mgarr Terminal in mid afternoon to arrive at what certainly is the main attraction of every crib, the Grotto, with the newborn baby Jesus in the caring hands of Mary

under the watchful eye of Joseph with the donkey and the cow close by.
Going green…When it comes to the environment, no stone has been left unturned this year. The Fondazzjoni Bethlehem f’Għajnsielem concluded that there is no better way to demonstrate the determination of its members towards the environment than by obtaining ISO 14001:2004 certification. The process of certification with the Malta Standards Authority was initiated sometime in June and is now at its final stages. In addition, several indigenous trees have been planted at ‘Ta Passi’ fields while over 6,000 cypress tree seeds will be distributed to visitors in collaboration with Eco-Gozo and Hands-on Farming. Plastic materials and construction waste have been considerably reduced while thousands of school children will be given an education booklet printed on recycled paper during their visit at the nativity village. Visitors are also being encouraged to use public transport when travelling to visit Bethlehem f’Ghajnsielem. Assistance from Eco Gozo enabled the Fondazzjoni Bethlehem f’Ghajnsielem to fulfil some of these green initiatives as well as to meet some of the expenses related to the process of obtaining ISO 14001:2004 certification. The message is that Christmas is a time NOT to cut down trees, but to plant them… it’s about birth and life and not destruction.
‘Bethlehem f’Ghajnsielem’ will once again bring this timeless nativity story to life in a unique experience not worth missing!

Ingredients (serves 4)175g dried chickpeas2 tbsp olive oil4 lamb shanks2 medium onions , chopped3 garlic cloves , finely chopped2 fresh green chilies, finely chopped2 tsp ground cumin2 tsp ground coriander 1 tsp freshly ground black pepper1 tsp paprika2 large tomatoes, choppedpinch of saffron1 cinnamon stick 450g carrots , cut into thick slices1 tsp honey

Braised Lamb shanks with chickpeas and spices
MethodSoak the chickpeas overnight. Drain, tip into a saucepan and cover generously with fresh cold water. Bring to the boil, simmer for 45 minutes and drain. Heat the oil in a large casserole and brown the lamb all over. Remove and set aside. Pour off most of the fat, leaving 1 tablespoon in the dish, add the onions and fry for 8-10 minutes until soft. Preheat the oven to 160 C oven. Mix together the ginger, garlic, chilies, cumin, coriander, pepper and paprika. Add half of this to the onions, tip in the tomatoes and cook for 2-3 minutes. Put in the lamb and chickpeas, cover generously with water, bring to the boil and simmer for 5 minutes. Cover and cook in the oven for 2 hours until the chickpeas are really tender. Remove from the oven and stir in the remaining spice mixture, the saffron and cinnamon, carrots, honey and salt. Cover and return to the oven for 45 minutes until the lamb is tender and the vegetables cooked. Scatter the almonds and coriander on top.As a side dish you can add a vegetable couscous, baked vegetables and baked new potatoes.

MethodHeat oven to 200C/180C. Pop the peppers on a baking tray and place in hot oven for at least 15 min, until almost soft. Meanwhile, place the couscous in a bowl and cover with 125ml boiling water. Stir, cover the bowl and leave to stand for 10 mins. Stir the couscous with a fork to break it up, then mix in the pine nuts, olives, feta, tomatoes and basil. Pile the couscous stuffing into the pepper halves and bake for 10 mins. Garnish with some lolo rosso, cherry tomato and drizzle of olive oil.

Poached egg Benedict served with Smoke Salmon on a grilled Bagel
MethodFirst make the Hollandaise sauce. Put the lemon juice and vinegar in a small bowl, add the egg yolks and whisk with a whisk until light and frothy. Place the bowl over a pan of simmering water and whisk until mixture thickens. Gradually add the butter, whisking constantly until thick - if it looks like it might be splitting, then whisk off the heat for a few mins. Season and keep warm. To poach the eggs, bring a large pan of water to the boil and add the vinegar. Lower the heat so that the water is simmering gently. Stir the water so you have a slight whirlpool, then slide in the eggs one by one. Cook each for about 4 mins, then remove with a slotted spoon. Lightly toast and butter the bagels, then put a couple of slices of salmon on each half. Top each with an egg, spoon over some Hollandaise and garnish with chopped chives.
